Recipe for the Mexican Quinoa Bowl:
4 c water
1 can fire roasted tomatoes
1 can black beans
2 c quinoa
1 c onions
1 c corn
2 c bell peppers
8 oz salsa or taco sauce – sometimes I used 1 entire jar of salsa
1 tsp garlic powder
2 tsp chili powder (or more)
Cook on high pressure in Instant Pot – manual release.
