#1 Lemon Iced Coffee
~ ½ cup (125ml) cold black coffee OR 2 shots espresso
1/2 tsp lemon zest
ice cubes
barista non dairy milk to taste
if needed: 1 tsp of maple syrup
→ just add everything to a glass, enjoy!
→ serves 1
#2 Tortellini Plate
2 pak choi, chopped
1-2 handfuls cremini mushrooms
a little veg oil for the pan
1 splash white wine
1 tbsp soy sauce
1-2 tsp agave syrup
1 serving vegan tortellini
toppings:
vegan kimchi
vegan sour cream
lemon zest, to taste
squeeze of lemon juice
roasted sesame seeds
sprinkle of flaky sea salt
Instructions:
add oil to pan and bring it to medium
add the mushrooms and pak choi
sautée for ~ 7 min
add splash of white wine
cook for another 2 min
add soy sauce and agave
cook for another 2-3 min
add to plate
top with tortellini and toppings
→ serves 1
