Easy vegan dressings & sauces

Vegan Wellington Recipe
1 cup dry green lentils
2 cups veggie broth
1 onion, chopped
2 garlic cloves, chopped
1 apple, peeled and grated or chopped
2 carrots, chopped
2 stalks celery, chopped
1/3 cup dried, sweetened cranberries
1 tbsp thyme
1 tbsp rosemary
1 tsp poultry spice
1 cup walnuts, roasted
1 tbsp ground flax plus 3 tbsp water
1/4 cup rolled oats ground into flour
2 tbsp tomato paste
1 tsp miso paste
1 tbsp nutritional yeast
1/2 tsp salt

1 tbsp vegan butter
3 cups mushrooms
1 onion, chopped
salt and pepper

1 package of puff pastry
melted vegan butter (to use as a wash before cooking)

Directions:
Preheat oven to 400F. Roast walnuts for 5-7 minutes. Let cool.
Saute onions and garlic till soft, then add apple, carrots, celery, cranberries and spices. Saute together for 5-10 minutes. Remove from heat and add to a food processor. Add the walnuts, flax ‘egg’, oat flour, tomato paste, miso, nutritional yeast, and salt. Pulse together until week combined. Remove from food processor and let cool. Next, saute another onion until soft, remove from pan and put into a bowl. In the same pan, saute mushrooms until soft, and combine with onions. Season with salt and pepper and let cool completely. Roll out puff pasty and once the lentil walnut loaf and mushrooms are cool, place the mushrooms on top of the pastry and the loaf on top, fold over (see in video), and using soy milk, ‘glue’ any edges together. Brush melted butter on the top of the wellington before baking so it becomes golden brown. Bake for 45-50 minutes or until golden brown, remove from oven and let cool for bout 10 minutes before cutting. Cut gently so the pasty doesn’t collapse!

Christmas is a big occasion that deserves a big feast! We’ve got all you need to make the most delicious vegan Christmas dinner. Whether you’re vegan yourself, or looking for recipes and inspiration for what to cook your vegan friends and family, this is the video for you 🎄

Recipes:
Nut Roast –

For the nut roast:
• 1/2 a butternut squash
• 1 tbsp of oil
• 1/2 a large leek
• 2 garlic cloves
• pinch of salt and pepper
• 1 400g can of green lentils
• 25g dried porcini mushrooms
• 1 stock cube in 400ml water
• 1 tsp each of dried parsley, oregano, rosemary & thyme
• 150g mixed nuts
• 30g pistachios
• 85g dried cranberries
• 1 orange zested
• 1 tbsp each of soy sauce, maple syrup & nutritional yeast
• 1/2 tsp each of cinnamon & all spice
• flax egg (2 tbsp milled flax seed 4 tbsp water)
• 175g breadcrumbs
For the cranberry glaze:
• 160g fresh or frozen cranberries
• 3 tbsp caster sugar
• 2 tbsp water
For the caramelised pecans:
• 25g pecans
• 1/2 tbsp maple syrup
• 1 tbsp sugar

*Celeriac Mash* –
• 1 celeriac, cubed
• 2 cloves of garlic, finely chopped
• 3 springs of thyme
• 100ml vegan cream
• 100ml oat milk
• 25 vegan butter
• juice of 1/2 a lemon
• big pinch of salt & pepper to taste
• ground nutmeg

*Red Cabbage & Apple* –
• 25g vegan butter
• 1/2 a red cabbage (650g), shredded
• 250ml cider
• 2 tbsp maple syrup
• 2 tsp cinnamon
• 1 tsp all spice
• big pinch of salt & pepper to taste
• 1 apple, sliced

*Marmite & Bacon Sprouts* –
• 15g vegan butter
• 60g vegan bacon bits
• 200g sprouts
• 2 tbsp marmite

*Maple & Mustard Carrots and Parsnips* –
• 300g carrots, sliced lengthways
• 400g parsnips, sliced lengthways
• 2 tbsp olive oil
• 2 tbsp maple syrup
• 2 tbsp orange juice
• 1 tbsp mustard
• a few springs of fresh rosemary, chopped
• salt & pepper
