▢️ CAULIFLOWER RECIPE INGREDIENTS: (3 servings approx.)

πŸ‘‰ To Blanch the Cauliflower:
2.5 litres / 12 cups Water
1 Teaspoon Salt (I have added pink Himalayan salt)
500g Cauliflower (cut into 2 x 2 inches florets)
βœ… [Note: If you want to cut the cauliflower into even smaller florets (than suggested) then reduce/adjust the blanching time accordingly]

πŸ‘‰ Other Salad Ingredients:
2 Tablespoon Olive oil (light)
130g / 1 Red Onion – sliced
150g / 2 medium Carrots – 1/4 inch thick and 2 inches long slices approx.
150g / 1 Red Bell pepper – cut 1/2 inches thick and 2 inches long slices approx.
1/4 Teaspoon salt (I have added pink Himalayan salt)
1 Teaspoon Paprika (NOT SMOKED)
1/4 Teaspoon Cayenne Pepper (optional)
1/2 cup / 25g Parsley

πŸ‘‰ SALAD DRESSING: (ADJUST THE DRESSING INGREDIENTS TO YOUR LIKING)
2+1/2 Tablespoon White Vinegar OR to taste (I have added white wine vinegar. You can also use apple cider vinegar for this recipe if you prefer)
2 to 2+1/2 Tablespoon Olive Oil (I have added organic cold pressed olive oil)
1 Teaspoon Maple Syrup OR to taste
1/2 Teaspoon minced Garlic (1 large garlic clove approx.)
1 teaspoon Dried Oregano
1/4 teaspoon freshly ground Black Pepper
Salt to taste (I have added 1/2 teaspoon pink Himalayan salt)

▢️ METHOD:

Thoroughly rinse and then chop the vegetables.

Bring a pot of water to boil. Add salt and cauliflower. Blanch the cauliflower in salted water for JUST 2 MINUTES and then allow it to rest in a strainer to get rid of any excess water. DO NOT OVER COOK THE CAULIFLOWER BECAUSE WE’LL COOK IT FOR THE SECOND TIME AS WELL, ALONG WITH THE OTHER VEGETABLES.

Now to a heated pan add olive oil, onions, carrots, red bell pepper and 1/4 teaspoon of salt. Fry on medium heat for about 3 to 4 minutes or until the vegetables are slight soft but still has a bite to it. Add the blanched cauliflower, paprika and cayenne pepper and fry for another 2 to 3 minutes on medium to medium-high heat. Turn off the heat and transfer the fried vegetables to a mixing bowl.

To prepare the salad dressing: Add the vinegar, extra virgin olive oil, minced garlic, dry oregano, black pepper and salt to a small jar and mix well. βœ… πŸ‘‰ ADJUST THE VINEGAR AND MAPLE SYRUP TO YOUR TASTE.

▢️ VEGETABLE SOUP RECIPE INGREDIENTS:

2 to 3 Tablespoon Olive oil
200g / 1+1/2 Cup Onion – chopped
1/2 Tablespoon Ginger – finely chopped – 1/2 Inch ginger
1+1/2 Tablespoon Garlic – finely chopped – 4 to 5 garlic cloves
500g Cauliflower – cup into florets – 4 to 5 heaping cups approx.
400g Sweet Potato – chopped into cubes – 3 heaping cups approx.
200g / 1+1/4 Cup approx. Tomatoes – chopped
900ml / 4 Cups Vegetable Broth (low sodium)
475ml / 2 Cups Water
Salt to taste (I have added total 1+1/4 Teaspoon of pink Himalayan salt)

Spice Mix:
1/2 Teaspoon Turmeric
1 Teaspoon Ground Cumin
1 Teaspoon Ground Coriander
1/4 Teaspoon Garam Masala
1/4 Teaspoon Ground Cinnamon
1/4 Teaspoon Cayenne Pepper (optional)
1/3 Cup / 75ml Water

Garnish:
Lemon Juice (I have added 1/2 tablespoon)
Ground Black Pepper (I have added 1/2 teaspoon)
Drizzle of olive oil (I have added 1 tablespoon of organic cold pressed olive oil)

▢️ METHOD:

Start by preparing the spice mix. To a bowl add the turmeric, cumin, coriander, garam masala, Cinnamon, cayenne pepper, water and mix well until it forms a slurry. Set aside.

To a heated pot add olive oil, onion, 1/4 teaspoon salt and fry on medium heat until the onion starts to brown. Adding salt to onion will release it’s moisture and will help it cook/caramelize faster, so please don’t skip this step.
Then add the chopped ginger and garlic and fry for about 1 minute or until fragrant. Now reduce the heat and add the spic mix and mix well. Continue to cook until all the moisture is evaporated and it forms a thick paste. Then add the cauliflower, sweet potato, tomato, vegetable broth, water, salt and mix everything thoroughly. Cover the lid and bring it to a boil. Once it starts to boil reduce the heat to medium low and cook for about 15 to 20 minutes or until the sweet potato is cook through. Turn off the heat and let it cool down before blending.

Now blend it into a smooth puree. Turn on the stove and bring the soup to a boil and cook for about 1 minute or so. This will prevent the pulp and water from separating and will get you a better consistency and texture. Turn off the heat and add the lemon juice, drizzle of olive oil and freshly ground black pepper to taste. Mix well and cover the lid and let it rest for 4 to 5 minutes before serving for the flavours to blend. Serve hot with some crusty whole grain bread.

If the soup gets too thick then thin it out with some boiling water DO NOT ADD COLD WATER to it otherwise it will ruin the taste.

▢️ IMPORTANT TIPS:

???? Adding salt to onion will release it’s moisture and will help it cook/caramelize faster, so please don’t skip this step
???? Reduce the heat before adding the spice mix, this will prevent it from burning – burnt spices will make the dish bitter
???? The garnish is what completes the dish so please do not skip any of the ingredients
???? Every stove is different, so if needed adjust the cooking time and the heat of your stove accordingly
???? If the soup gets too thick then thin it out with some boiling water DO NOT ADD COLD WATER to it otherwise it will ruin the taste.

???? Ingredients :
1 head of cauliflower

Dry ingredients :
150g | 1cup chickpea crumbs or breadcrumbs
1/2tbsp garlic powder
1/2tbsp Italian herbs
salt
black pepper
30g | 2tbsp dairy free parmesan or 2tbsp nutritional yeast
4tbsp olive oil

Batter ingredients :
100g | 1/2 cup chickpea flour (gram flour)
water
pinch of salt

dip sauce ingredients :
250g | 1cup coconut yogurt or any dairy free yogurt
1-2 garlic cloves
1/2 cucumber
1/4 cup fresh chopped dill
black pepper
salt
1tbsp lemon juice
1tbsp olive oil
1/4tsp chilli flakes (optional)

????‍????Cooking tips:
❗You can substitute chickpea crumbs for breadcrumbs ????
❗you can substitute dairy free parmesan for 2tbsp nutritional yeast ????

????Method:
Cut the leaves off the base of 1 head of cauliflower.
Disassemble cauliflower into inflorescences.
Bring a large pot of salted water to a boil.
Transfer cauliflower florets into a pot.
Boil cauliflower for 2-3 minutes.
In a mixing bowl combine 150g | 1cup chickpea crumbs or breadcrumbs. I prefer to use my home made gluten free chickpea crumbs, they are so delicious.
Add 1/2tbsp garlic powder, 1/2tbsp Italian herbs, black pepper and salt.
Add 30g | 2tbsp dairy free parmesan or 2tbsp nutritional yeast and 4tbsp olive oil.
Mix all well together.
Drain cauliflower and set aside.
Add 100g | 1/2 cup chickpea flour (it’s gluten free) to another bowl. You can use any flour of your choice if you do not have chickpea flour handy.
Pinch of salt.
Pour some water.
Whisk the liquid into the flour until you have a smooth batter. The batter should not be too thick or too liquid.
Now dip each cauliflower floret into the batter and coat evenly.
Roll the cauliflower pieces in chickpea crumbs until coated thoroughly.
Transfer to a baking tray lined with parchment.
Repeat until all cauliflower pieces are coated.
Roast in the preheated oven 360F | 180C for 20 minutes.
Time to make delicious, creamy and tangy vegan tzatziki sauce.
Add 250g | 1cup coconut yogurt or any plant based plain yogurt of your choice to a large bowl.
Press 1 or 2 garlic cloves (to your taste).
Finely grate 1/2 cucumber with the skin.
Then set in a fine-mesh strainer and squeeze out excess the moisture.
Chop 1/4 cup fresh dill.
Add black pepper and salt.
Pour 1tbsp lemon juice.
1tbsp olive oil.
1/4tsp chilli flakes (optional).
Stir to combine.
Taste and adjust the flavour as needed. You can store home made sauce in the refrigerator for up to 5 days.
