A WEEK OF VEGAN BREAKFASTS ~ Delicious Meals I Eat In A Week 🧡

blueberry breakfast muffins:
– 2 cups plain flour
– 1 tsp baking powder
– 1 tsp baking soda
– 1/2 tsp salt
– 1/3 cup vegan butter, melted
– 1/2 cup maple syrup
– 2 tbsp apple sauce
– 1 cup soy yoghurt
– 1/2 tsp vanilla extract

bake @ 180 degrees celsius for 40 mins
cool on a wire cooling rack

pancake batter:
– 1 + 1/4 cups plain flour
– 2 tsp baking powder
– pinch of salt
– 2 tbsp white or coconut sugar
– 1 cup soy milk
– 1 tbsp olive oil
– 1 tsp vanilla extract

lemon cream for pancakes:
– 2 cups cashews, soaked for 1 hour minimum
– juice of 1 lemon
– zest of 1/2 a lemon
– pinch of salt
– 2 tbsp maple syrup
– 1/2 tsp vanilla extract

blended in a vitamix or high powered blender until smooth 🙂

granola:
– 1 cup oats
– 1/2 cup almonds flakes
– 1/2 cup hazelnuts
– 1/2 cup macadamias
– 1/2 cup coconut flakes
– 1/4 cup apricot
– 1/4 cup raisins
– 3 tbsp hemp seeds

bake for 30 mins @ 180 degrees celsius

tomato & chickpea egg bake:
– 1/2 brown onion, diced
– 2 roma tomatoes, cut into 2-3cm pieces
– 2 garlic cloves
– 1 x 400g tin crushed tomatoes
– pinch of salt
– pinch of pepper
– 2 tsp harissa spice blend
chickpea egg:
– 1 cup chickpea flour
– 1/2 cup nutritional yeast
– 1 tsp veggie stock powder
– juice of 1/4 lemon
– add water to desired consistency (approx 3/4 cup – 1 cup)
*parsley and bread to serve
