Ingredients & Notes

#1 Overnight Tiramisu Pudding 00:25

1 cup (250g) soy yogurt, plain or vanilla
3 tbsp black coffee
1 tbsp agave or maple syrup, or to taste
2 ½ tbsp chia seeds, ground flax or psyllium husk seeds
½ tsp vanilla, or few drops vanilla aroma
1-2 tsp cocoa powder, for the top
optional: 1 tbsp protein powder of choice

additional toppings! (nut butter, granola, fresh fruit etc)

#2 BEST Scrambled Tofu 1:36

for the silken tofu mix:
400g silken tofu (14oz)
160ml oat or soy milk (⅔ cup)
1/4 tsp black salt (kala namak)
¼ tsp turmeric
¼ tsp regular salt, or more to taste!
optional: paprika, cumin to taste

ALSO:

1 tbsp vegan butter
200g firm tofu (7oz)
salt, pepper to taste

Fresh chives/dill/spring onion for serving
Bread for serving
Additional sprinkle of black salt for serving

FEEL FREE to only use about half the silken tofu mix, then you can do another serving using another block of tofu, although if you like, you can also use all of it, up to you! Start with half, allow it to cook for about 5 min, then see if you want to add more, judging from the consistency.

FRYING vegan bacon chunks together with the tofu sounds SUPER good too, or pan frying it separately, then adding it to the pan with the tofu mixture.

#3 Half – Baked Granola 3:34

75g nuts of choice (¾ cup)
70g oats (¾ cup)
1 ½ tbsp flax seeds or chia seeds (optional)
1 tsp vanilla a few drops vanilla aroma
pinch of salt
3 tbsp cocoa powder, unsweetened
2-4 tbsp non dairy milk, start with 2, see if u need more after blending
¾ cup dates (100g ~ 10 – 12 dates) (deglet noor)
optional: 1-2 tbsp of your fave protein powder

serve w vegan yogurt, banana etc
→ serves ~4

#4 Vegan Earl Grey Chocolate 5:06

1 cup plant milk (250ml)
1 dash cinnamon
½ tsp vanilla a few drops vanilla aroma
1 tbsp semi-sweet chocolate chips
2 tsp unsweetened cocoa powder
1 earl grey tea bag
optional: vg whipped cream for serving

#5 Vegan “Egg” Bites 6:08

500g firm tofu
1 cup vegan yogurt (250g)
1 tbsp white wine vinegar
½ tsp salt
¼ tsp kala namak
¼ tsp turmeric

FOR THE FILLINGS:
75g-100g vegan bacon or smoked tofu, chopped
oil for the pan
½ cup frozen chopped spinach, or 1½ fresh spinach, chopped
1-2 handfuls shredded carrot/cabbage mix

OR TRY
sautéed mushrooms, kimchi, chopped spring onion, fresh herbs, vegan cheese…

ALSO: muffin liners (7-9 depending on preferred size)
BAKE FOR ~30 min or until lightly golden brown and firm

→ yields 7-9 bites
→ serve with rice, on toast, in wraps, or as a light snack

#6 Nutella Cherry Oatmeal Bake 8:11

2 cups oat flour (190g)
1 1/2 tsp baking powder
1 dash cinnamon
⅓ tsp salt
1/3 cup sunflower seed oil (85g)
⅓ cup non dairy milk (80ml)
1 tsp white wine vinegar
1 tsp vanilla or tonka bean paste
1/3 cup brown or coconut sugar (65g)
1 cup minus 1 tbsp vegan yogurt (220g)

ALSO
3 tbsp vegan chocolate hazelnut spread, WARMED until runny
1 handful frozen cherries

→ yields a 20cm brownie pan (8 inch)

We noticed we’ve struggled a bit with breakfast time in our home so it was time to do a Vegan Breakfast Meal Prep!
Today we share some really amazing breakfast ideas that can be made ahead and frozen if needed or just prepped and left in the fridge for the week.

Recipes:

Pumpkin Pie Baked Oatmeal (Yields two 9×9 pans)
Preheat oven to 375 F
In a large mixing bowl add 1 can pumpkin puree (29oz), 2 cans of coconut milk (13.5oz), 1/2 cans measure of water, 2 tsp vanilla extract, 2 tbsp apple cider vinegar, 1 1/2 cups of coconut sugar or sweetener of your choice, 2 tbsp ground cinnamon, 1 tbsp ground clove, 1/2 salt. Mix until incorporated.
Add 7 cups of organic rolled oats, 1/2 tbs baking soda and mix well.
Oil your 9×9 baking dishes, oil your pans with grapeseed oil or any oil you have on hand. Pour in your mixture and bake for approx. 45 mins.

Breakfast Cookies
Preheat oven to 375 F
In a large bowl mash 4 medium to large sized bananas, add 1 cup coconut sugar, 1/2 cup almond butter and mix well. Add 4 cups almond flour, 1 tsp baking soda, 2 cups rolled oats, 1 cup chopped nuts and 1 cup chocolate chips. Mix well and form into 2 tbsp worth of dough on parchment lined baking sheets. Flatten cookies to a disc shape, bake for 15 mins until golden brown.

Potato Hash/Country Potatoes
Preheat oven to 425 F (convection setting if you have)
Cube your organic potatoes, chop up bell peppers, onions and add to a large bowl. Season with salt, grapeseed oil, onion powder, garlic powder, smoked paprika, ancho chili powder, Italian seasoning and any seasonings you’d like. Mix well.
Spread in a large baking sheet or baking dish and roast in oven for 30 mins. Take it out after 30 mins, give it a mix and put it back in the oven for another approx. 25 mins to crisp up potatoes.
Serve with vegan “eggs”, add to a burrito and eat as is!

Yeast Dough
Bloom your yeast by mixing 2 cups warm water with 1 1/2 tsp active dry yeast, set aside until foamy on the top. (Approx 5 to 10 mins)
In a mixing bowl, add 5 cups organic flour, 1 tsp salt and mix. Then pour the wet ingredients into dry. Knead the dough for approx. 5 mins. Drizzle oil on dough ball, toss dough ball in oil to prevent sticking, cover the bowl and leave in a warm place to proof for approx 1 hour.
Once doubled in size, punch dough ball down, form into whatever loaf you would like, cover and proof a second round for 30-45 mins until poofy and bake: For loaf or boule – bake at 425 degrees F for 20 mins, then turn down heat to 350 F and bake for another 20 mins.
Let cool for 15-20 mins, unmold loaf and sit it on a wire rack to cool completely.
