High Protein Vegan MEAL PREP | Quick, Easy & Soy Free
High Protein Vegan MEAL PREP | Quick, Easy & Soy Free
30 minute meal prep! This delicious meal is for my busy followers or those who love to batch cook! I created this meal prep so that it’s quick, can be easily followed, keeps well in the fridge or freezer and of course has lots of plant based protein!
Let me know if you want more meal prep videos in the comments down below and how I can improve them. I just want to provide the best and most helpful content for you.
Ingredients:
Curry:
1 onion, chopped
3 cloves of garlic, chopped
4 tbsp curry powder
1 large can (28 oz) diced tomatoes
2 cups water
1 can of coconut milk (full fat or light)
2 cups dried red lentils
1 can of chickpeas, drained and rinsed
1/2 cup frozen peas
1-2 tsp salt to taste
Quinoa
2 cups quinoa
3 1/2 cups vegetable broth (or water)
Sautéed Vegetables:
2 bell peppers, sliced
1 onion, sliced
2 cups broccoli (frozen or fresh)
1-2 tsp garlic powder
1-2 tsp onion powder
1 tsp cumin
Directions:
1. Sauté chopped onion and garlic together in a large saucepan for approx. 5 minutes.
2. Add curry powder and sauté for another 3-5 mins.
3. Add diced tomatoes, water, canned coconut, red lentils and chickpeas.
4. Bring to a boil and turn down to simmer and cook for about 20 mins.
5. Rinse quinoa (I like to use a whisk when doing this) and add to pot with 3 1/2 cups of vegetable broth (or water). Cover and cook for 12-15 mins. Remove from heat when done liquid is absorbed, cover and let sit for 5 minutes.
6. On medium heat, sauté sliced vegetables together in a separate saucepan with garlic, onion, and cumin powder for approx. 10 minutes or until soft. Remove from heat and let cool.
7. The curry is done when the red lentils are fully cooked. This should take about 20 minutes. Mix in frozen peas and salt and remove from heat. Let cool.
Allow everything to cool and lay out your meal prep containers*. To make 5 servings add about 1 cup of quinoa, 1 1/2 cups of curry and 1 cup of cooked veg to each container. Refrigerate or freeze and enjoy!
*Glass is best to use, but if you are using plastic, make sure to put the meal into a glass or ceramic bowl before reheating.

The end of summer is THE BEST time for us who love whole plant foods! Hang out with us today while I take full advantage of all the ripe foods and make some incredible vegan meals. We also hit the gym, go paddle boarding and finish the day having a sunset picnic with my mom!

Mushroom Latte:
1 heaping tsp reishi mushroom
1 heaping tsp lions mane mushroom
1/2 tsp cinnamon
1/4 tsp nutmeg
1 tbsp maple syrup
3/4 cup milk ( frothed )
Big Pan of Oven Baked Stuff:
1 small cooking onion
2 small / medium red skin potatoes
2 ribs of celery
1 large carrot
handful of white or cremini mushroom
4 cloves garlic
2 stacks kale
1/2 block extra firm tofu
1/3 cup chopped cilantro
1/4 cup chopped parsley
1/2 cup chopped basil
2-3 tbsp olive oil
2 tsp salt
1/2 tbsp black pepper
chilli flakes to taste
1 tsp dried oregano
1/2 tsp thyme
3 tbsp pumpkin seed ( **I recommend 1/3 cup chopped walnuts!!**)
1/2 cup dried basmati rice
1 1/4 cup water
– Preheat oven to 400F
– chop everything as shown, through everything into a oven safe large pan ( one with a lid preferably ) bake for 35-40 minutes
– serve with lemon juice!

Maple Roasted Pears
Serves 2
2 large pears
1 tbsp melted refined coconut oil
1 tbsp maple syrup
1/8 tsp salt
1/8 tsp pepper
2-3 tbsp cashew herb cheese
4 sprigs thyme or 4 sage leaves
1/4 cup chopped pecans
Maple glaze:
1 tbsp maple syrup
1 tsp fresh lemon juice
Preheat the oven to 375. Slice the pears in half and scoop out the core. Mix the coconut oil and maple together and drizzle over the pears.
Sprinkle with salt and pepper and place the herbs on top of each pear. Bake for 10-12 minutes. Remove from the oven and discard the herbs. Then place cashew cheese in the center of each pear and sprinkle with pecans. Bake for 1 more minute.
Mix the maple and lemon juice together and drizzle over the pears. Serve warm or at room temperature and enjoy!

YOU NEED THESE IN YOUR LIFE! These vegan friendly frittata’s are made from chickpea flour and they will blow your mind. Perfect for meal prep, eating on the go or having with breakfast.
They are so easy and since they are made from chickpea flour a great source of protein and iron!

Vegan Frittata Recipe:
1.5 Cups chickpea Flour
1.5 Cups water
1 tsp salt
1 tsp onion powder
1/2 tsp black pepper
1/2 cup mixed frozen veg (peas, corn, carrot)
1 full green onion, chopped
1/2 green pepper, chopped
1/2 cup olives, pitted and chopped
1 handful of cilantro, chopped (optional but try it!)
1 handful of parsley, chopped
Directions
1. preheat oven to 400F
2. In a medium size bowl whisk together chickpea flour, water, salt, onion powder, and black pepper
3. add the rest of ingredients and stir well
4. in a silicon muffin tray, add enough mixture to fill up to the top (if using a metal muffin tray make sure to use liners or grease the pan so they don’t stick!)
5. bake for 35 mins, remove from oven and let cool before eating.
Enjoy!
