RECIPES FROM THE VIDEO:

NICE CREAM
1 cup frozen blueberries
2 frozen bananas
¼ cup plant milk
1/3 cup coconut yoghurt
1 scoop @myprotein soy protein
1 tbsp chia seeds

AVOCADO SPREAD
1 ripe avocado
1 tsp nutritional yeast
½ tsp garlic powder
1 tsp extra virgin olive oil
½ lemon’s juice
1 tsp vegan mayo
chilli flakes
salt & pepper

MATCHA SMOOTHIE
1 banana
1 tsp matcha powder
1 tbsp peanut butter
1 glass plant milk
1 scoop @myprotein soy protein

BLENDED CREAMY OATMEAL
1 ripe banana
½ cup frozen forest fruits
1 scoop soy protein
1 tsp cinnamon
½ cup oat flour
¾ cup plant milk

PASTA BAKE
150g cashews, soak in water for 1 hour then rinse
1 tsp garlic powder
1 tsp turmeric
5 cloves garlic, minced
2 onions, minced
1 zucchini
25g fresh parsley, some to chop
1 cup lose fresh basil
Penne pasta, 250g, cook with salt and a little oil
1 cam coconut milk, 400ml
1/4 cup nutritional yeast
Salt and Popper to taste
Red lentils, 1/2 cup
1 block firm tofu, 180g, scramble with hands or fork
1 tbsp tomato paste
250g cherry tomaotes, cut in half
700g jar passata
Bread crunbs and grated vegan cheese to top (opt. But really recommend)

Cook the pasta in salty boiling water and a touch of olive oil, 2-3 min less than according to packing instructions. It should be chewy but not hard. Save a cup of pasta water before draining.
For the cashew sauce blend the cashew and coconut milk with salt, pepper, garlic powder and turmeric in a blender until smooth.
In a large pan saute the onions and garlic with olive oil. Add a tablespoon of tomato paste and the cherry tomatoes and zucchini. Add half a cup of pasta water and Saute for around for minuted on medium heat. Then once the water disappeared add the passata and lentils along with another half a cup of pasta water. Add the crumbled tofu amd basil and parsely. Simmer on low heat for 5-7 min. If necessary Add more water. Then, and the drained pasta and mix well.
Layer half of the pasta mix into a baking sheet. Pour half of the cashew sauce and a Layer of vegan cheese. Then the rest of the pasta mix and cashew sauce. Sprinkle a Layer of breadcrumbs and finally a Layer of vegan grated cheese. Bake in the oven at 180 C for 30 minutes.

1 loose cup of fresh basil
1 can (400ml) coconut milk, full fat
1 handful of arugola
1 can of white beans
1/2 cup cashews
1/2 cup sunflower seeds
3 tbsp extra virgin olive oil
1/4 cup nutritional yeast
1/2 lemon’s juice
salt & pepper to taste

CHICKPEA MASH:
1 can chickpea, mashed
1 ripe avocado
1 tbsp vegan mayo
1/2 lemon’s juice
salt & pepper
chilli flakes
1-2 tbsp nutritional yeast
1-2 tbsp coconut yoghurt
1 tsp dill
1 tbsp extra virgin olive oil

Eggroll in a Bowl Recipe:
1 vegan veggie burger
cooked rice
1.5 cups shredded cabbage and carrots
2 tsp olive oil
2 tsp lemon juice
salt and pepper to taste

Directions:

Cook the veggie burger and then crumble into small pieces. Warm up the rice and add it to a bowl with the burger and top with veggies. Drizzle olive oil and lemon juice on top. Season with salt and pepper, mix well and enjoy!

Sometimes we just have to give ourselves a break, respect how we feel and give ourselves grace. If your mental health constantly effects your hunger levels, I urge you to seek help.

A reminder that what I eat shouldn’t be exactly what you eat, every body is different and needs different types of fuel. I simply enjoy giving you meal inspiration and like to show you the variety of foods and meals you can have! Its important you enjoy what you eat and it makes you feel happy, healthy and nourished!

day 2 breakfast – tofu scramble
2-3 cloves garlic
1/2 red bell pepper
large handful fresh herbs ( parsley, cilantro etc.. )
large handful spinach
1/4 jalapeno ( deseeded to be less spicy )
1/4 large onion
1/2 block extra firm tofu
1 tbsp oil
1 tbsp tamari ( sub soya sauce )
1 tbsp nutritional yeast
1/2 tsp smoked paprika ( sub chilli powder )
chilli flakes to taste
1/2 tsp turmeric
black pepper to taste
salt to taste

Dice all veggies, mince garlic and cut jalapeno very small. Heat a pan on medium eat and add oil along with onion, garlic and jalapeno, sauté for 3-4 minutes. Add red bell pepper, spinach and herbs, sauté for 3-4 minutes. crumble in tofu, add all the spices / sauces and sauté until the tofu starts to brown

Lunch day 2 – quick stirfry
1.5″ fresh ginger
2 cloves garlic
1/2 large carrot
1/2 apple
1/4 large onion
3/4 cup edamame beans
1 tbsp oil
2 tsp sesame seeds
chilli flakes to taste
salt to taste

-sauce-
1 heaping tbsp PB
3 tbsp tamari
2 tbsp rice vinegar

dice onion and apple some what small, slice carrot ( as seen in video ), mince ginger and garlic. Heat a pan on low medium heat, add oil and all the stuff you just cut up along with sesame seeds, salt and chilli flakes. sauté with a lid for 8-10 minutes ( if things are starting to brown to fast, turn the heat down! )

cook rice noodles and make sauce. After 8-10 minutes add the edamame beans to the pan and cook for 3-5 minutes, add cooked rice noodles, sauce and mix everything together!

day 5 dinner – mushroom rice mix
4 cups sliced brown mushrooms
2-3 cups sliced shiitake mushroom
1 small onion
1 carrot
1 tsp oregano
1 tsp basil
1 tsp rosemary
1/2 tsp thyme
1 tsp garlic powder ( or 1 large clove garlic )
chilli flakes to taste
salt to taste ( add more than you think but taste as you go )
pepper to taste ( same concept as the salt )
1 tbsp olive oil
2 tbsp balsamic vinegar
3 tbsp nutritional yeast
2 – 3 tbsp vegan butter
1 cup rice ( partially rinsed – we don’t want all the starch gone )
2 1/4 cup water

Dice onion and carrot small, slice mushrooms. heat a large pot on low medium heat, add olive oil, onion ( garlic clove ) and spices ( only adding a touch of salt and pepper at first ) sauté for 3-4 minutes then add carrot. cover with a lid and cook for 2-3 minutes. Add mushrooms, mix and cover with a lid for 6-8 minutes ( until mushrooms are cooked down ).

Add balsamic vinegar, more salt and pepper. Add rice, cover and cook for 3-5 minutes. Add 2 cups water, nutritional yeast and vegan butter. cook until rice is done. Add 1/4 cup more water, salt and pepper as needed and a squeeze of lemon!

Hi friends! 🌞 So excited to share this $30 budget what i eat in a week video! I wanted to show you a full grocery haul on everything i got and show you all the recipes I made with those ingredients! These meals are simple and easy to throw together but still nourishing and delicious!

My heart goes out to everyone struggling with money and to put food on the table. Remember there is no shame in not being able to afford food, the world is a difficult place. However there are food banks, soup kitchens and other resources available that can help you!

Pickled Red Onion Recipe:

Carrot Soup Recipe:

10 medium – large carrots
1/2 can coconut milk
2 cups water
1 tbsp olive oil
2 tsp salt
1 tsp black pepper ( more to taste )
2 tsp onion powder
1 tsp garlic powder
1 tsp cinnamon
1/8 tsp clove
1/4 tsp fennel
8-10 whole coriander seeds
1 tsp turmeric
1/4 tsp nutmeg
1 tsp cumin
1/4 lemon
1 – 2 tbsp maple syrup ( optional : sub sugar, coconut sugar or even molasses )

– Preheat oven to 400F. Wash and peel your carrots.

– Place your carrots into a large baking dish and cover with oil, 1 tsp salt and pepper. Using your hands rub that into the carrots and then place in the oven for 30-35 minutes or until carrots are completely tender

– Once carrots are cooked place into your high powered blender with coconut milk, all spices, lemon and maple syrup. Blend until completely smooth ( 3-4 minutes )

– transfer into a pot and warm threw. Plate and top with cilantro, red onion, croutons ( if you have them ), coconut yogurt or whatever else you think would be delicious!

Hummus Recipe:

1/2 can chickpeas ( take the skins off, it makes a creamier hummus )
3 cloves garlic
2 tbsp olive oil
1/2 lemon juice
3-4 tbsp aquafaba ( juice in the can of chickpeas )
1 tsp salt
1 tsp onion powder
chilli flakes to taste

Warm a pan on very low heat, add olive oil. Using the side of a knife smash the garlic open and peel away the skin. Place in the pan with the olive oil and cook for 10-15 minutes or until garlic slightly browns and is very fragrant

Place all ingredients including the olive garlic mixture into a high powered blender and blend until smooth ( add more aquafaba as needed )

PB Chocolate Matcha
1 heaping tbsp PB
1 cup milk
1/2 tbsp cocoa powder
1 tbsp maple syrup
1 tsp matcha
lots of ice

– add 1/2 cup of milk to a jar along with PB, shake really well and pour over ice.
– add the rest of the milk, cocoa powder and maple syrup to the same jar and shake really well and pour over your PB milk
– whisk matcha in with a small amount of hot water until there are no clumps and pour on top

Stirfry Sauce:
1 tbsp black bean paste
1 tbsp gojuchang
1 tbsp PB
1/2 tbsp maple syrup
2 tbsp rice vinegar
3 tbsp water

Tofu Stir fry:
1/2 block tofu
1/2 small cooking onion
1/2 red pepper
1 carrot
3 cloves garlic
1″ ginger
1 tbsp oil

SAUCE:
3 tbsp soya sauce
2 tbsp pb
1 tbsp gojuchang
1 1/2 tbsp rice vinegar
1 tbsp maple syrup

– heat a pan on medium heat and add oil, once hot rip tofu into small chunks and throw into the pan. Cook until golden brown
– In the meantime cut your other veggies, dice onion, slice red pepper and carrot, mince garlic and ginger. Once the tofu is golden throw your veggies in there.
– Mix together sauce ingredients in a jar. Once your carrots are cooked then reduce the heat, pour over your sauce, mix really well and serve over rice!
