vol-au-vent filling:
– 1/4 head finely diced cauliflower
– 1/4 cup finely diced leek
– 300ml coconut cream
– 2 tbsp nutritional yeast
– 1/2 tsp salt
– pinch of pepper

easy + delicious tempeh:
(for rice paper rolls & easy tempeh wrap)
– 100g soy tempeh
– 1 tbsp sesame oil
– 1 tbsp soy sauce

one-pot pasta:
– 1 tbsp olive oil
– 1 spring onion
– 1 clove of garlic, diced
– 1/2 tsp chilli flakes
– 1 tsp dried basil
– 400ml crushed tomatoes
– 400ml water
– 1/4 tsp salt
– pinch of pepper
– 150g pasta

peanut butter sauce:
(for rice paper rolls)
– 1 heaped tbsp peanut butter
– 2 tsp soy sauce
– 1 tsp sesame oil
– water (until desired consistency)

crispy chickpeas:
(for salad)
– 400g can chickpeas, drained and rinsed
– 1 tbsp olive oil
– 1 tsp dried basil
– 1/4 tsp salt
– 2 tbsp nutritional yeast
baked 8-10 minutes at 180Ā°C fan-forced

savoury chickpea pancakes:
– 1 cup chickpea flour
– 1/4 cup nutritional yeast
– 1 tsp smoked paprika
– 1/4 tsp salt
– pinch of pepper
– juice of 1/2 lemon
– 1/2 cup water (add more water to get to desired consistency)
+ tomatoes, feta, other veggies if desired šŸ™‚

warm black bean salad:
– 1 tbsp olive oil
– fresh corn (from 1 cob)
– 300g black beans, drained and rinsed
– 1/2 cup rice (pre-cooked or from microwave packet)
– 1 tsp garlic powder
– 1 tsp smoked paprika
– 1 head cos lettuce
– 6-8 cherry tomatoes
– 1 heaped tbsp coconut yoghurt
– fresh coriander and spring onion to serve
