ℹ️ With the ingredients listed in the recipe you get about 8 delicious patties.

???? Ingredients:
200g | 1 cup red split lentils
500ml | 2 cups water
150g | 2 cups broccoli
1 onion
1 garlic clove
1 carrot
50g | 1 3/4 cups spinach
1tsp Korean chilli flakes
1tsp ground coriander
1tsp smoked paprika
salt and ground black pepper to taste
5tbsp corn meal
chickpea crumbs or breadcrumbs
a little oil for frying

????‍????Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
❗ For the patties to hold together place patties mixture in to the fridge for 15-30 minutes. It works miracles and you do not need a binder ????

???? Method:
Rinse 200g | 1 cup red split lentils with water.
Pour 500ml | 2 cups water.
Simmer lentils until water absorbed.
Disassemble 150g | 2 cups broccoli into inflorescences.
Pour boiling water. Cover and set aside for 5 minutes.
Chop 1 onion.
Sauté until translucent for about 3 minutes.
Chop 1 garlic glove.
Peel and grate 1 carrot.
Season with salt.
Place cooked red lentils in a mixing bowl.
Add cooked vegetables mixture.
Grate broccoli florets.
Finely chop 50g | 1 3/4 cups spinach.
ℹ️ You can use any greens of your choice like parsley, cilantro, dill etc.
Season with 1tsp Korean chilli flakes, 1tsp ground coriander, 1tsp smoked paprika,
salt and black pepper to taste.
Add 5tbsp or more corn meal.
Mix until combine and transfer to the fridge for 15 minutes [it helps patties to hold together].
Shape into patties, about 1/2 inch thick.
Coat with chickpea crumbs or breadcrumbs.
Heat a little olive oil in a non stick skillet.
Fry veg patties for about 5-7 minutes on each side or until golden and crispy.
Top with tahini dressing or your favourite sauce and enjoy! ????

190g | 1 cup red split lentils
1 onion
160g butternut squash
2 garlic cloves
1tsp ground coriander
1tsp paprika
salt and black pepper to taste
a little oil for frying

???? Dip sauce ingredients:
200g cauliflower
90ml | 1/4 cup coconut milk or any dairy-free milk you prefer
1tbsp nutritional yeast
salt and black pepper to taste

????‍????Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
❗Soak lentils for 3-8 hours [soaking helps it’s digestion and reduces cooking time]
❗ For the patties to hold together place patties mixture to the fridge for 20-60 minutes. It works miracles and you do not need a binder ????

❗With the ingredients listed in the recipe you get about 8 patties.

???? Method:
Rinse 190g | 1 cup red split lentils with water.
Soak in room temperature water for 3 hours.
Disassemble 200g | 4pcs cauliflower.
Bring a small pot of water to a boil.
Transfer cauliflower florets into a pot.
Simmer cauliflower until soft for about 3 minutes.
Let cauliflower cool and transfer to the blender.
Pour 90ml | 1/4 cup coconut milk or any dairy-free milk of your choice.
Add 1tbsp nutritional yeast.
Season with salt and black pepper to taste.
Blend until smooth and creamy.
Transfer to the fridge for 15 minutes.
Place soaked and drained lentils in to a bowl.
Mash with a hand blender.
Chop 1 onion.
Grate 160g butternut squash.
Chop 2 garlic cloves.
Add chopped onion, butternut squash and garlic to the bowl.
Season with 1tsp ground coriander, 1tsp paprika, salt and black pepper to taste.
Mix until combine and transfer to the fridge for 20 minutes [it helps patties to hold together].
Shape into patties.
Heat a little olive oil in a non stick skillet.
Fry lentil patties under the lid for about 5 minutes on each side or until golden and crispy.
Enjoy!

???? Ingredients :
100g | 1/2 cup rice
800g | 2lb cabbage (one medium size cabbage)
1 onion
1/2tbsp paprika
1/2tbsp mushroom powder
60g | 1/2 cup fine corn meal
salt
black pepper
parsley

????‍????Cooking tip:
❗You can substitute mushroom powder for garlic powder, onion powder, nutritional yeast or thyme

❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.

????Method:
Rinse and cook 100g | 1/2 cup rice according to the instructions on packaging.
Grate 800g | 2lb cabbage (one medium size cabbage)
Add some salt and set aside for 10 minutes.
Meanwhile chop 1 onion.
Transfer onion into a greased frying pan and sauté until translucent.
Squeeze grated cabbage to remove excess water.
Add cooked rice, fried onion, 1/2tbsp paprika and 1/2tbsp mushroom powder.
You can substitute mushroom powder for garlic powder, onion powder, nutritional yeast or thyme.
Add 60g | 1/2 cup fine corn meal, salt and black pepper to taste.
Chop parsley and add to the patties batter.
Stir to combine.
Roll the mixture into balls and gently squeeze down to flatten into patties.
Place the patties into a greased frying pan.
Fry on a medium heat covered with a lid for about 5-7 minutes or until the bottom is golden brown.
Flip to the other side and fry another 5-7 minutes.
Enjoy delicious veg patties with cabbage! ????

Ingredients:
1 large eggplant | 550g |19oz
2 green onions
1 garlic clove
1cup | 3.5oz | 100g vegan cheddar cheese
2 tbsp parsley
1 tsp salt
¼ tsp black pepper
1 cup | 3.4oz | 96g breadcrumbs or chickpeas crumbs
Oil for frying

Method:
Peel and cut 1 large eggplant ???? or 2 medium eggplants | 550g | 19 oz
Cut 2 green onions and 1 garlic clove ????
Heat oil in a large skillet over medium-high heat. Add onion and sauté until translucent.
Add garlic and sauté until fragrant.
Add eggplant cubes and sauté until browned and soft for about 10-12 minutes.
Then transfer to a large bowl and mash.
Grate 100g | 3.5oz vegan cheddar cheese ????
Chop 2 tbsp of parsley.
Add 1 cup | 3.4oz | 96g breadcrumbs or chickpeas crumbs. I prefer chickpea crumbs.
Salt and pepper to taste.
Mix well
Transfer the mixture to the fridge for 20-30 minutes to allow the breadcrumbs or chickpeas crumbs to suck up some of the moisture.
Form the patties with your hands.
Fry patties for about 4 minutes on each side until golden brown and enjoy!
