Ingredients
1 15oz chickpeas, canned, drained and rinsed (21g)
1 head cauliflower, broken into florets
3 cups mini potatoes, quartered
1 tbsp extra virgin olive oil, optional
1 lemon, juiced
1 tbsp cornstarch
2 tbsp paprika
1 tsp garlic powder
1 tsp cumin
1 tsp salt

Tahini Herb Dressing
½ cup tahini
2 cloves garlic, minced
1 handful parsley, minced
1 lemon, squeezed
1 tsp maple syrup
½ tsp paprika
3 tbsp water, or more, to thin
1 can navy beans (or any white bean)

My addition:
Add 1 15oz can white beans to tahini herb dressing

Shopping list: – bell peppers – Onion – Taco seasoning packet – Tofu or vegan chicken (or any protein you like, I used @daring brand vegan chicken – Whole wheat or gluten free tortillas – Vegan sour cream homemade or store bought – Cilantro – Lime I had a baby 4 months ago. I am so proud of what my body has done (I mean growing a human is pretty incredible!!). My body has changed a lot too! From stretched out skin, stretch marks, to a c-section scar, I don’t think my body will ever look the same. I’m coming to terms with that ❤️however, I want to be strong and healthy for my kids and I want to feel confident in my body! I’ve been lifting weights and walking a lot which has felt so good. Im trying to rebuild the core strength I lost during my pregnancy and it’s a journey. I feel like weight loss really has become this taboo topic that people are afraid to talk about in the wellness space. You CAN lose weight in a healthy balanced way without fad diets or restricting yourself. This is one of my favorite dinners lately for my weight loss journey, it’s yummy, keeps me full, it’s high in protein but balanced out with carbs and fats too. If you’re on a weight loss journey too, love yourself first, be patient, don’t expect to lose the weight all at once it takes TIME. Ingredients
Red and yellow bell peppers
Yellow onion
Taco seasoning packet
Vegan chicken or tofu
Tortillas
Vegan sour cream (homemade or store bought)
Cilantro
lime

My Homemade Chipotle Crema
1 cup kite hill greek style yogurt
1 clove garlic or more
2 chipotle peppers in adobo sauce
1/4 teaspoon salt

2(12-ounce) packages gnocchi (preferably fresh, refrigerated, precooked gnocchi)
3tablespoons olive oil
2tablespoons unsalted butter
Kosher salt and black pepper
1bunch asparagus (about 1 pound), trimmed and cut into thirds
2small leeks, trimmed, halved lengthwise, then sliced ½-inch thick (about 2 cups)
2shallots, trimmed and sliced lengthwise ¼-inch thick
1cup frozen peas, thawed (or fresh peas)
1lemon, scrubbed
½cup grated Parmesan
¼cup sliced fresh chives or parsley (optional)

My Lemony Tofu Cream Sauce
1 (12.3 oz block) silken tofu
1 tsp onion powder
3 cloves garlic
½ cup nutritional yeast
¼ cup lemon juice or ½ lemon
1 teaspoon salt, (divided)
3 tablespoons olive oil (during blending)
1 teaspoon pepper, (or red pepper

Ingredients:
– 2 cup oats
– 1 cup roasted mixed nuts
– 1/2 cup peanut butter
– Pinch of Salt
– 1/3-1/2 cup honey
– Chocolate chips
– Cinnamon (optional)

Instructions:
– place oats on baking pan and bake it for 7min at 350F
– Melt the peanut butter, honey and salt in a pan
– Take the oats out of oven and mix in chocolate chips, cinnamon, nuts and peanut butter mix, give it a good stir
– Bake it for another 10 mins, make sure to mix it in the middle
– Press it together if you want chunks and let it cool down

I’m sharing a super simple and flavourful recipe for Roasted White Beans and Cherry Tomatoes. This quick tray bake is perfect for using up extra veggies and is incredibly versatile! It makes a delicious topping for crackers, spread on crusty bread, or even as a warm addition to your favourite salad. Plus, it only takes a few ingredients and about 20 minutes in the oven!

I’m serving this with Jenny Marie’s Lime & Pepper crackers, but it pairs well with any bread or cracker you love.

Ingredients:

Cannellini beans
Cherry tomatoes
Shallots
Thyme
Nutritional Yeast
Salt + Pepper
Good-quality olive oil

Instructions:
Preheat oven to 400°F (200°C).
Toss all ingredients in a baking dish.
Bake for 20 minutes, stirring halfway through.

1 cabbage
1tbsp dairy-free butter
1tsp mixed herbs
1tsp smoked garlic

🥣 Topping ingredients:
1 cup lentils (16oz | 200g) or 1 can
2 cups parsley (4oz | 150g)
2 minced garlic cloves
1tsp chopped chilli pepper
1tbsp oil
3tbsp lemon juice
salt

🧑‍🍳Cooking tips:
ℹ️ Feel free to add your favourite dried herbs and spices to get the flavour you enjoy the most.

ℹ️ You can use canned lentils.

ℹ️ Parsley can be substituted for cilantro, carrot greens, basil, arugula.

ℹ️ Chilli pepper can be substituted for Sriracha sauce or any hot sauce of your choice.
