My Cozy Vegan Meals + Making “changes”

*** Cozy Oatmeal (Serves 2-3)
1.5 cups rolled oats
3 cups water
1 scoop Ritual’s Vanilla protein powder
2 tablespoons ground flax
zest of 1/2 orange
1/3 cup raisins
Cinnamon, ginger, and cardamom to taste
~1/2 cup mixed chopped nuts
Instructions: Add everything except for the nuts to a large pot and bring to a simmer over medium high heat. Reduce the heat to medium and simmer for 10 to 15 minutes, or until thickened to your liking. Add sweetener to taste, if desired (sometimes I add some maple syrup). Top with blueberry compote (below) and chopped nuts or nut butter

*** Blueberry Compote
~2 cups frozen blueberries
1/2 cup fresh (or not) orange juice
1 tablespoon arrowroot powder
Instructions: Add the blueberries and OJ to a saucepan over medium high-heat. Thaw, then and simmer for 5-10 minutes, stirring occasionally. Dissolve the arrowroot powder in water, then add to the compote and simmer for another 3 to 5 minutes, or until thickened to your liking. Serve warm.
