Chia seed pudding – (makes 3-4 servings) 6 tbsps of chia seeds, 2-3 cups of plant milk, 1 tbsp of your fav sweetener, frozen fruit. Refrigerate overnight
Strawberry milk – blend 2 cups of frozen strawberries, 3 cups of plant milk, and about 1-2 tbsp of your favorite sweetener

Smoked Tofu Bowl – cooked quinoa, veggies, pickled onions, smoked tofu (you can bake, pan fry, or airfry it)
Pickled Onions – didn’t really measure but it was 1/2 of a red onion, about 1/4 cup of champagne vinegar, 1/2 cup of boiling hot water, fresh rosemary, salt, peppercorns, red pepper flakes, 1-2 tsp of with agave or maple syrup
