2 cups cherry tomatoes
1 can chickpeas, drained and rinsed
4 cloves garlic, minced
2 tbsp olive oil
8 oz pasta of your choice
Fresh basil leaves

🔹 3 cups low sodium vegetable broth
🔹 1 cup chopped parsley leaves (from about 1 bunch parsley)
🔹 3 green onions, trimmed and sliced
🔹 1- inch piece fresh ginger, peeled and finely grated
🔹 1 large lemon, zested and juiced
GARLIC PARMESAN WHITE BEANS
🔹 3 to 4 garlic cloves, minced
🔹 Extra virgin olive oil
🔹 2 15-ounce cans cannellini beans, drained
🔹 1 cup cherry tomatoes, halved
🔹 Kosher salt and black pepper
🔹 1 teaspoon Aleppo pepper
🔹 ½ teaspoon cumin
🔹 1 cup chopped fresh parsley
🔹 ¼ to 1/3 cup shaved Parmesan cheese
🔹 1/4 cup grated Pecorino Romano
🔹 Juice of half a lemon
FALAFEL
🔹 2 cups dried chickpeas (Do NOT use canned or cooked chickpeas)
🔹 1/2 tsp baking soda
🔹 1 cup fresh parsley leaves, stems removed
🔹 3/4 cup fresh cilantro leaves, stems removed
🔹 1/2 cup fresh dill, stems removed
🔹 1 small onion, quartered
🔹 7–8 garlic cloves, peeled
🔹 Salt to taste
🔹 1 tbsp ground black pepper
🔹 1 tbsp ground cumin
🔹 1 tbsp ground coriander
🔹 1 tsp cayenne pepper, optional
🔹 1 tsp baking powder
🔹 2 tbsp toasted sesame seeds
🔹 Oil for frying
SHEET PAN GNOCCHI
🔹 16 ounces gnocchi, store bought or homemade
🔹 1 red bell pepper, chopped
🔹 1 yellow bell pepper, chopped
🔹 1 red onion, chopped
🔹 1 pint cherry tomatoes
🔹 6 garlic cloves, minced
🔹 1/4 cup olive oil
🔹 1 1/2 teaspoons dried oregano
🔹 1 1/2 teaspoons dried basil
🔹 1 teaspoon kosher salt
🔹 1/2 teaspoon dried thyme
🔹 1/4 teaspoon red pepper flakes
🔹Freshly ground black pepper
🔹 3 to 4 handfuls baby spinach

For the Dijon Dressing

🔹 Black pepper
🔹 1/4 cup Extra virgin olive oil
For the Salad
🔹 2 (15-ounce) cans chickpeas, drained and rinsed
🔹 1 large English cucumber, chopped
🔹 2 cups grape tomatoes, halved
🔹 2 roasted red peppers, seeded and chopped (or a 16-ounce jar roasted peppers in oil)
🔹 1 small red onion or 2 shallots, finely chopped
🔹 1 cup chopped parsley leaves
🔹 1/2 cup chopped mint leaves
🔹 1 avocado, pitted and roughly chopped
