LENTIL RECIPE INGREDIENTS: (4 to 5 servings approx.)

๐Ÿ‘‰ TO COOK THE RED LENTILS:
1+1/2 Cup / 290g Red Lentils
5 cups / 1183ml Cup water
1+1/4 Teaspoon Turmeric
1+1/4 Teaspoon salt (I have added sea salt)

๐Ÿ‘‰ LENTIL PASTA INGREDIENTS:
3 Tablespoon Cooking Oil (I have used light olive oil)
1/2 Teaspoon Whole Cumin Seeds
2 Cups / 275g Onion – chopped
2 Tablespoon / 25g Garlic – finely chopped
1/4 to 1/2 Teaspoon Chilli Flakes or to taste (you can use 1 to 2 whole dried Indian red chilies if you prefer)
2+1/2 Teaspoon Ground Coriander
1/8 Teaspoon Asafoetida (hing)
1/4 to 1/2 Teaspoon Cayenne Pepper (Optional)
1/2 cup / 125ml Tomato Puree / Passata
2 Cups / 330g Tomatoes – 3 medium size tomatoes – chopped
Salt to taste (I have added total 1+1/4 teaspoon sea salt)
3 cups / 700ml Water
250g Lasagna sheet OR Pasta of choice
2+1/2 cups / 350g Zucchini (cut in 1/2 inch thick semi circles)

1/2 cup / 30g Cilantro (Coriander leaves) – chopped
3/4 cup / 50g Green Onions – chopped
Freshly ground black pepper to taste (I have added 1/2 Teaspoon of Black Pepper)
Drizzle of Olive Oil (I have added 1/2 to 1 tbsp of organic cold pressed olive oil)

โ–ถ๏ธ METHOD:

Thoroughly rinse the red lentil (a few times), until the water runs clear and then soak for 1 hour. Drain the water from the soaked lentils and transfer it to a small pot. Add turmeric, salt and water. Cover and bring to a boil. Once it starts to boil, give it a mix. Reduce the heat to medium-low, cover and cook for about 30 minutes or until the lentils are cooked. Once cooked turn off the stove, cover the lid and set aside for later.

โœ… ๐Ÿ‘‰ PLEASE NOTE: The cooking time depends on the quality of the lentils. Sometimes one batch of red lentils can be drier than the others and may need more cooking time. SO ADJUST THE COOKING TIME ACCORDINGLY. It took me 30 minutes on my stove.

To a heated pot add cooking oil. Once the oil is heated, reduce the heat to low (this will prevent the cumin from burning) and add the cumin seeds. When the seeds starts to splutter, add the onion, 1/4 teaspoon salt and increase the heat back to medium. Fry on medium heat until the onion are golden brown. ๐Ÿ‘‰ ADDING SALT TO ONIONS WILL RELEASE IT’S MOISTURE AND HELP IT COOK FASTER SO PLEASE DONโ€™T SKIP IT.
Add the garlic, chili flakes and fry for about 2 minutes or until fragrant. Reduce the heat to low and then add dry spices (ground coriander, asafoetida and cayenne) and fry for about 30 seconds or so on low heat. Add the Tomato puree, fresh chopped tomatoes and salt to taste. Now increase the heat to medium-high. Mix well and fry the tomatoes until they disintegrate and forms a thick paste and the oil starts separating. Once the tomatoes are nicely fried, add the cooked red lentils and water. Mix thoroughly. Cover the lid of the pot and bring to a boil. Once it starts to boil, add the pasta, chopped zucchini and mix well. Cover the lid again and cook the pasta on medium-low heat for 6 to 8 minutes. MAKE SURE TO STIR IN-BETWEEN TO PREVENT THE PASTA FROM STICKING TO THE BOTTOM OF THE PAN. Uncover and cook for another 1 minute or so. Turn off the stove.

โœ… ๐Ÿ‘‰ UNDER-COOK THE PASTA by 3 to 4 minute, as it will continue to cook in the hot liquid even after the stove it turned off.

โœ… ๐Ÿ‘‰ Note: If the lentil dish is too thick for your liking, you can thin it out with boiling water. DO NOT add cold water to it, otherwise it will ruin the taste.

Add chopped cilantro, green onions, freshly ground black pepper, drizzle of olive oil and mix well. Serve hot with a side salad.

๐Ÿ‘‰ To re-heat the lentil pasta, add some boiling water to it and heat it in the microwave or stove

12 oz penne pasta
2 cups fresh basil
ยผ cup pine nuts
2 cloves pressed garlic
ยผ cup olive oil
ยฝ cup raw cashews soaked for 2 hours
ยฝ cup water for cashew cream
ยฝ cup sun-dried tomatoes chopped
ยผ cup vegan parmesan cheese
ยฝ tsp black pepper
ยผ tsp red pepper flakes
2 tbsp white wine
Salt to taste
1 cup reserved pasta water
INSTRUCTIONS

Cook the Pasta โ€“ Boil the penne in salted water until al dente. Reserve pasta water, then drain and set aside.
Make the Vegan Pesto โ€“ In a food processor, blend fresh basil, pine nuts, pressed garlic, olive oil, and a pinch of salt until smooth.
Prepare the Cashew Cream โ€“ Blend soaked cashews with water until smooth to mimic heavy cream.
Sautรฉ & Combine โ€“ In a large skillet over medium heat, warm olive oil and sautรฉ sun-dried tomatoes. Stir in the vegan pesto, cashew cream, and a splash of pasta water to create a creamy consistency.
Toss the Pasta โ€“ Add the cooked penne and toss well until coated in the sauce.
Finish & Serve โ€“ Sprinkle with vegan parmesan cheese, black pepper, and fresh basil. Serve hot!

โ–ถ๏ธ CHICKPEA PASTA SALAD INGREDIENTS: (3 servings)

๐Ÿ‘‰ To cook pasta:
140g / 1 cup approx. Dry Ditalini Pasta
4 to 5 cups Water
Generous amount of salt (I have added 1 teaspoon of pink Himalayan salt which is milder than the regular salt)

2 cups / 1 can COOKED Chickpeas (Low Sodium)
100g / 3/4 cup approx. Celery – finely chopped
70g / 1/2 cup approx. / Red Onion – chopped
30g / 1/2 cup approx. / Green Onion – chopped
Salt to taste

๐Ÿ‘‰ SALAD DRESSING: (ADJUST THE VINEGAR, MAPLE SYRUP AND GARLIC TO YOUR TASTE)
60g / 1 cup (firmly packed) Fresh Parsley – throughly washed
2 Garlic Cloves / 7g approx. or to taste – chopped
2 Teaspoon Dried Oregano
3 Tablespoon White Vinegar or White Wine Vinegar – or to taste
1 Tablespoon Maple Syrup or to taste
4 Tablespoon Olive Oil (I have added organic cold pressed olive oil)
1/2 Teaspoon Freshly Ground Black Pepper or to taste
Salt to taste
1/4 Teaspoon Cayenne Pepper (Optional)

โ–ถ๏ธ METHOD:

Drain 2 cups of home cooked chickpeas or 1 can of cooked chickpeas and ALLOW IT TO SIT IN THE STRAINER UNTIL ALL THE EXCESS WATER IS DRAINED.

Generously salt a pot of boiling water and add the dry ditalini pasta. Cook the pasta as per the package instructions. Once cooked drain the pasta and rise with cold water. THEN ALLOW THE COOKED PASTA TO SIT IN THE STRAINER UNTIL ALL THE EXCESS WATER IS DRAINED, otherwise the dressing will not stick to it.

To make the Salad dressing:
Add the parsley. garlic cloves, dried oregano, white vinegar, maple syrup, olive oil, salt, black pepper, and cayenne pepper. Processing until
the mixture is
well blended
but still has
some texture to it. (just the same consistency as pesto). Set aside for later.
โœ… ๐Ÿ‘‰ ADJUST THE GARLIC, VINEGAR AND MAPLE SYRUP TO YOUR TASTE.

To assemble the pasta salad: To a large bowl add the cooked pasta, cooked chickpeas, salad dressing, chopped celery, red onion, green onion and mix well until each pasta is nicely coated with the dressing. Serve the pasta salad with your favourite side. This pasta salad is really good for meal/ prep because it stores well in the refrigerator for 3 to 4 days in an air tight container.

โ–ถ๏ธ IMPORTANT TIPS:

๐Ÿ‘‰ After draining the liquid from the cooked chickpeas. ALLOW IT SIT IN THE STRAINER UNTIL ALL THE EXCESS WATER IS DRAINED

๐Ÿ‘‰ After draining the cooked pasta, rinse it with cold water. THEN ALLOW THE COOKED PASTA TO SIT IN THE STRAINER UNTIL ALL THE EXCESS WATER IS DRAINED, otherwise the dressing will not stick to it

๐Ÿ‘‰ Add the salad dressing little at a time and not all at once and taste as you go, until it reaches the desired taste

๐Ÿ‘‰ The chickpea pasta salad recipes is perfect for meal prep / meal planning, as it stores in the refrigerator for 3 to 4 days (if stored well in an airtight container)

Parchment paper – to warp the garlic cloves
Aluminium foil

200g / 1+1/2 cup approx. / 1 large Red Bell Pepper – Cut into 1 Inch cubes
250g / 2 cups approx. / 1 medium Zucchini – cut in 1 Inch thick pieces
285g / 2+1/2 cups approx. / medium Red Onion – cut in 1/2 Inches thick pieces
225g / 3 cups Cremini Mushrooms – cut in 1/2 Inches thick pieces
300g Cherry or Grape Tomatoes / 2 cups approx. but may vary depending on the size
Salt to taste (I have added 1 teaspoon of pink Himalayan Salt which is milder than the regular salt)
3 Tbsp Olive Oil
1 Teaspoon Dried Oregano
2 Teaspoons Paprika (NOT SMOKED)
1/4 Tsp Cayenne Pepper (Optional)
1 Whole Garlic / 45 to 50g – peeled
1/2 cup / 125ml Passata or Tomato Puree
Freshly Ground Black Pepper to taste (I have added 1/2 teaspoon)
Drizzle of Olive Oil (OPTIONAL) – I have added 1 Tablespoon of organic cold pressed olive oil
1 cup / 30 to 35g Fresh Basil

???? To Cook Pasta:
Penne Pasta (or any pasta of your choice) – 200g / 2 cups approx.
8 Cups Water
2 Teaspoon Salt (I have added pink Himalayan salt which is milder than the regular table salt)

โ–ถ๏ธ METHOD:

PRE-HEAT THE OVEN TO 400 F.

Add the chopped red bell pepper, zucchini, mushrooms, sliced red onion, cherry/grape tomatoes to a 9 x 13 inches baking dish. Add dried oregano, paprika, cayenne pepper, olive oil, salt and mix well. Pack the peeled garlic cloves in parchment paper and then wrap in aluminum foil. Transfer the baking dish and the garlic packet into the oven and roast in a pre-heated 400F oven for 50 to 55 minutes or until the vegetables are nicely roasted.

โœ… ???? EVERY OVEN IS DIFFERENT SO ADJUST THE BAKING TIME ACCORDINGLY

Generously salt a pot of boiling water and add the penne pasta. Cook the pasta as per the package instructions.

โœ… ???? TRY TO ARRANGE THE COOKING OF THE PASTA CLOSE TO THE END OF THE BAKING TIME OF THE VEGETABLES SO THAT WHEN THE ROASTED VEGETABLES ARE OUT FROM THE OVEN THE PASTA IS COOKED AROUND THE SAME TIME.

Remove the roasted vegetables and garlic from the oven. Remove the roasted garlic from the pack and add it to the roasted vegetables along with passata / tomato puree. Drain the cooked pasta and add it to the vegetables in the baking dish, along with crushed black pepper, drizzle of olive oil and fresh basil leaves. Mix well and serve hot.

โ–ถ๏ธ IMPORTANT TIPS:

???? Every oven is different so adjust the baking time accordingly

???? For the best outcome – arrange the cooking of the pasta close to the end of the baking time of the vegetables so that when the roasted vegetables are out from the oven the pasta is cooked around that time

???? The garnish is what completes the dish so please try not to skip any of the ingredients

Zucchini Tomato Pasta Recipe | Easy Vegetarian and Vegan Recipes | Italian Tomato Pasta

โ–ถ๏ธ RECIPE INGREDIENTS:

???? To Cook Pasta:
250g / 2+1/2 cups approx. Penne Pasta (OR ANY TYPE OF PASTA OF YOUR CHOICE)
8 Cups Water
2 Teaspoon Salt (I have added pink Himalayan salt)

???? Other Ingredients:
3 Tablespoon Olive Oil
130g / 1+1/4 cup approx. Onion – Thinly Sliced
1 Tablespoon Garlic – finely chopped (3 to 4 garlic cloves approximately)
1/4 to 1/2 Teaspoon Chili Flakes or to taste
2+1/2 Tablespoon Tomato Paste
(If you like your pasta more zesty, you can always increase the quantity of the tomato paste)

350g / 3 Cups approx. Zucchini – Cut in 1/2 inch semi circle pieces
3/4 Cup Pasta Cooking Water OR AS REQUIRED
200g / 1+1/4 Cup approx. Cherry or Grape Tomatoes
Salt to taste (I have added total 1/4 +1/2 Teaspoon of pink himalayan salt)

Drizzle of Olive Oil (I have added 1 tablespoon of organic cold pressed Olive Oil)
1/2 Teaspoon Freshly Ground Black Pepper or to taste
12g / 1/2 Cup Fresh Basil or to taste

โ–ถ๏ธ METHOD:

Start by chopping the vegetables and set aside. Generously salt a pot of boiling water and add the penne pasta. Cook the pasta until it’s Al dente (as per the package instructions).

โœ… ???? DO NOT OVER COOK THE PASTA, cook it al dente because we will be further cooking it in the tomato sauce later, so just cook it al dente.

To a heated pan, add olive oil, onion and 1/4 teaspoon salt. Cook the onion on medium to medium-high heat (depending on the heat of your stove) until it’s soft and translucent. It will take about 2 to 3 minutes. Do not brown the onions.

Now reduce the heat to low and add garlic and chili flakes. Cook on low to medium-low heat for about 1 minute or until fragrant. Then add the tomato paste and mix well. Now add the zucchini. Turn the heat to medium-high and fry the zucchini along with the tomato paste for about 2 minutes, to cook out the raw flavour of the tomato paste.

โœ… ???? NOTE: If you like your pasta more zesty, you can always increase the quantity of the tomato paste

Then add the pasta cooking water to the pan to make a sauce, mix well and bring it to a boil. Once it comes to a boil, add the Cherry/grape tomatoes. Cook the tomatoes on medium-high heat for about 2 minutes or until the tomatoes start to disintegrate. Now add the cooked pasta and mix well. Add salt to taste and mix again (I have added 1/2 teaspoon of pink Himalayan salt).

โœ… ???? PLEASE NOTE THAT THE PASTA COOKING WATER ALREADY HAS SALT IN IT, so add the salt accordingly.

Mix well and cook on medium heat for another 2 minutes or so. By now the tomatoes and the pasta water together would have created a nice silky sauce. If the pasta starts to get dry add some more cooking pasta water. Turn off the stove.

Garnish with freshly ground black pepper, drizzle of a good quality Extra virgin Olive Oil and fresh basil. Mix well and serve hot.

โ–ถ๏ธ IMPORTANT NOTES:

???? YOU CAN USE ANY TYPE OF PASTA OF YOUR CHOICE

???? DO NOT over cook the pasta. Cook the pasta Al dente because we will be further cooking it in the tomato sauce later

???? Reserve at least 1+1/2 cup of the pasta cooking water for the sauce before draining the pasta

???? Every stove is different so regulate the heat as required. If at any point you notice the pan is getting over heated, reduce the heat

???? Fry the onions until soft and translucent. Do not have to brown the onions

???? Sometimes a batch of cherry/grape tomatoes can be a bit sour, so in that case add 1/4 teaspoon of sugar to balance out the acidity / sourness

???? PLEASE NOTE THAT THE PASTA COOKING WATER ALREADY HAS SALT IN IT, so add the salt to the dish accordingly

???? If the pasta sauce starts to get dry, add some more of the reserved pasta cooking water, do not add cold water to it

???? If you like your pasta more zesty, you can always increase the quantity of the tomato paste
