Kooking With Kandy: Vegan Recipes! Curry, Sweet Potato Bake And VEGAN SLUTTY BROWNIES

One-Pot Yellow Curry
Prep Time: 10mins
Cook Time: 20 mins

Ingredients:
1 Large yellow onion, choppped
1 Large red onion, chopped
2 cups frozen peas
2 cups frozen broccoli
1 can chickpeas, rinsed and drained
1 block tofu, cubed
1 can of coconut-milk (regular or reduced fat is fine)
1 8oz can tomato sauce
Spices (You can omit if you don’t have some, but it won’t be as good. The curry, tumeric, ginger, and cumin are very improtant for balance in the dish)
2 TPS ground cumin
1/2 TSP cumin seeds
1/2 TSP mustard seed
1 TSP Fenugreek powder
2 TPS curry powder
1 TPS Tumeric
1 TPS garlic powder
1 TSP Chili powder
1/2 TSP Ginger OR 1/2in fresh ginger root
Directions
Start rice in rice cooker
Chop onions and add to large pot with 8oz tomoato sauce, cook 7mins on Medium
Add the rest of the ingredients EXCEPT the tofu, and stir – making sure the spices incorproate
When the veggies are nearly cooked and the dish is very fregrnat, about 15mins on medium, add the cubed tofu and cook 4-5 more minutes.
Serve over rice and enjoy!
