MONDAY – CREAMY SPINACH, PEA & BASIL PASTA

GRATEABLE CASHEW PARMESAN:
1 cup raw cashew nuts: https://amzn.to/45ILL8T*
2 tbsp nutritional yeast: https://amzn.to/3oM7yMd*
1 tbsp lemon juice
1/2 tsp white wine vinegar
1/4 tsp garlic powder
1/4 tsp sea salt

Blend all of the ingredients together in a food processor until a ball forms. Shape into a ball or wedge and leave to set in the fridge overnight. Alternatively, place in the freezer an hour before using – grate or peel over food and store in the fridge for up to 5 days or longer if kept frozen.

THURSDAY – TERIYAKI TOFU MEATBALLS

TERIYAKI SAUCE:

6cm chunk ginger, minced
1 tsp garlic powder
1 tsp cornflour (mixed with 3 tsp water to make a slurry)
1/2 cup water

Add all of the ingredients to the pan, except the cornflour slurry and water. Mix well and cook continuously on a medium heat. After a couple of minutes, pour in the cornflour slurry and water, then increase the heat, stirring continuously, until the sauce thickens, being careful that it doesn’t catch.

Cashew Mushroom Curry Noodles

You got to satisfy your cravings for something spicy and savory with this straight-fire vegan cashew curry mushroom noodles dish. Made with mushrooms and creamy cashews, it’s a perfect meal for any day or night.

The recipe below ???? ⬇️

1 -2 tbsp avocado oil
1 cup of chopped yellow onion
1 Tbsp minced garlic
1 tbsp chopped ginger
1 tbsp 1 tsp curry powder
2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp ground turmeric
2 cups vegetable broth or water and bouillon cubes
1 can of diced fire-roasted tomatoes
1/2 cup of cashew cream (Blending soaked cashews with little water)
2 cups sliced mushrooms
1 cup finely chopped red bell peppers
1 cup finely chopped yellow bell pepper
8 oz noodles
1 tbsp chili oil
Salt and pepper to taste

Garnish with fresh cilantro

Directions:
Sautee onion the onion for 3-5 until softened in avocado oil.
Next, add garlic, ginger, curry powder, cumin, coriander, turmeric, salt, and pepper, and cook for 2 -3 minutes. Do not overcook.
Mix in vegetable broth, Fire roasted tomatoes, cashew cream, and boil.
Lower heat and simmer for 5-6 minutes
Blend the sauce for a smooth consistency and add it to the pan.
Add the mushrooms, orange bell peppers, red bell peppers, and carrots. Simmer for another 10-15 minutes or until the vegetables are fully cooked.
Add cooked noodles to the plate and drizzle with this fire curry!
