Here’s a vegan cake recipe for coffee and walnut cake – if you like easy vegan cake recipes, you’ll love this vegan coffee cake. This is vegan coffee cake sponge with coffee buttercream frosting, decorated with toasted walnuts. You can also make these as coffee cake muffins or a coffee cake loaf. Vegan Coffee and Walnut Cake



Dry ingredients
2 Cups Self Raising Flour
1 Cup Brown Sugar
1/2 Cup Chopped Walnuts
1 Tsp Baking Powder
3 Tbsp Instant Coffee Granules

Wet Ingredients
1 Cup Dairy Free Milk (I used Oat Milk)
1/2 Cup Sunflower Oil
2 Tbsp Plain Soya Yogurt
1 Tbsp Vinegar

First Preheat the oven to 160 °C and grease an 8 inch cake tin (or 2 tins of baking separately)

Add the milk to a bowl, followed by the soya yogurt and vinegar and set aside to curdle.

Add all dry ingredients except the coffee granules into a separate bowl.

Add the oil and coffee granules into the milk, yogurt and vinegar mixture. If your coffee granules do not dissolve easily add 3 Tbsp of boiling water to the granules beforehand. Stir to combine.

Add the wet ingredients into the dry and gently fold.

Pour the batter into your cake tin(s) and bake for approximately 30 mins or until a skewer comes out clean.


1 Cup Vegan Margarine or Butter
1.5 Cups Icing Sugar
1 Tbsp Instant Coffee Granules (dissolved in 2 Tbsp hot water)
A pinch of Salt

Simply stir or whisk together the ingredients until in a smooth consistency.

Top with extra toasted chopped walnuts (optional)
