5 VEGAN RECIPES I Am LOVING Every Week! πŸ₯‘πŸœ

PASTRIES:
to make, blend:
– 1 cup cashews, soaked for minimum 1 hour and drained
– 1/2 cup nutritional yeast
– 1 cube veggie stock
– 2 garlic cloves
– 1 tsp dijon mustard
– 1/2 lemon, juiced
– 1/2 cup water
and then mix with:
– 1/2 brown onion, diced and fried until translucent
– 1 cup frozen spinach, defrosted
– 1/2 cup vegan pesto
for this recipe you will need:
– 5 puff pastry sheets
– sesame seeds
– olive oil spray
cook for 20-25 mins at 180Β°C fan-forced

NOODLE SALAD:
salad:
– 1/2 cucumber, sliced
– 1/2 carrot, peeled and sliced
– fresh coriander, as desired
– crushed peanuts, as desired
– 100g thin rice noodles
tempeh:
– 150g tempeh
– 2 tsp olive or sesame oil
– 1 tbsp tamari
sauce:
– 1/4 cup peanut butter
– 2 tbsp water
– 1 tsp tamari

NOODLE SOUP:
broth:
– 1 + 1/2 cups water
– 1 cup oat milk
– 1 veggie stock cube
– 1 tbsp soy sauce
veggies:
– 1/2 head broccoli, cut into florets
– 1 leek, cut down the middle lengthways and sliced
– the kernels of 1 corn on the cob
fried in 1 tbsp olive oil
noodles:
– 90g udon noodles

CRISPY CHICKPEAS:
to make crispy chickpeas, I drain and rinse 1 can of chickpeas and then transfer to a bowl. Mix with 1-2 tsp of olive oil, add some nutritional yeast, salt + pepper (+ any spices you may like!). Then fry over medium-high heat or bake in the oven for 10-15 mins πŸ™‚
