The “Snickers” Balls we made:
1 cup almond flour
1/4 cup maple syrup
1/4 cup natural, salted peanut butter (room temp)
2 tbsp vegan chocolate chips
2 tbsp chopped roasted + salted peanuts
pinch of salt
Topping
3/4 cup vegan chocolate chips
1 tbsp refined coconut oil

In a large mixing bowl, combine the almond flour, maple syrup and peanut butter. Stir in the chocolate chips and chopped peanuts and scoop onto balls using a medium sized ice cream scoop. Freeze for one hour.

Combine the chocolate chips and coconut oil in a microwave safe bowl and heat in 15 second intervals, stirring in between until melted and smooth.

Coat each ball in melted chocolate and top with extra roasted peanuts and a touch of flakey salt on top. Chill in the fridge until ready to serve 🙂

Garlic-Lovers Cauliflower Soup
1 yellow onion, chopped
2 tbsp olive oil
1/2 tsp kosher salt
1/2 tsp black pepper
1/4 tsp nutmeg
2 tsp dried oregano
4 cloves garlic
1 head of cauliflower, chopped (about 4 cups)
4 cups vegan chicken broth or veggie broth
3 cups water
1/4 cup raw cashews
1 can white beans, drained and rinsed

Add the olive oil to a large stock pot and sauté the onions on medium heat for 5 minutes. Add the salt, pepper, nutmeg, oregano and garlic and mix well. Add the cauliflower, cashers, broth and water. Bring to a boil, then reduce the heat to low and cover with the lid ajar for 30 minutes.

Add the beans and turn off the heat. Cool for 10-15 minutes and then transfer to a blender and blend until very smooth and creamy. (I found this works better in a blender than with an immersion blender but either one will work! Just blend until very smooth and creamy)

Taste and add salt and pepper as desired.
