Lemon Chia Pudding! πŸ‹πŸ« My Latest Healthy Vegan Breakfast Recipe OBSESSION

This chia pudding is one of my fave summer vegan recipes that I eat for breakfast almost every week. It’s the perfect time of year right now to try out this lemon blueberry chia pudding and add it to your weekly meal prep.

LEMON BLUEBERRY CHIA PUDDING
Zest of a 1 small lemon & 1 small lime
Juice of 1 small lemon & 1 small lime
1 can full fat coconut milk, about 1Β½ cups
ΒΌ cup water
3 tbsp maple syrup
ΒΌ tsp salt
ΒΌ tsp turmeric
5 to 6 tbsp chia seeds

Combine all ingredients minus chia seeds in blender and blend until smooth. Add chia seeds and pulse a few times until incorporated. Pour into sealable container and refrigerate overnight until set and firmed up.

Chocolate Muffins:
Dry Ingredients –
1 1/2 – 2 C Flour (I use whole wheat flour)
1/2 C Brown Sugar
1/4 C Insweet cocoa powder
PInch of salt
1 tsp baking soda and baking powder
1 tsp cinnamon (optional)
Protein Powder (optional)

Wet Ingredients –
1-2 C apple sauce (I start with 1 and add more as needed. You can also use 2 ripe bananas if you prefer that over apple sauce)
1 capful of vanilla
1/3 C plant milk ( I start with that amount and add more if needed)

Combine dry and wet ingredients and mix well. Place in non-stick muffin pan. Bake at 350 for 10-15 minutes. I did 13 minutes.

We noticed we’ve struggled a bit with breakfast time in our home so it was time to do a Vegan Breakfast Meal Prep!
Today we share some really amazing breakfast ideas that can be made ahead and frozen if needed or just prepped and left in the fridge for the week.

Recipes:

Pumpkin Pie Baked Oatmeal (Yields two 9×9 pans)
Preheat oven to 375 F
In a large mixing bowl add 1 can pumpkin puree (29oz), 2 cans of coconut milk (13.5oz), 1/2 cans measure of water, 2 tsp vanilla extract, 2 tbsp apple cider vinegar, 1 1/2 cups of coconut sugar or sweetener of your choice, 2 tbsp ground cinnamon, 1 tbsp ground clove, 1/2 salt. Mix until incorporated.
Add 7 cups of organic rolled oats, 1/2 tbs baking soda and mix well.
Oil your 9×9 baking dishes, oil your pans with grapeseed oil or any oil you have on hand. Pour in your mixture and bake for approx. 45 mins.

Breakfast Cookies
Preheat oven to 375 F
In a large bowl mash 4 medium to large sized bananas, add 1 cup coconut sugar, 1/2 cup almond butter and mix well. Add 4 cups almond flour, 1 tsp baking soda, 2 cups rolled oats, 1 cup chopped nuts and 1 cup chocolate chips. Mix well and form into 2 tbsp worth of dough on parchment lined baking sheets. Flatten cookies to a disc shape, bake for 15 mins until golden brown.

Potato Hash/Country Potatoes
Preheat oven to 425 F (convection setting if you have)
Cube your organic potatoes, chop up bell peppers, onions and add to a large bowl. Season with salt, grapeseed oil, onion powder, garlic powder, smoked paprika, ancho chili powder, Italian seasoning and any seasonings you’d like. Mix well.
Spread in a large baking sheet or baking dish and roast in oven for 30 mins. Take it out after 30 mins, give it a mix and put it back in the oven for another approx. 25 mins to crisp up potatoes.
Serve with vegan “eggs”, add to a burrito and eat as is!

Yeast Dough
Bloom your yeast by mixing 2 cups warm water with 1 1/2 tsp active dry yeast, set aside until foamy on the top. (Approx 5 to 10 mins)
In a mixing bowl, add 5 cups organic flour, 1 tsp salt and mix. Then pour the wet ingredients into dry. Knead the dough for approx. 5 mins. Drizzle oil on dough ball, toss dough ball in oil to prevent sticking, cover the bowl and leave in a warm place to proof for approx 1 hour.
Once doubled in size, punch dough ball down, form into whatever loaf you would like, cover and proof a second round for 30-45 mins until poofy and bake: For loaf or boule – bake at 425 degrees F for 20 mins, then turn down heat to 350 F and bake for another 20 mins.
Let cool for 15-20 mins, unmold loaf and sit it on a wire rack to cool completely.

INGREDIENTS + NOTES

#1 Protein Chocolate Batter 0:20

2 tbsp white tahini
3 tbsp natural peanut butter
2 tbsp maple syrup
3 tbsp vanilla protein powder (sub with ground flax or oat flour)
pinch of salt
2 Β½ tbsp unsweetened cocoa powder

Note: not using protein powder might make these a little less sweet, taste test and feel free to add another tsp of syrup.

serve with:
yogurt bowls
smoothie bowls
cereal bowls
or roll into little bites to snack on

β†’ ~ 3-4 servings, keep sealed in fridge for up to 1 week

#2 Freezer Breakfast Burritos 1:25

350g-500g potatoes, diced (12.3oz-17.6oz OR roughy 1 pound)
~ 1 tbsp veg oil
generous pinch of salt
spices (for example: dash of each paprika, turmeric, black pepper, chili powder)
1 can black beans
2 handfuls vegan pizza cheese
2 spring onions
1 tbsp sriracha or ketchup

6-8 medium tortillas
hummus
baby spinach

β†’ yields 6-8 wraps, depending on wraps

#3 Overnight Rice Pudding 4:31

5-6 tbsp rice flour
pinch of salt
pinch of cinnamon, cardamom (optional)
1 cup (240ml) water
a splash of non dairy milk to adjust the consistency
1-2 tsp sweetener (maple syrup etc)

β†’ whisk cold until there aren’t anymore clumps
β†’ bring to a boil, whisking carefully
β†’ simmer over medium until thickened

pear topping:
1 pear, diced
1 tsp vegan butter
dash of cinnamon
a few walnuts, crushed

β†’ serves 1
Note: I would not recommend doing batch cooking here, as it doesn’t last longer than 2 days!

#4 Chickpea β€˜Egg’ Sandwiches 6:40

2 cloves garlic
1 tbsp olive oil
100g spinach (around 3 cups, or 3.5oz)
pinch of salt, spices of choice

Β½ cup chickpea flour (65g)
1 pinch salt
1 tbsp white wine vinegar
β…“ cup + 1 tbsp non dairy milk (90ml)

β†’ Yields 4 chickpea eggs,
Feel free to double/triple this recipe if meal prepping!

per sandwich:
1 English muffin
hummus
tomato
sesame seeds
vegan chili mayo

#5 Cookie Dough Oat Brownies 8:25

For the brownies:
1 cup oats (90g)
1/2 cup unsweetened cocoa powder (55g)
1 tbsp ground flax seeds
1 tbsp cornstarch
3/4 tsp baking soda
1/2 tsp salt
1/2 cup maple syrup (120g)
a few drops vanilla aroma / caramel flavour drops
1/2 cup apple sauce (125g)
1/3 cup oil (80ml)
3 tbsp water

For the cookie dough:
1 cup oats, small cut (90g)
1 pinch salt
1 can white beans, rinsed + drained (240g)
β…“ cup maple syrup (80ml)
1 tsp vanilla extract Or a few drops vanilla aroma
2 tbsp sunflower oil OR melted vegan butter/coconut oil
3-4 tbsp non dairy milk
ΒΌ cup chocolate chips, or more if you like (40g)

β†’ yields 1 (20cm/8inch) brownie pan, 9 pieces

Just Egg is a cool egg substitute, but for what it is, it’s kind of expensive and definitely has some extra ingredients in there that don’t need to be. In this video I show you how to easily make it at home yourself using just a few ingredients for a fraction of the price!

You can use this to make vegan fried egg, omelettes, scrambled eggs and even french toast!

Recipe:
1 cup split yellow mung beans
1 1/3 cups of water
1 tsp dehydrated onion flakes
*or 1/2 – 3/4 tsp onion powder
1/2 tsp of salt
1/2 tsp of turmeric

Add after cooking (sprinkle on top of your food):
1/4 tsp kala Namak (Black Salt)
1/4 tsp black pepper

Method:
1. Rinse the mung beans well and then soak for at least 4 hours or overnight.
2. Discard the water and add the mung beans to a blender.
3. Add 1 1/3 cups of water, onion flakes, salt, and turmeric and blend until smooth.
4. Now it is ready to use however you would like! Scrambled eggs, fried egg, or omelette.
5. Sprinkle Kala Namak (Black Salt) on top of what you make for an eggy flavour, since the cooking process will cook out most of the eggy flavour. Add black pepper as well. Enjoy!

Smoked Salmon (Carrot) Recipe:

2-3 Large Carrots
1 tbsp tamari
1 tbsp water
1 tbsp liquid smoke
1 tbsp olive oil
2 tsp maple syrup
1/2 tsp onion powder
1/4 tsp garlic powder
1/2 tsp rice vinegar
1-2 tsp seaweed flakes

Peel and then boil carrots until soft and cooked throughout. 7-15 minutes depending on the size.

Add carrots and marinade into a small bowl and store in the fridge overnight. Mix if necessary to ensure all the carrots get coated in the marinade.

Add to bagel with vegan cream cheese.
Top with red onion, dill, capers.
