These high protein vegan meals are better than takeout—and I don’t say that lightly. In today’s video, I’m taking you through a full day of eating plant-based comfort food with bold, crave-worthy flavors that are easy to make at home.

For breakfast, I made baked mochi donuts with a dreamy vanilla glaze and paired them with a Japanese coffee jelly milk using my own Divine Roast Co. blend. Then we headed out to explore some local Asian restaurants for “research,” of course 😉. And for dinner? Crispy General Tao tofu and veggie fried rice that’ll make you forget delivery apps even exist.

12 oz penne pasta
2 cups fresh basil
¼ cup pine nuts
2 cloves pressed garlic
¼ cup olive oil
½ cup raw cashews soaked for 2 hours
½ cup water for cashew cream
½ cup sun-dried tomatoes chopped
¼ cup vegan parmesan cheese
½ tsp black pepper
¼ tsp red pepper flakes
2 tbsp white wine
Salt to taste
1 cup reserved pasta water
INSTRUCTIONS

Cook the Pasta – Boil the penne in salted water until al dente. Reserve pasta water, then drain and set aside.
Make the Vegan Pesto – In a food processor, blend fresh basil, pine nuts, pressed garlic, olive oil, and a pinch of salt until smooth.
Prepare the Cashew Cream – Blend soaked cashews with water until smooth to mimic heavy cream.
Sauté & Combine – In a large skillet over medium heat, warm olive oil and sauté sun-dried tomatoes. Stir in the vegan pesto, cashew cream, and a splash of pasta water to create a creamy consistency.
Toss the Pasta – Add the cooked penne and toss well until coated in the sauce.
Finish & Serve – Sprinkle with vegan parmesan cheese, black pepper, and fresh basil. Serve hot!

EASY Vegan Cheese Recipe ***ONLY 2 INGREDIENTS***

LEARN HOW TO MAKE VEGAN CHEESE WITH 2 INGREDIENTS!

LAY HO MA everyone! You’re in for the ultimate treat. Join me in this episode on how to make easy vegan cheese. In fact, you only need two ingredients. This vegan cheese is perfect for spreading on crackers, breads, and much more!

Ingredients:
2 1/2 cups of cashew milk
*if making cashew milk, blend 1/4 cup cashews with 2 cups water
2 tbsp lemon juice

Directions:
1. Heat up the cashew milk in a saucepan on medium heat. Do not boil.
2. Add the lemon juice, and gently incorporate
3. Turn off the heat, and let the mixture cool for 15-20min
4. Place a sieve onto a large mixing bowl and line the sieve with cheese cloth or a nut milk bag
5. Pour the mixture into the milk bag, and gently strain out some of the water
6. Fill a mason jar up with water, and place it on the bag to act as a weight
7. Place in fridge overnight
8. That’s it!!
