1 1/4 cup cooked chickpeas (12.5oz | 200g)
1/4 cup cooked chickpeas (2.5oz | 40g)
1 zucchini (5oz | 120g)
1 carrot (2oz | 60g)
3 broccoli florets
1tsp onion powder
1tsp paprika
1tsp garlic powder
2tbsp chickpea flour
1tbsp corn starch
salt to taste
🧑🍳Cooking tips:
ℹ️ Feel free to add your favourite herbs and spices to to get the flavour you enjoy the most.
ℹ️ For the patties to hold together place patties mixture in to the fridge for 30-60 minutes. It works miracles and you do not need a binder 👍 If you feel like you need a diner add some flaxseed. 😊
ℹ️ With the ingredients listed in the recipe you get about 8 patties.

1 onion
2tbsp chickpea flour
1tsp dried herbs
1 tomato
1tbsp tomato sauce
salt to taste

1.5 cup basil (16oz | 40g)
1/4 cup sunflower seeds (2oz | 40g)
3tbsp nutritional yeast
2 garlic cloves
1/4 cup water (2fl oz | 60ml)
2tbsp lemon juice
2tbsp olive oil
salt to taste

Nut Roast –

For the nut roast:
• 1/2 a butternut squash
• 1 tbsp of oil
• 1/2 a large leek
• 2 garlic cloves
• pinch of salt and pepper
• 1 400g can of green lentils
• 25g dried porcini mushrooms
• 1 stock cube in 400ml water
• 1 tsp each of dried parsley, oregano, rosemary & thyme
• 150g mixed nuts
• 30g pistachios
• 85g dried cranberries
• 1 orange zested
• 1 tbsp each of soy sauce, maple syrup & nutritional yeast
• 1/2 tsp each of cinnamon & all spice
• flax egg (2 tbsp milled flax seed 4 tbsp water)
• 175g breadcrumbs
For the cranberry glaze:
• 160g fresh or frozen cranberries
• 3 tbsp caster sugar
• 2 tbsp water
For the caramelised pecans:
• 25g pecans
• 1/2 tbsp maple syrup
• 1 tbsp sugar
*Celeriac Mash* –
• 1 celeriac, cubed
• 2 cloves of garlic, finely chopped
• 3 springs of thyme
• 100ml vegan cream
• 100ml oat milk
• 25 vegan butter
• juice of 1/2 a lemon
• big pinch of salt & pepper to taste
• ground nutmeg
*Red Cabbage & Apple* –
• 25g vegan butter
• 1/2 a red cabbage (650g), shredded
• 250ml cider
• 2 tbsp maple syrup
• 2 tsp cinnamon
• 1 tsp all spice
• big pinch of salt & pepper to taste
• 1 apple, sliced
*Marmite & Bacon Sprouts* –
• 15g vegan butter
• 60g vegan bacon bits
• 200g sprouts
• 2 tbsp marmite
*Maple & Mustard Carrots and Parsnips* –
• 300g carrots, sliced lengthways
• 400g parsnips, sliced lengthways
• 2 tbsp olive oil
• 2 tbsp maple syrup
• 2 tbsp orange juice
• 1 tbsp mustard
• a few springs of fresh rosemary, chopped

200g | 1 cup red split lentils
500ml | 2 cups water
150g | 2 cups broccoli
1 onion
1 garlic clove
1 carrot
50g | 1 3/4 cups spinach
1tsp Korean chilli flakes
1tsp ground coriander
1tsp smoked paprika
salt and ground black pepper to taste
5tbsp corn meal
chickpea crumbs or breadcrumbs
a little oil for frying
????????Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
❗ For the patties to hold together place patties mixture in to the fridge for 15-30 minutes. It works miracles and you do not need a binder ????
???? Method:
Rinse 200g | 1 cup red split lentils with water.
Pour 500ml | 2 cups water.
Simmer lentils until water absorbed.
Disassemble 150g | 2 cups broccoli into inflorescences.
Pour boiling water. Cover and set aside for 5 minutes.
Chop 1 onion.
Sauté until translucent for about 3 minutes.
Chop 1 garlic glove.
Peel and grate 1 carrot.
Season with salt.
Place cooked red lentils in a mixing bowl.
Add cooked vegetables mixture.
Grate broccoli florets.
Finely chop 50g | 1 3/4 cups spinach.
ℹ️ You can use any greens of your choice like parsley, cilantro, dill etc.
Season with 1tsp Korean chilli flakes, 1tsp ground coriander, 1tsp smoked paprika,
salt and black pepper to taste.
Add 5tbsp or more corn meal.
Mix until combine and transfer to the fridge for 15 minutes [it helps patties to hold together].
Shape into patties, about 1/2 inch thick.
Coat with chickpea crumbs or breadcrumbs.
Heat a little olive oil in a non stick skillet.
Fry veg patties for about 5-7 minutes on each side or until golden and crispy.
Top with tahini dressing or your favourite sauce and enjoy! ????

???? Creamed spinach ingredients:
250g spinach
100g | 3/4cup chickpea flour
1/4 tsp ground nutmeg
1/8tsp black pepper
salt to taste
300ml | 1.2 cup coconut milk
???? Pancakes ingredients:
150g | 1 cup oats
1tbsp corn starch
1tsp baking powder
salt
400ml | 1 3/4 cup dairy-free milk
1tbsp vinegar
1tsp agave syrup
???? Pesto ingredients:
20g | 1cup cilantro or parsley
1 date
1tbsp nutritional yeast
salt
1tbsp lemon juice
60ml | 1/4 cup oil
????????Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
???? Method:
Transfer 250g | 7 oz raw spinach to a skillet and cook stirring until the spinach is wilted.
In a mixing bowl combine and whisk until smooth 100g | 3/4cup chickpea flour, 1/4 tsp ground nutmeg, 1/8tsp black pepper, salt to taste and 300ml | 1.2 cup coconut milk.
Pour the batter over the spinach and cook gently on low heat for 5 minutes until thickened.
To make oat flour add 150g | 1 cup oats, 1tbsp corn starch, 1tsp baking powder, salt to a blender.
Blitz for 20 seconds until you have a fine, powdery flour.
Pour 400ml | 1 3/4 cup dairy-free milk, 1tbsp vinegar, 1tsp agave syrup.
Whisk until well combined.
Brush with oil and heat up a non stick pan at a low medium heat.
Pour the batter using a ladle onto the skillet and fry until golden brown.
Flip carefully and cook on the other side.
Continue until all the batter is used up.
To make a delicious pesto place 20g | 1cup cilantro or parsley, 1 date, 1tbsp nutritional yeast, salt, 1tbsp lemon juice, 60ml | 1/4 cup oil into the bowl of a food processor and pulse.
Spoon the spinach mixture into the each crepe and fold over.
You can place spinach stuffed crepes in the preheated oven until warmed through.
Serve with pesto and enjoy! ????

????Ingredients and recipe 1:
Peel and grate 400g | 1lb sweet potato.
Transfer grated potato to a mesh bag or sieve.
Grate 200g | 7oz zucchini.
Add 1/2tsp salt and mix until combine.
Set aside for 10 minutes.
Squeeze liquid out of grated sweet potatoes and zucchini.
Transfer to a mixing bowl.
Add 2tbsp corn starch and 1/8tsp black pepper.
Cut 2 green onions.
Mix well.
Oil spray the baking tray lined with parchment.
Pile the mixture inside the cookie cutter (cooking ring) – about 1cm | 0.35 inch in height.
Do not compact too much.
Bake in the preheated oven at 200C | 390F for 15 minutes.
For the dipping sauce mix in a small bowl 80ml | 1/3 cup yogurt, 1tsp sriracha, 1tsp maple syrup, 1/2tsp lemon juice and salt to taste.
After 15 minutes let it cool down a bit and carefully flip over each sweet potato hash brown. Be gentle as they are very fragile.
Bake for further 10-15 minutes.

????Ingredients and recipe 2:
500g | 1lb sweet potato – peel and slice as thin as possible.
Grease baking dish with oil (baking dish size 20x5cm | 8x2inch).
Transfer sweet potato wedges into the baking dish.
Add to a jug 250ml | 8fl oz dairy free double cream. Feel free to use a full-fat oat milk or coconut milk instead.
2tbsp nutritional yeast.
2tbsp corn starch.
1/8tsp black pepper.
1tsp Italian herbs mix.
1/2tsp nutmeg.
salt to taste.
2tbsp grated dairy free cheese.
2 chopped garlic cloves.
Blend it all together. Do not make it whipped if you use double cream.????
Pour the sauce mixture over the sweet potatoes.
Bake in the preheated oven at 190C | 370F for 50 minutes until the sauce is bubbly, but firm.
Enjoy it for lunch or dinner!????????

????Ingredients:
250g | 2 cups raw cashews
2tbsp nutritional yeast
1 garlic clove
1/2tsp garlic powder
1/2tsp salt
zest of 1 lemon
120ml | 1/2 cup water
juice of 1 lemon
2tbsp oil
3tbsp fresh dill
????Method:
Place 250g | 2 cups raw cashews in a bowl.
Pour hot water and soak for 1 hour.
Transfer soaked cashews to a food processor.
Add 2tbsp nutritional yeast, 1 garlic clove, 1/2tsp garlic powder, 1/2tsp salt and zest of 1 lemon.
Pour 120ml | 1/2 cup water, juice of 1 lemon and 2tbsp oil.
Process until very creamy and smooth.
Taste and adjust seasoning as needed.
Scoop all cheese over the cheesecloth. Twist the top gently to form a disc. Secure with a rubber band.
Transfer to the fridge for at least 6 hours (preferably for 12 hours).
Unwrap from cheesecloth and invert onto serving platter.
Coat with 3tbsp chopped fresh dill and lemon zest.
