INGREDIENTS + NOTES

#1 DIY Instant Noodle Soup 0:26

for the crispy tofu:

200g (7oz) firm plain tofu
1 tbsp vegetable oil for the pan
1 tbsp cornstarch (or flour)
generous pinch of salt
optional: other spices of choice: turmeric, pepper, paprika, onion powder (a dash of each)

for the soup:

500ml hot water (2 cups), more if needed
1 vegetable stock cube
1 tbsp soy sauce
1 tbsp balsamic vinegar
1 tsp sugar
1-2 cloves garlic, minced
1 spring onion, divided in white and green part
4 small sheets of flavored seaweed (OR 1 regular nori sheet, ripped to bits)
1 tsp sesame oil
optional: dash of chili flakes
1 block of ramen/mie noodles (for 1 serving)
1 handful frozen edamame
1 handful baby spinach
1/2 tsp to 1 tsp miso paste

→ serves 1

#2 Korean BBQ Style Tofu Bowl 2:57

200g (7oz) firm plain tofu
1 tbsp cornstarch (or flour)

for the marinade:
1 tsp gochujang (or more to taste)
1 tbsp sugar
1 tbsp soy sauce
1 tbsp balsamic vinegar
1 tsp sesame oil
pinch of salt
1 tbsp water
optional: pepper, paprika, onion powder (a dash of each)

Also:
lil bit of oil for the pan
1-2 servings cooked rice
1-2 servings steamed broccoli
sesame seeds for serving

optional:
vg chili mayo for serving
OR → try this quick additional dressing:
1 tbsp soy sauce
1 tsp sesame oil
2 tsp agave
2 tsp balsamic vinegar

#3 Cozy Leek & Potato Soup 4:54

2 leeks
250g-300g potatoes, peeled (8.8oz – 10.5oz OR 3 medium potatoes)
1 tbsp olive oil
1 handful cashews
1 dash chili flakes
2 cloves garlic, whole, peeled
1 tbsp balsamic vinegar
1 tbsp sugar
1 vegetable stock cube
625ml (2 ½ cups) water, more if needed
salt, pepper to taste
optional: 1 tsp sesame oil
optional: fresh cilantro, parsley for serving

for the crispy chickpeas:
1 can chickpeas (400g = 14oz)
1 tbsp vegan butter
1 tbsp soy sauce
1 tsp sugar

→ serves 2

#4 Protein Pasta 7:15

1-2 servings pasta of choice (i like half lentil half regular)

for the sauce:
1 – 1 ½ cups premade tomato sauce (225g – 350g)
200g silken tofu (7oz)
1 heaping tbsp hummus or vg cream cheese
optional: 1-2 handfuls vg pizza cheese
optional: 2-3 handfuls baby spinach

→ serves 1-2

#5 Homemade Kimbap 8:35

1 cup (200g) short grain rice, dry
1 ¾ cup (430ml)
generous pinch of salt
1 tsp sesame oil
→ yields enough rice for 3 rolls

HOW TO COOK RICE:

wash the rice and add to pot w water, salt, sesame oil
bring pot up to a quick boil
reduce heat to medium low
once the water has calmed down a bit, put on lid half way
allow to simmer/steam for 15 min
take off the heat
let cool completely, with lid on fully

3 sheets seaweed
fillings of choice:
cucumber, korean radish, carrot, tofu, garlic spinach, vg cream cheese (1 tbsp per kimbap roll) …

serve with soy sauce, chili sauce, etc

✨INGREDIENTS & NOTES ✨

Note that I did not count salt, water and oil! Also there are a few optional add-ins listed!

#1 Whipped Hummus & Pepper Pasta 0:00

180g pasta of choice (6.3oz)
3 cloves garlic
1 ½ tbsp olive oil
2 medium sized roasted bell peppers from jar
200 – 250g plain hummus (7oz – 8.8oz)
1 tbsp soy sauce
¼ – ⅓ cup pasta water (60ml – 80ml)

also generous pinch of salt for pasta water
also optionally vegan parmesan or other topping of choice

→ serves 2

#2 Lazy Cozy Tomato Soup 2:15

200g (7oz) firm tofu
1 tbsp cornstarch
pinch of salt added to tofu and starch (did not mention in video)
about 1 tbsp veg oil for pan
5-6 tbsp of your favorite store bought tomato sauce
½ cup (125ml) water, more if needed
½ can (120g or ¾ cup) chickpeas, rinsed and drained
2 handfuls fresh baby spinach
optional: bread

#3 Red Bean Overnight Oats 3:41

2 tbsp sweetened red bean paste *
½ cup small cut oats (50g)
pinch of salt
1 tbsp ground flax seeds
½ cup thick vegan yogurt (120g)
⅓ cup water (80ml)
a handful of raspberries, or other fruit (cut into chunks if needed)

*if you don’t want to do the layers you can also just spoon the paste on top of the oats as a topping 🙂

#4 Spinach & Kimchi Kimbap Sandwiches 5:22

⅔ cup (120g) short rice, uncooked
generous pinch of salt for rice water
about 1 cup (250ml) water for the rice

2 big handfuls of fresh spinach
1 tbsp olive oil
optional: 2 cloves garlic
splash of water to help the spinach wilt down
pinch of salt for the spinach
2-3 tbsp vegan kimchi
optional: 1-2 tbsp vegan cheese (that’s able to melt)
2 sheets of roasted seaweed

#5 Avocado Bean Toasts 8:15

3 pieces of bread, toasted
½ can (120g or ⅔ cup) white beans, mashed
1 tbsp vegan cream cheese
pinch of salt
½ avocado
pickled onions

for the pickled onions:
2-3 red onions, cut into thin slices
1 tsp salt
1 tbsp rice syrup or sugar
½ cup (125ml) vinegar of choice
½ cup (125ml) hot water

INGREDIENTS & NOTES:

#1 One Pot Pumpkin Gnocchi

350g-400g hokkaido pumpkin (½ smaller pumpkin or 12.3oz – 14.1 oz)
1 tbsp veg oil
1 onion
a pinch of red pepper flakes
⅔ zucchini
2-3 cloves garlic
2 cups veggie broth
400g vegan gnocchi (14.1oz)
1 heaping tbsp hummus
2 cups veggie broth (500ml)
lots of spices: couple dashes each: cumin, sweet paprika, smoked paprika, pepper, dried herbs … whatever else you want to add
juice of 1 lemon
a few tbsp frozen or fresh parsley, chopped
optional: 2 tsp miso paste taste really good here as well
sprinkle of sesame seeds for serving

→ 2-3 servings

#2 One Pot Korean Inspired Veggie Stew

210g long grain rice (1 cup)*

⅓ zucchini
150g pumpkin or carrot or (sweet) potato (5.3oz)
200g mushrooms (70z)
2-3 spring onions
2-3 cloves garlic
1 tbsp oil
2 cups veggie broth (500ml)
3 tbsp vegan kimchi
1-2 sheets of roasted seaweed
80 g semi firm tofu
1 heaping tbsp vegan fermented soybean paste (miso paste also works)
1 tsp gochujang or to taste!
1 tbsp rice vinegar
1-2 tsp agave syrup
salt and spices of choice to taste
sprinkle of sesame seeds
→ serves 3

*how I cooked the rice:

Add 1 cup of rice (210g) + 2 cups water (500ml) to a medium sized pot. Place a ventilated lid on top. Bring it up to a boil. Then reduce the heat to medium low, letting it simmer for 15-20 minutes. The water should be all evaporated by then. Take the pot off the heat. The rice can steam through for another 5 minutes or so, keeping the lid on.

#3 Cauliflower Pasta Bake

1 head of cauliflower, small to medium sized ~ 500g, cut into florets
2 1⁄2 cups veggie broth (625ml)
1 onion, chopped
2 cloves garlic, minced
1 tbsp olive oil
1 tbsp tomato purée
1 tsp agave
1⁄4 cup water (60ml)
1 cup non dairy milk (250ml)
2 1⁄2 tbsp nutritional yeast
juice of 1⁄2 lemon
1 ¼ tsp salt
300-350 g small cut pasta of choice (10,58oz-12.3oz)
1⁄4 cup bread crumbs (25g)

→ serves 4

#3.5 Quick Pickled Red Onions

4 red onions, cut into rings
3 tsp maple, agave syrup or sugar
1 ¼ tsp salt
¼ cup apple cider vinegar (60ml)
½ cup white wine vinegar (125ml)
1 cup hot or room temp water (250ml)
→ use a heat proof glass jar that’s able to hold more than 2 cups of water (over 500ml)

#4 Crispy Potato Bowl w Tofu Tahini Dip

220g potatoes
2-3 cloves garlic
1 tbsp oil

for the sauce:
150g semi firm tofu* (5.3oz)
juice of ½ lemon
1 tbsp white tahini
optional: 1 tbsp nutritional yeast
1 tsp agave syrup
salt, spices to taste
for serving:
lamb’s lettuce
a few tbsp pickled onions

→ serves 2
