PASTRIES:
to make, blend:
– 1 cup cashews, soaked for minimum 1 hour and drained
– 1/2 cup nutritional yeast
– 1 cube veggie stock
– 2 garlic cloves
– 1 tsp dijon mustard
– 1/2 lemon, juiced
– 1/2 cup water
and then mix with:
– 1/2 brown onion, diced and fried until translucent
– 1 cup frozen spinach, defrosted
– 1/2 cup vegan pesto
for this recipe you will need:
– 5 puff pastry sheets
– sesame seeds
– olive oil spray
cook for 20-25 mins at 180ยฐC fan-forced

NOODLE SALAD:
salad:
– 1/2 cucumber, sliced
– 1/2 carrot, peeled and sliced
– fresh coriander, as desired
– crushed peanuts, as desired
– 100g thin rice noodles
tempeh:
– 150g tempeh
– 2 tsp olive or sesame oil
– 1 tbsp tamari
sauce:
– 1/4 cup peanut butter
– 2 tbsp water
– 1 tsp tamari

NOODLE SOUP:
broth:
– 1 + 1/2 cups water
– 1 cup oat milk
– 1 veggie stock cube
– 1 tbsp soy sauce
veggies:
– 1/2 head broccoli, cut into florets
– 1 leek, cut down the middle lengthways and sliced
– the kernels of 1 corn on the cob
fried in 1 tbsp olive oil
noodles:
– 90g udon noodles

CRISPY CHICKPEAS:
to make crispy chickpeas, I drain and rinse 1 can of chickpeas and then transfer to a bowl. Mix with 1-2 tsp of olive oil, add some nutritional yeast, salt + pepper (+ any spices you may like!). Then fry over medium-high heat or bake in the oven for 10-15 mins ๐Ÿ™‚

Preparation

Cook the rice in water first until done.

Season with salt and pepper, chili powder, cumin, dried oregano. Add cooked rice and mix to combine.
Add tomato sauce, sliced tomatoes, and green onions.

simple creamy pasta sauce:
– 1/2 brown onion, finely diced
– 1 tsp olive oil
– 8 cherry tomatoes
– 1/2 cup peas
– 1/4 cup water
– 2 cups soy milk
– 3/4 cup nooch
– 2 tsp veggie stock
– 2 tbsp flour
– 50g spinach
– pepper to serve
(serve with 250g cooked spaghetti)

home-made falafels:
– 1/2 red onion
– 1 garlic clove
– small handful parsley
– 1 can chickpeas, drained and rinsed
– 1/2 cup chickpea flour
– 1/2 tsp chilli flakes
– 1 tsp cumin
– 1/2 tsp baking soda
– 1/8 cup tahini
blended until smooth, rolled into 8-10 balls and baked for 15 mins at 180ยฐC fan-forced

crispy chickpeas:
– 1 can chickpeas, drained and rinsed
– 2 tbsp olive oil
– 1 tbsp almond meal
– 2 tbsp nooch
– salt and pepper, to taste
baked @ 180ยฐC fan-forced for 15 mins

tahini slaw:
– 1/4 red cabbage, sliced finely
– 1/2 carrot, peeled and slice finely
– 1/2 cucumber, sliced finely
– 3 tbsp tahini
– juice of 1/2 lemon
– 1 tsp dijon mustard
– pinch of salt

delicious mexican beans:
– 1 tbsp olive oil
– 1/2 red onion, diced
– 3 tsp mingle taco seasoning
– 1/3 cup tinned tomatoes
– 1 x 400g tin black beans, drained and rinsed

tomato and lentil soup:
– 1/2 brown onion, diced
– 2 garlic cloves, diced
– small handful basil
– 1 punnet cherry tomatoes
– 1 cup water
– 1 tbsp veggie stock
– 800g tinned tomatoes
– 800g tinned lentils, drained and rinsed
– 1/2 cup oat cream
– salt and pepper to taste

crispy cauliflower:
– 1/4 head cauliflower, cut into florets
boiled for 15-20 mins
– 3 tbsp olive oil
– 3 tbsp almond meal
– 1 tbsp nooch
– salt and pepper, to taste
– 1 tsp veggie stock powder
bake @ 180ยฐC fan-forced for 20-25 mins

(makes 9, bake at 180ยฐC fan-forced for 15 mins)
– 1/4 cup pecans + extra to top
– 1/2 cup vegan butter
– 2 cups self-raising flour
– large pinch of salt + extra to top
– 3/4 cup coconut sugar + extra to top
– 2 tbsp flax meal
– 3 tbsp soy milk
– 1/2 tbsp vanilla extract

oat, sultana and macadamia cookies:
(makes 10-12, bake at 190ยฐC fan-forced for 15 mins)

– 2/3 cup sultanas
– 1/4 cup almond butter
– 1/4 cup maple syrup
– 1 tsp vanilla extract
