WHAT I EAT IN A DAY | BALANCED VEGAN DIET | PLANT BASED PRINCESS 🌿

A plant-based diet is a diet consisting mostly or entirely of foods derived from plants, including vegetables, grains, nuts, seeds, legumes and fruits, and with few or no animal products.

BREAKFAST (Smoothie Bowl):
•one fresh banana (I usually like frozen banana but didn’t have any)
•frozen blueberries
•frozen strawberries
•hemp seeds
•a tbsp or two of peanut butter
•a splash of almond mylk
•blend it all together
•topped with granola and walnuts

LUNCH (Salad w/ fries):
•oven baked fries (full recipe video coming Tuesday)
•a hand full of green leaf lettuce
•guacamole:
•a quarter of a tomato chopped
•a quarter of an onion chopped
•a few cilantro leaves chopped
•one garlic clove chopped finely
•one and a half avocado
•mix all together
•topped with sesame seeds and hemp seeds

DINNER (black bean + quinoa tacos):
•heat about a tablespoon of grapeseed oil on medium heat
•chop half an onion and mince two-three cloves of garlic
•toss your onion and garlic into pot until translucent
•once, the garlic and onion is translucent, add one cup of rinsed quinoa, two cups of vegetable broth and 16 oz can of diced tomatoes
•bring to a boil, turn to low heat to simmer
•cook for about 25-30 minutes or until all liquid is absorbed
•once the liquid is absorbed, add one can of rinsed black beans
•mix all together and now we can add our spices
•spice list:
a tbsp of smoked paprika
2 tbsp of chili powder
a tbsp of garlic powder
a tbsp of onion powder
2 tbsp of coconut sugar
1 tbsp of sea salt
1 tsp of black pepper
*I usually don’t measure. These are just estimates! Feel free to add more or less of any spice to adjust to your liking.*
Mix well!

This black bean quinoa mix is ACTUALLY one of my favs! It is so diverse! I eat it with tacos, burritos, taco salad, chili cheese fries, etc! It’s sooo good. NO CAP!
