Thin Mint “Squirrel Scout” Cookies (Vegan): 3 Ingredient Recipes
Steve is back, and he wants to have some “Squirrel Scout” cookies! His favorite are the “not so thick” mints that consist of a chocolate wafer covered in chocolate and with a minty flavor. We decided we could make a vegan version of these cookies, and so that’s what we did! Whether you want an alternative to Girl Scout Cookies, or just want a thin mint cookie that’s super-easy to make at home, this recipe is right for you.
Vegan Thin Mints:
12 chocolate wafer cookies
7 oz. vegan chocolate
1/2 tsp. peppermint extract
Melt 3/4 of the chocolate and then add the rest to temper it, melting all of the chocolate in a bowl. Add the peppermint extract to taste and mix until smooth. Dip each wafer into the chocolate, shaking off excess and cool on parchment paper until chocolate is set and shiny.
