Easy Vegan Cauliflower Stir Fry

Ingredients
1) Cauliflower Florets
2) Coconut Oil
3) 1 Big Onion
4) 8 Garlic Flakes Crushed
5) 3 Green Chillies
6) Few Curry Leaves
7) 1 Tsp Cumin Seeds
8) Chilly Flakes as desired
9) Coriander Leaves for garnishing
10) Salt as per taste

Method of Cooking:
1) Heat a Vessel add Coconut Oil.
2) Add Cumin seeds, Curry leaves, green chillies, garlic flakes & fry till garlic flakes turn light brown.
3) Add Onions & fry till translucent.
4) Add Cauliflower Florets and give a quick mix.
5) Close the Lid & Let it cook for sometime.
6) Add Salt as per taste.
7) Add Chilly Flakes as per desired.
8) Close the Lid & Let it cook for sometime.
9) Finally Garnish with Coriander leaves.

Your Easy Vegan Cauliflower Stir Fry is ready.

Vegan Butter ‘chicken’ Recipe
Makes 4-6 servings

2 white onions, chopped
4 cloves of garlic, minced
1-2″ piece of fresh ginger, grated
2 tbsp garam masala
1 tbsp paprika
1 tbsp cumin
1 tbsp coriander
2 Tbsp Red curry paste
1 large can (800 ml) of diced tomatoes
2 tbsp of tomato paste.
2 cans coconut milk

3 Cups of dry soy curls, rehydrated
1/2 cup arrowroot starch
1/2 tsp black pepper
1/2 tsp salt
2 tsp paprika
2 tsp garlic powder

Directions:
1. Add chopped onions to a preheated frying pan. Once the onions turn translucent and start to release their liquid, add the garlic and ginger and sauté together for a few minutes.
2. Add the spices, and red curry paste, stir it around in the bottom of the pan for a minute or two just to help bring out the flavours.
3. Add diced tomatoes and tomato paste, stir well and bring to a low simmer. Simmer for 10 minutes.
4. Add 2 cups of coconut milk and return to a low simmer.
5. Rehydrate soy curls by soaking in warm water for 5 minutes. Strain and squeeze out excess water.
6. Mix together the coating for the soy curls in a large bowl (arrowroot starch, pepper, salt, paprika and garlic powder). Coat the soy curls evenly in the mixture.
7. In a preheated frying pan, fry the soy curls until golden brown.
8. Add soy curls to the butter chicken sauce. Simmer together for another 5-10 minutes. Serve and enjoy!

If you prefer to use tofu:
2 block of tofu ripped up or cubed
1/2 cup arrow root starch
1/2 tsp pepper/salt
2 tsp paprika
2 tsp garlic powder

Directions: Coat tofu and bake @375F for 30 mins. Add to the butter chicken sauce when done. Simmer together and serve!

SOY FREE OPTION: add 2 cans of canned chickpeas (drained and rinsed) to the butter chicken sauce.

Recipes:

Scalloped Potatoes1 large onion, chopped
3 garlic cloves, chopped 3 tbsp mustard
2 tsp thyme
1 tsp rosemary
1/4 tsp nutmeg
1 tsp braggs
2 tbsp nutritional yeast pinch of salt and pepper
2 cups unsweetened plant milk 1/2 cup vegetable broth
1 tbsp arrow root powder
4 large russet potatoes cut thin Directions:1. Heat oven to 350F and get a large 9×13 glass baking tray ready.

2. Saute onion and garlic together on medium heat in a medium sized saucepan until soft.

3. Add mustard, spices, braggs, and nutritional yeast and stir well.

4. Turn down the heat and add the soy milk. Gently heat through (do not bring to a boil).

5. Combine the vegetable broth and arrowroot powder and stir into the mixture. It will help thicken the sauce just a little bit. Heat through for a couple mins.

6. Cut potatoes or use a mandolin slicer into very thin slices. Add a thin layer of potatoes to the baking dish and cover with a small amount of sauce.
7. Repeat adding a layer of potatoes and sauce until it is all used up. Bake the potatoes in the oven for 1 hour and 15 minutes uncovered.

Green Bean Casserole
1 large onion, chopped
3 cloves of garlic, chopped
3 cups white mushrooms, chopped (approx. 12 mushrooms)
2 tbsp nutritional yeast1/2 tsp smoked paprika1/4 tsp nutmeg
1/2 tsp salt
1/2 tsp black pepper
2 cups unsweetened plant milk, divided
1 tbsp onion granules
1 bag of frozen green beans
1-2 cups crispy fried onions

Directions:1. Preheat oven to 350F and have a medium sized glass baking tray ready.

2. Saute together onions and mushrooms on medium heat in a large pan until very soft.

3. Add garlic and sauté together for a few minutes.

4. Add the spices and nutritional yeast, mix together well.

5. Pour half of the mushroom mixture into a blender, and blend together with 1 cup of milk.

6. Add the blended mushrooms back to the pan and mix together with the rest of the mushrooms, the onion granules, and other cup of milk. Mix well.

7. Add the frozen beans to the baking dish and pour the mushroom sauce over top.
8. Cover the top with crispy fried onions and bake for 35 minutes.

Citrus Dijon Salad Dressing

1 Orange – Juiced (1/3 cup)
2 tbsp Vinegar
2 tbsp Dijon
1 tbsp tahini
1 tbsp Maple Syrup
1/4 tsp of Salt
Pinch of Pepper

Whisk together and enjoy with salad

Recipes:

Scalloped Potatoes1 large onion, chopped
3 garlic cloves, chopped 3 tbsp mustard
2 tsp thyme
1 tsp rosemary
1/4 tsp nutmeg
1 tsp braggs
2 tbsp nutritional yeast pinch of salt and pepper
2 cups unsweetened plant milk 1/2 cup vegetable broth
1 tbsp arrow root powder
4 large russet potatoes cut thin Directions:1. Heat oven to 350F and get a large 9×13 glass baking tray ready.

2. Saute onion and garlic together on medium heat in a medium sized saucepan until soft.

3. Add mustard, spices, braggs, and nutritional yeast and stir well.

4. Turn down the heat and add the soy milk. Gently heat through (do not bring to a boil).

5. Combine the vegetable broth and arrowroot powder and stir into the mixture. It will help thicken the sauce just a little bit. Heat through for a couple mins.

6. Cut potatoes or use a mandolin slicer into very thin slices. Add a thin layer of potatoes to the baking dish and cover with a small amount of sauce.
7. Repeat adding a layer of potatoes and sauce until it is all used up. Bake the potatoes in the oven for 1 hour and 15 minutes uncovered.

Green Bean Casserole
1 large onion, chopped
3 cloves of garlic, chopped
3 cups white mushrooms, chopped (approx. 12 mushrooms)
2 tbsp nutritional yeast1/2 tsp smoked paprika1/4 tsp nutmeg
1/2 tsp salt
1/2 tsp black pepper
2 cups unsweetened plant milk, divided
1 tbsp onion granules
1 bag of frozen green beans
1-2 cups crispy fried onions

Directions:1. Preheat oven to 350F and have a medium sized glass baking tray ready.

2. Saute together onions and mushrooms on medium heat in a large pan until very soft.

3. Add garlic and sauté together for a few minutes.

4. Add the spices and nutritional yeast, mix together well.

5. Pour half of the mushroom mixture into a blender, and blend together with 1 cup of milk.

6. Add the blended mushrooms back to the pan and mix together with the rest of the mushrooms, the onion granules, and other cup of milk. Mix well.

7. Add the frozen beans to the baking dish and pour the mushroom sauce over top.
8. Cover the top with crispy fried onions and bake for 35 minutes.

Citrus Dijon Salad Dressing

1 Orange – Juiced (1/3 cup)
2 tbsp Vinegar
2 tbsp Dijon
1 tbsp tahini
1 tbsp Maple Syrup
1/4 tsp of Salt
Pinch of Pepper

Whisk together and enjoy with salad

???? Creamed spinach ingredients:
250g spinach
100g | 3/4cup chickpea flour
1/4 tsp ground nutmeg
1/8tsp black pepper
salt to taste
300ml | 1.2 cup coconut milk

???? Pancakes ingredients:
150g | 1 cup oats
1tbsp corn starch
1tsp baking powder
salt
400ml | 1 3/4 cup dairy-free milk
1tbsp vinegar
1tsp agave syrup

???? Pesto ingredients:
20g | 1cup cilantro or parsley
1 date
1tbsp nutritional yeast
salt
1tbsp lemon juice
60ml | 1/4 cup oil

????‍????Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.

???? Method:
Transfer 250g | 7 oz raw spinach to a skillet and cook stirring until the spinach is wilted.
In a mixing bowl combine and whisk until smooth 100g | 3/4cup chickpea flour, 1/4 tsp ground nutmeg, 1/8tsp black pepper, salt to taste and 300ml | 1.2 cup coconut milk.

Pour the batter over the spinach and cook gently on low heat for 5 minutes until thickened.
To make oat flour add 150g | 1 cup oats, 1tbsp corn starch, 1tsp baking powder, salt to a blender.
Blitz for 20 seconds until you have a fine, powdery flour.
Pour 400ml | 1 3/4 cup dairy-free milk, 1tbsp vinegar, 1tsp agave syrup.
Whisk until well combined.
Brush with oil and heat up a non stick pan at a low medium heat.
Pour the batter using a ladle onto the skillet and fry until golden brown.
Flip carefully and cook on the other side.
Continue until all the batter is used up.
To make a delicious pesto place 20g | 1cup cilantro or parsley, 1 date, 1tbsp nutritional yeast, salt, 1tbsp lemon juice, 60ml | 1/4 cup oil into the bowl of a food processor and pulse.
Spoon the spinach mixture into the each crepe and fold over.
You can place spinach stuffed crepes in the preheated oven until warmed through.
Serve with pesto and enjoy! ????
