1 Packet of Goya Sazon seasoning
2 Green onion
1 Stock of celery
1 Tbsp of green seasoning

LENTIL RECIPE INGREDIENTS: (4 to 5 servings approx.)

πŸ‘‰ TO COOK THE RED LENTILS:
1+1/2 Cup / 290g Red Lentils
5 cups / 1183ml Cup water
1+1/4 Teaspoon Turmeric
1+1/4 Teaspoon salt (I have added sea salt)

πŸ‘‰ LENTIL PASTA INGREDIENTS:
3 Tablespoon Cooking Oil (I have used light olive oil)
1/2 Teaspoon Whole Cumin Seeds
2 Cups / 275g Onion – chopped
2 Tablespoon / 25g Garlic – finely chopped
1/4 to 1/2 Teaspoon Chilli Flakes or to taste (you can use 1 to 2 whole dried Indian red chilies if you prefer)
2+1/2 Teaspoon Ground Coriander
1/8 Teaspoon Asafoetida (hing)
1/4 to 1/2 Teaspoon Cayenne Pepper (Optional)
1/2 cup / 125ml Tomato Puree / Passata
2 Cups / 330g Tomatoes – 3 medium size tomatoes – chopped
Salt to taste (I have added total 1+1/4 teaspoon sea salt)
3 cups / 700ml Water
250g Lasagna sheet OR Pasta of choice
2+1/2 cups / 350g Zucchini (cut in 1/2 inch thick semi circles)

1/2 cup / 30g Cilantro (Coriander leaves) – chopped
3/4 cup / 50g Green Onions – chopped
Freshly ground black pepper to taste (I have added 1/2 Teaspoon of Black Pepper)
Drizzle of Olive Oil (I have added 1/2 to 1 tbsp of organic cold pressed olive oil)

▢️ METHOD:

Thoroughly rinse the red lentil (a few times), until the water runs clear and then soak for 1 hour. Drain the water from the soaked lentils and transfer it to a small pot. Add turmeric, salt and water. Cover and bring to a boil. Once it starts to boil, give it a mix. Reduce the heat to medium-low, cover and cook for about 30 minutes or until the lentils are cooked. Once cooked turn off the stove, cover the lid and set aside for later.

βœ… πŸ‘‰ PLEASE NOTE: The cooking time depends on the quality of the lentils. Sometimes one batch of red lentils can be drier than the others and may need more cooking time. SO ADJUST THE COOKING TIME ACCORDINGLY. It took me 30 minutes on my stove.

To a heated pot add cooking oil. Once the oil is heated, reduce the heat to low (this will prevent the cumin from burning) and add the cumin seeds. When the seeds starts to splutter, add the onion, 1/4 teaspoon salt and increase the heat back to medium. Fry on medium heat until the onion are golden brown. πŸ‘‰ ADDING SALT TO ONIONS WILL RELEASE IT’S MOISTURE AND HELP IT COOK FASTER SO PLEASE DON’T SKIP IT.
Add the garlic, chili flakes and fry for about 2 minutes or until fragrant. Reduce the heat to low and then add dry spices (ground coriander, asafoetida and cayenne) and fry for about 30 seconds or so on low heat. Add the Tomato puree, fresh chopped tomatoes and salt to taste. Now increase the heat to medium-high. Mix well and fry the tomatoes until they disintegrate and forms a thick paste and the oil starts separating. Once the tomatoes are nicely fried, add the cooked red lentils and water. Mix thoroughly. Cover the lid of the pot and bring to a boil. Once it starts to boil, add the pasta, chopped zucchini and mix well. Cover the lid again and cook the pasta on medium-low heat for 6 to 8 minutes. MAKE SURE TO STIR IN-BETWEEN TO PREVENT THE PASTA FROM STICKING TO THE BOTTOM OF THE PAN. Uncover and cook for another 1 minute or so. Turn off the stove.

βœ… πŸ‘‰ UNDER-COOK THE PASTA by 3 to 4 minute, as it will continue to cook in the hot liquid even after the stove it turned off.

βœ… πŸ‘‰ Note: If the lentil dish is too thick for your liking, you can thin it out with boiling water. DO NOT add cold water to it, otherwise it will ruin the taste.

Add chopped cilantro, green onions, freshly ground black pepper, drizzle of olive oil and mix well. Serve hot with a side salad.

Easy, Healthy Red Lentil Wraps πŸ₯™

Friends, this might be the best way to eat lentils yet! I am absolutely mind-blown at how easy these red lentil wraps are and how well they worked. I kept seeing these wraps popping up on my feed, and if you know my love for legumes you know I had to give it a go.

This is literally a game-changer and is going to be heavily featured on my lunch rotation going forward. I’m always looking for some easy lunches to meal-prep and this is it.
You can make a few at a time, roast a bunch of veggies, store them all in the fridge, and serve them later with a bit of hummus, some baby spinach and a bit of sauerkraut for some fermented food. And that’s it. Absolutely brilliant. You could also flavour them with some spices, the possibilities are endless.

I made 4 large wraps out of 1 cup of lentils. Each wrap gets you 11.5g of protein and only costs around 19 cents to make.
How awesome is that? As you can tell I am very excited about this new trend. Will you give it a go?

???? Quinoa and Lentils Recipe | High Protein Vegetarian and Vegan Meal Ideas

▢️ RECIPE INGREDIENTS: (3 to 4 servings)

???? To cook the green lentils:
1/2 Cup / 100g GREEN Lentils (Washed/Soaked for 8 to 10 hours or overnight)
1 Teaspoon Salt (I have added pink Himalayan salt)
2 Cups / 475ml Water

???? To Marinate the cooked green lentils:
1+1/2 Tablespoon Lemon juice OR TO TASTE
1 Tablespoon Olive Oil (I have added organic cold pressed olive oil)

???? To cook Quinoa:
1 Cup / 190g Quinoa (Washed/Soaked for 30 minutes)
2 to 3 Tablespoon Olive Oil
1 Cup / 135g Onion
1+1/2 Cup / 200g Carrots (2 medium size carrots)
1 Tablespoon Garlic – finely chopped
3 Tablespoon Tomato paste OR TO TASTE
1+1/2 Teaspoon Paprika (NOT SMOKED)
1+1/2 Teaspoon Ground Cumin
1/4 Teaspoon Cayenne Pepper (optional)
Salt to taste (I added total 1+1/4 Teaspoon of pink Himalayan salt)
1+1/2 Cup / 350ml Vegetable Broth (LOW SODIUM)

???? To Garnish:
1/2 Cup / 65g Red Onion – chopped
1/2 Cup / 25g Parsley – chopped
1/4 Cup / 5g Mint OR TO TASTE – chopped
1/2 Teaspoon Ground Black Pepper or to taste

▢️ METHOD:

Wash & soak 1/2 cup of green lentils for 8 to 10 hours or overnight. Once the lentils are soaked, drain the water and rinse it. Transfer the lentils to a pot. Add salt and water. Cook over medium-high heat and bring to a vigorous boil. Once it starts to boil, reduce heat to medium-low and cook for about 4 minutes or until lentils are cooked but still holds its shape. WE DO NOT WANT MUSHY LENTILS. Right away strain the cooked lentils. Let it sit in the strainer to get rid of any excess water and allow it to cool down. Once lentils have cooled, add lemon juice, olive oil and mix well. Allow the lentils to marinate while we continue with the rest of the cooking.

βœ… ????Cooking time of the lentils depends on it’s quality. One batch of lentils maybe drier than the others and may require longer cooking time. SO ADJUST THE COOKING TIME ACCORDINGLY.

Thoroughly wash 1 cup of quinoa until the water runs clear and then soak in water for 30 minutes. βœ… ????After 30 minutes drain the water from quinoa and let it sit in the strainer to get rid of any excess water.

To a heated WIDE PAN, add olive oil, chopped onion, carrots, 1/4 tsp salt and fry on medium to medium-high heat until it’s slightly browned (about 5 to 6 minutes). ADDING SALT TO ONION/CARROTS RELEASES IT’S MOISTURE AND HELPS IT COOK FASTER, SO PLEASE DON’T SKIP IT. Add the garlic and fry on medium heat for 30 seconds or until fragrant.

βœ… ????REDUCE THE HEAT TO LOW BEFORE ADDING THE SPICES AND TOMATO PASTE TO PREVENT IT FROM BURNING.

Add the tomato paste, paprika, ground cumin, cayenne pepper and fry on low heat for only 1 to 2 minutes (no longer than that), just to cook out the raw flavour of the tomato paste. Add the quinoa, salt, vegetable broth. Turn up the heat and bring to a VIGOROUS BOIL. Then reduce the heat to low and cook for about 15 to 20 minutes or until quinoa is cooked.

βœ… ????DO NOT LET THE QUINOA GET MUSHY. ADJUST THE COOKING TIME OF QUINOA ACCORDING TO THE HEAT OF YOUR STOVE. DO CHECK IN 15 MINUTES, if still not cooked then cook for longer. It took me 20 minutes on my stove.

Once the quinoa is cooked, uncover the lid and turn off stove. Add the cooked lentils, ground black pepper, red onions, parsley, mint & mix well. Cover the lid and allow it to rest for 3 to 4 minutes for the flavours to blend.

Serve hot with a side of green salad. Perfect for meal prep / meal planning as it stores well in the refrigerator for 3 to 4 days

▢️ IMPORTANT NOTES:

???? Thoroughly wash the quinoa a few times until the water runs clear, this will get rid of any impurities/gunk/bitterness and will give quinoa a clean taste

???? Every stove is different SO ADJUST THE HEAT AND COOKING TIME AS REQUIRED

???? Cooking time of lentils depends on it’s quality. One batch of lentils maybe drier than the other and may require longer cooking time, SO ADJUST ACCORDINGLY

???? DON’T LET THE QUINOA GET MUSHY. ADJUST THE COOKING TIME ACCORDING TO THE HEAT OF YOUR STOVE. CHECK IN 15 MINUTES, if its still not cooked, then cook for longer

AMAZING LENTIL LOAF – Healthy Vegan And Vegetarian Recipes

This Lentil Loaf recipe is perfect for meal prepping or simply putting in the oven during the middle of the day. It’s healthy, filling, and will never let you down. Give it a try today and see for yourself how amazing it is!

Ingredients:

For the lentil and quinoa loaf:

– 1 bay leaf (to cook the lentils)
– vegetable broth (to cook the lentils)
– 3 tbsps olive oil
– 1 onion (chopped)
– 3 garlic cloves (minced)
– 1 inch ginger (grated)
– 1 rosemary sprig
– 1/2 tsp cumin
– 1 tsp thyme
– 1/2 tsp paprika
– 1/3 tsp black pepper
– 1 tbsp soy sauce
– 150 grams brown mushrooms (chopped)
– 1 carrot (grated)
– 2 celery stalks (finely chopped)
– 2 tbsps nutritional yeast
– 2 cups cooked lentils (1/2 + 1/3 cup dried)
– 1/2 cups cooked quinoa
– salt (to taste)
– 100 grams oats
– 50 grams walnuts (chopped)

For the sweet tomato sauce:

– 3/4 tbsps olive oil
– 3 garlic cloves (minced)
– 3 tomatoes (blended)
– salt (to taste)
– black pepper (to taste)
– 1 tsp agave syrup

Instructions:

Making the loaf:

– Soak lentils in cold water for 45 minutes and quinoa in warm water for 30 minutes.
– Drain lentils and cook in vegetable broth with bay leaf until tender yet firm.
– Drain and cook quinoa in water with salt until fluffy.
– SautΓ© onion, garlic, and ginger in olive oil. Add cumin, paprika, thyme, and rosemary, allowing the aromatics to release.
– Add mushrooms and cook until they’re soft before adding the carrot and the celery and also letting them cook until soft.
– Stir in nutritional yeast, incorporating it into the mixture, allowing its nutty flavor to permeate.
– Fold in the cooked lentils, quinoa, and season with black pepper, and salt to taste.
– Combine the oats with the mixture and then use a hand blender to blend half of it until smooth.
– Fold in the chopped the nuts, mixing it all together.
– Transfer the mixture into a loaf pan and bake it in the oven at 180ΒΊ C (350ΒΊF) until it turns a golden brown.

Making the sweet tomato sauce:

– For the sauce, sautΓ© garlic in olive oil, add tomato pulp, season with salt and pepper, and simmer.
– Finish sauce with agave syrup.
– Serve loaf with sauce, and optionally with roasted potatoes, veggies, or a light salad.
