π₯ Healthy Vegan Weight Loss!!
Ingredients:
π₯ 4 large potatoes
π§ Salt
π₯ Soy milk
π§ 2 garlic cloves
π₯¬ 2 handfuls of spinach
Cheesy Sauce:
π₯ Carrots
π₯ 1 potato
π₯£ Silken tofu
π§ Nutritional yeast
π§ 1 garlic clove
π Apple cider vinegar
π Turmeric
π½ Cornstarch
π§ Salt
Method:
1οΈβ£ Prick the potatoes all over with a fork and bake until completely soft and fluffy inside.
2οΈβ£ Slice them in half and carefully scoop the fluffy potato into a bowl, leaving the skins intact with a little potato around the edges so they keep their shape.
3οΈβ£ Add salt and a splash of soy milk to the potato and mash until fluffy. Mix in 2 cloves of garlic and 2 handfuls of spinach.
4οΈβ£ Spoon the mixture back into your potato boats and return them to the oven for around 10 minutes.
5οΈβ£ For the cheesy sauce, chop the carrots and 1 potato and boil until soft.
6οΈβ£ Add the silken tofu, nutritional yeast, garlic, salt, apple cider vinegar, turmeric, cooked carrots and potato, and a little cornstarch to a blender.
7οΈβ£ Blend until super smooth and creamy.
8οΈβ£ Pour the sauce back into a pot and heat for a few minutes until it thickens.
9οΈβ£ Drizzle your twice-baked potatoes generously with the cheesy sauce and enjoy! π₯π§π

Ingredients:
π₯¦ Frozen cauliflower
π 1 ripe banana
π« Tofu
π₯£ Oats
π Lemon juice + zest
πΌ Vanilla
π Maple syrup
π₯ Baking powder
π§ Pinch of salt
π₯ Soy milk
π« Frozen blueberries
Method:
1οΈβ£ Steam your cauliflower until soft and tender.
2οΈβ£ While the cauliflower is steaming, add the ripe banana, half a block of tofu, 1Β½ tbsp lemon juice, a little lemon zest, vanilla, maple syrup, baking powder, a pinch of salt, oats, and a splash of soy milk to a blender.
3οΈβ£ Once the cauliflower is ready, add about half a head to the blender.
4οΈβ£ Blend everything until completely smooth, silky, and creamy.
5οΈβ£ Pour the mixture into a bowl and fold in half of the frozen blueberries.
6οΈβ£ Top with the remaining blueberries.
7οΈβ£ Microwave for around 5β8 minutes, depending on your microwave.
8οΈβ£ For a firmer, more cakey texture, cook it for a little longer. If you want it softer and more squidgy, take it out a little earlier. β¨

Method:

2οΈβ£ While the cauliflower is cooking, add the oats, banana, tofu, PB&J powder, cocoa powder, maple syrup, vanilla, baking powder, soy milk, and flaxseed to a blender.
3οΈβ£ Add the cooked cauliflower and blend everything together until completely smooth and creamy.
4οΈβ£ Transfer the mixture into a microwave-safe cup or bowl.
5οΈβ£ Sprinkle the blueberries over the top.
6οΈβ£ Microwave for 6β7 minutes, or until the cake is cooked through.

Method:
1οΈβ£ Add the mushrooms, courgette, carrot, cabbage, and tofu to a food processor and blitz until finely chopped.
2οΈβ£ Transfer the mixture to a non-stick pan. Add the soy sauce and garlic powder, then cook for a few minutes until the vegetables soften.
3οΈβ£ Dip a sheet of rice paper into water until softened.
4οΈβ£ Place some of the filling in the centre and fold into a sealed parcel.
5οΈβ£ Sprinkle sesame seeds into a non-stick pan and cook the dumplings on top of the sesame seeds until golden and crispy on both sides.
6οΈβ£ Mix together the soy sauce, rice vinegar, and sweet chili sauce for a quick dipping sauce.
7οΈβ£ Serve the dumplings with the dipping sauce and enjoy.

Today, I’m sharing with you 4 vegan, plant-based meals I can’t stop eating! They are some of my favorite “go-to” meals lately, and if I’m being honest, crowd pleasers in my house. These meals are also free from oil and great for vegan weight loss of you are trying to stay in a calorie deficit. I hope you enjoy them!

Hereβs how I make this salad:
– Cucumber
– Carrots
– Tomato
– Any lettuce
– Rice (I use about 1 cup)
– Chickpeas (I use about 1/2 cup)
– Everything but the bagel seasoning
– My Healthy Vegan Mama dressing (2 tbsp low sodium soy sauce, 1-2 tbsp tahini, a capful of apple cider vinegar. Today I also added a little sriracha and about 2 tbsp of nutritional yeast. Use water to thin it out).

Peas, broccoli, tofu and rice:
How to make: To a pot addβ¦
– 2 cups of cooked or frozen rice (You can do uncooked; just use more veggie broth and longer cooking time).
– Lots of veggies. I did: 1 cup chopped broccoli, 2 cups peas
– 1 block of tofu
– Low-sodium soy sauce for flavor. I used about 4 tbsp. This will depend on how many veggies are in there. Start small and add more as needed.
– Sprinkle with garlic and onion powder (to taste)
– Let simmer in a bit of veggie broth (about 1/2 cup), until everything is married together and the sauce is thick.
– Drizzle with tahini and serve.
