Delicious and easy to make No-bake Chocolate Mousse Cake.
It’s vegan, gluten-free, and refined-sugar-free! The Mousse is super smooth and creamy.

Ingredients (6-7-inch)

CRUST
β€’ 1 cup raw hazelnuts
β€’ 7 pitted dates
β€’ 2 Tbsp melted coconut oil
β€’ 2 Tbsp cacao powder
β€’ Pinch sea salt
β€’ 2 Tbsp plant milk

MOUSSE
β€’ 300g silken tofu
β€’ 125g (vegan) dark chocolate (70%)
β€’ 2 Tbsp coconut cream (sub full-fat coconut milk)
β€’ 30ml maple syrup

INSTRUCTIONS
1. Line the bottom of a 6 or 7-inch cake pan with removable base with some parchment paper.
2. Add all ingredients for the crust to a food processor and process until evenly mixed. Press the mixture into the base of the cake pan, and smooth it out with a spatula. Set aside in the fridge.
3. Melt the chocolate over a double boiler.
4. Add all of the mousse ingredients to a blender and blend for a couple of minutes until smooth and creamy.
5. Transfer the filling into the cake pan. Place in the fridge to set for 3-4 hours (or overnight).
6. Once set, remove the cake from the pan.

Soft Vegan Burger Buns- Oil-free, Wheat-free, Gluten-free

Millet Burger Buns

Yeilds 6 buns

2 and 1/2 cups millet flour
2 tsp baking powder
ΒΎ tsp fine sea salt
1/2 tsp baking soda
2 tbsp ground flax
2 and 1/2 cups water
1 tbsp apple cider vinegar
1/3 cup whole psyllium husks
2 tbsp date syrup (optional)
Sesame seeds for topping

In a bowl combine the dry ingredients, except for the psyllium husks. In a separate bowl combine the wet ingredients and the psyllium husks. Let rest for 5 minutes until a gel like consistency is achieved.

Combine the wet and dry ingredients. Wet your hands and add 1/6 of the dough to each section of a bun pan.

Bake in a preheated oven at 325 F for 50 minutes. Remove and allow to cool before cutting.
