✰ Vegan Breakfast Tacos
Serves 4
12 Slices Vegan Tempeh Bacon, such as LighttLife
2 tbsp olive oil
1 bottle Just Egg
Salt and pepper to taste
12 Mi Rancho Taco Slider Tortillas
Salsa, vegan sour cream and/or cheese and fresh cilantro for topping
✰ Vegan Caramel Apple Nachos
Serves 2-4
Cinnamon-Sugar Chips
6 medium Mi Rancho Tortillas, corn or flour if desired
2 tbsp melted vegan butter
2 tbsp cane sugar
3/4 tsp cinnamon
pinch of salt
Cinnamon Apples
3 Granny Smith Apples, peeled and chopped
1 tsp cinnamon
1/4 tsp ground allspice
1/8 tsp ground cloves
3 tbsp cane sugar
1 tbsp lemon juice
pinch of salt
Brown Sugar Caramel Sauce
1/4 cup maple
1/4 cup light brown sugar, packed
1/4 cup fresh orange juice, (about 1 very large navel orange)
1 tbsp cornstarch
1 tbsp vegan butter
1/8 tsp kosher salt
Vegan Ice Cream for serving
Preheat the oven to 375 degrees. Then combine the apples apples, spice, sugar, lemon juice and salt and toss to coat. Transfer to baking dish and bake for 20-25 minutes or until fork tender.
Next, cut the tortillas into 8 pieces and place on a cookie sheet in a single layer. Combine the sugar and cinnamon in a small bowl, then brush each chip with melted butter and sprinkle generously with the cinnamon sugar mixture. Bake for 15 minutes then cool on a rack to crisp up completely. Once cool, arrange the chips on a plate and top with the apples.
Then make the caramel by combining the brown sugar, maple syrup, corn starch and orange juice in a saucepan and bring to a simmer over medium heat. Cook for 3 minutes then remove from the heat and whisk in the vegan butter and salt.
Scoop vanilla ice cream on top of each serving of nachos and drizzle the warm caramel sauce on top.
