This video features my take on 7 (more or less) viral recipes. Ideas I’ve found on instagram and been meaning to try for MONTHS. The viral creamy mapo tofu udon, whipped date coffee, homemade tteokkochi, nutella rolls, lazy meals and more! All made vegan.
⭐INGREDIENTS + NOTES⭐

#1 My Creamy Mapo Tofu Udon 1:01
for the crumbles:
200g firm tofu (7oz)
1 tbsp cornstarch
1 generous pinch of salt
1 dash garlic powder
1 tbsp veg oil for frying
2-3 tsp chili bean paste (toban djan) or to taste depending on spice level
1 splash or 2-3 tbsp coconut milk
1 tbsp light soy sauce
1 tsp chili crisp oil, or to taste
for the tofu sauce:
300g silken tofu (10.5oz)
1-2 tsp white miso paste
pinch of salt
1 tsp white wine vinegar/rice vinegar/lemon juice
2-3 tbsp coconut milk (or oat milk)
1-2 serving noodles (i did 200g fresh udon noodles (7oz))
top with sesame seeds, spring onion, extra chili oil
→ serves 1-2

#2 Korean Rice Cake Skewers 3:17
500g rice cakes (tteok) (1.1 pounds)
~ 500ml frying oil (2 cups)
~50g sugar to dip these in (¼ cup)
for the sauce:
1 tbsp gochujang (or to taste)
1 ½ tbsp ketchup
2 tsp maple syrup
1 tbsp white wine vinegar
1 tbsp soy sauce
¼ tsp garlic powder
→ yields ~6 skewers

#3 Chickpea Cucumber Salad 6:18
for the dressing:
2 heaping tbsp crunchy natural peanut butter
juice of 1 lime or 1 1/4 tbsp rice vinegar
1 tbsp soy sauce
1 tsp sesame oil
1-2 tsp crispy chili oil
1 tbsp maple syrup
1 splash warm water
salt, to taste
3/4 cucumber
1 can chickpeas (400g = 14oz) (weight before draining)
salt, to taste
spring onion
sesame seeds
→ serves 1-2

#4 Broth-y Rice Bowl 7:43
300g tofu (medium to soft firmness) (10.5oz)
1 small to medium bok choy
1-2 handfuls small mushrooms
½ tsp veg broth powder
flavour packets from 1 instant noodle packet
2 ½ cups warm water (625ml)
1 tbsp soy sauce
The Sauce I forgot – Mix:
3 tbsp soy sauce
1 tsp sesame oil
1.5 tsp rice vinegar
1 tsp maple syrup or sugar
2 green onions, chopped
4 garlic cloves, minced
→ add over the cooked tofu coming straight from the oven
serve with 2 servings sticky rice
→ serves 2

#5 Date Dalgona Iced Latte 10:00
3-4 deglet noor dates (buy the ones with pits, they taste better)
1 ⅓ cups non dairy milk of choice, i did oat barista (330ml)
generous pinch of salt
for the coffee:
3 tbsp instant coffee granules
3 tbsp sugar
3 tbsp hot water
ice cubes for serving

#6 Vegan Nutella Rolls 12:18
130 non dairy milk (½ cup plus 1 tsp)
4 tbsp sugar
2 tsp dry active yeast
280g all purpose flour (2 ⅓ cups)
⅔ tsp salt
2 tbsp unsweetened cocoa powder
50g vegan butter (3 ½ tbsp)
1 tsp vanilla or LOTS of vanilla aroma drops
2 ½ tbsp apple sauce
PLUS 1-2 tbsp flour for the surface, and 1 tsp vegan butter / oil for your hands when kneading
6 tbsp vegan nutella / chocolate hazelnut spread for the filling
2-3 tbsp oat cream for the top
another 3-6 tbsp vegan nutella for the top
→ yields 6 big rolls (they’re so good my god)

Raspberry blended oats:

Chocolate Chia Pudding:
1/2 block silken tofu
3 tbsp chia seeds
2 tbsp oats
pinch of cinnamon
1 tbsp unsweetened cocoa powder
1/4-1/3 cup soy milk
1/2 tsp vanilla extract
1 tbsp peanut butter/tahini
Blend and layer with greek-style coconut yoghurt & top with raspberries
CHICKPEA & TOMATO ORZO:
1 cup orzo
1 onion, finely chopped
2 cloves garlic, finely chopped / use garlic press
200g cherry tomatoes, cut in half
1 can (400g) chickpeas, rinsed & drained
½ tsp garlic powder
400ml can coconut milk
¼ cup nutritional yeast
lost cup of fresh basil leaves
salt&pepper to taste
Method:
Cook orzo in salty boiling water according to package instructions. Sauté the onion & garlic in some olive oil in a large pan. Once nicely golden, add the chopped tomatoes. On medium-high heat, let them cook down for 2-3 minutes (add a splash of water if needed). Then add in the rinsed and drained chickpeas and cook for another 2 minutes. Pour in the coconut milk and the nutritional yeast. On low-medium heat let it simmer for around 3 minutes. Add the cooked and drained orzo and let them simmer for another 2-3 minutes before stirring in the fresh basil leaves. Enjoy

RECIPES FROM THE VIDEO:
NICE CREAM
1 cup frozen blueberries
2 frozen bananas
¼ cup plant milk
1/3 cup coconut yoghurt
1 scoop @myprotein soy protein
1 tbsp chia seeds
AVOCADO SPREAD
1 ripe avocado
1 tsp nutritional yeast
½ tsp garlic powder
1 tsp extra virgin olive oil
½ lemon’s juice
1 tsp vegan mayo
chilli flakes
salt & pepper
MATCHA SMOOTHIE
1 banana
1 tsp matcha powder
1 tbsp peanut butter
1 glass plant milk
1 scoop @myprotein soy protein
BLENDED CREAMY OATMEAL
1 ripe banana
½ cup frozen forest fruits
1 scoop soy protein
1 tsp cinnamon
½ cup oat flour
¾ cup plant milk
PASTA BAKE
150g cashews, soak in water for 1 hour then rinse
1 tsp garlic powder
1 tsp turmeric
5 cloves garlic, minced
2 onions, minced
1 zucchini
25g fresh parsley, some to chop
1 cup lose fresh basil
Penne pasta, 250g, cook with salt and a little oil
1 cam coconut milk, 400ml
1/4 cup nutritional yeast
Salt and Popper to taste
Red lentils, 1/2 cup
1 block firm tofu, 180g, scramble with hands or fork
1 tbsp tomato paste
250g cherry tomaotes, cut in half
700g jar passata
Bread crunbs and grated vegan cheese to top (opt. But really recommend)
Cook the pasta in salty boiling water and a touch of olive oil, 2-3 min less than according to packing instructions. It should be chewy but not hard. Save a cup of pasta water before draining.
For the cashew sauce blend the cashew and coconut milk with salt, pepper, garlic powder and turmeric in a blender until smooth.
In a large pan saute the onions and garlic with olive oil. Add a tablespoon of tomato paste and the cherry tomatoes and zucchini. Add half a cup of pasta water and Saute for around for minuted on medium heat. Then once the water disappeared add the passata and lentils along with another half a cup of pasta water. Add the crumbled tofu amd basil and parsely. Simmer on low heat for 5-7 min. If necessary Add more water. Then, and the drained pasta and mix well.
Layer half of the pasta mix into a baking sheet. Pour half of the cashew sauce and a Layer of vegan cheese. Then the rest of the pasta mix and cashew sauce. Sprinkle a Layer of breadcrumbs and finally a Layer of vegan grated cheese. Bake in the oven at 180 C for 30 minutes.

PESTO for the gnocchi: blend in a food processor or blender
1 loose cup of fresh basil
1 can (400ml) coconut milk, full fat
1 handful of arugola
1 can of white beans
1/2 cup cashews
1/2 cup sunflower seeds
3 tbsp extra virgin olive oil
1/4 cup nutritional yeast
1/2 lemon’s juice
salt & pepper to taste
CHICKPEA MASH:
1 can chickpea, mashed
1 ripe avocado
1 tbsp vegan mayo
1/2 lemon’s juice
salt & pepper
chilli flakes
1-2 tbsp nutritional yeast
1-2 tbsp coconut yoghurt
1 tsp dill
1 tbsp extra virgin olive oil

INGREDIENTS + NOTES:
#1 Vegan Tunacado
for the tuna mix:
1 can white beans (400g, 14oz)
1 handful fresh parsley or cilantro
1 small shallot, roughly chopped
1 tbsp vegan mayo
1 tbsp vegan yogurt or cream cheese
1 tbsp soy sauce
1 tsp mustard
1 tbsp white wine vinegar
1 generous pinch salt
1 dash black pepper
Optional : 1 nori sheet, ripped to bits
Optional: 1 tsp flax seed oil
for the sandwich:
grilled bread
avocado
a few tomato slices
few slices pickled jalapeno
few drops of tabasco
vegan pesto (can me skipped imo)
→ yields enough “Tuna” for 3-4 sandwiches
#2 Green Goddess Bakes Salad
for the baked salad:
1 small cauliflower or romanesco broccoli
2 medium to large carrots
1 leek
1 tbsp oil
salt, pepper, spices to taste
for the roasted chickpeas:
1 can chickpeas (400g, 14oz)
1 tbsp olive oil
generous pinch of salt
a dash of chili flakes, black pepper, ras el hanout (or any other spices u want)
2 tsp cornstarch
for the dressing:
¼ cup olive oil (60ml)
2 cloves garlic
1 small shallot, roughly chopped
3 tbsp fresh lemon juice
1-2 tsp lemon zest
2 tbsp vegan cream cheese or sour cream
1 handful fresh basil
1 handful fresh chives
2 handfuls fresh spinach
1 tsp agave syrup
salt, pepper to taste
a splash of water, enough to help it blend and to adjust the consistency
→ if served w bread, tortillas, quinoa, rice etc – this serves 2-3 people;
otherwise I’d say 2 servings, but depends on how hungry u are ofc
#3 Cheese Stuffed Potato Pancakes
400 – 500g potatoes (14 – 17,6 oz)
4 tbsp rice flour (i use glutinous rice flour)
⅓ tsp salt
1 tbsp powdered sugar
10 bite size pieces vegan cheese
sunflower oil, enough to fill your frying pot about 2 inches / 5 cm deep
→ yields about 10 potato bites
#4 Sushi Waffles with Vegan Salmon
for the “fish”:
200-300g jackfruit pieces or tofu cubes
a handful of dry shiitake mushrooms
1-2 sheets of nori, cut into pieces
1 tbsp soy sauce
1 tsp rice vinegar
2 tsp agave syrup
1-2 tsp flax seed oil
2 tsp white miso paste
⅓ cup + 2 tbsp (100ml) hot water , more if needed
2 cups cooked sushi rice (i use rice porridge rice)
mashed avocado w a squeeze of lime
thinly sliced cucumber
sweet soy sauce (called Kecap manis)
sriracha
vegan mayo
roasted sesame seeds
→ oil for the waffle iron
(how many tbsp u use per waffle will depend on the size of your waffle iron)
→ about 2 servings
#5 Mini Cakes
3 Layered Apple Marble Cake
for the cakes:
60g sugar (1/4 cup + 1 tbsp)
4 tbsp vegetable oil
1 tbsp applesauce
1 tsp vanilla
1 tbsp apple cider
80ml non-dairy milk (1/3 cup)
1 cup (120g) all-purpose flour
1 tsp baking powder
1⁄4 tsp salt
1 tbsp cocoa powder (plus 1 tsp milk if needed)
also: a lil oil to grease 2 10 cm cake tins
for the filling:
1 small apple
juice of ½ lime
1 tbsp agave syrup
¼ tsp cinnamon
→ i ended up using about ½ this filling for the cake
for the frosting:
125g vegan butter, at room temp
a generous pinch of salt
125 – 250g powdered sugar, added 50g at a time, stop once you’re happy with the consistency !
How to make the frosting:
beat the butter until fluffy
add the salt and the first ½ cup of sugar
Mix
add another ½ cup sugar
mix
continue adding sugar or stop at any moment, once you have a nice frosting consistency
for the cream cheese frosting I did:
100g vegan butter
25 g vegan cream cheese
