Raw Vegan Cauliflower Rice: Cherry Chocolate
This raw cauliflower rice recipe has a slight sweetness from dark sweet cherries and cinnamon, savoriness from the basil and cauliflower. The chocolate gives it decadence. The flax and cauliflower add crunch. It’s both a sweet dessert and a meal.
Ingredients:
¾ cup dark sweet cherries, previously frozen & defrosted
1 pound cauliflower, rinsed & chopped
¼ cup freshly ground flax seeds
1 teaspoon cocoa powder
Dash cinnamon, ground
Dash ginger, dried
Dash cardamom, dried
Dash basil, dried
Put all in blender in the order above and chop until the seasonings are fully incorporated and the cauliflower resembles the size and shape of rice. You’ll need to press the cauliflower down with a tamper while it’s mixing. Make sure not to over-blend it, you’re not making a smoothie; it’s supposed to be crunchy. Scrape contents into a medium-sized bowl and eat right away with a spoon.
