Split Pea Stew | Vegan, Oil/Salt-Free
In this video, I show you how to make vegan split pea stew. This recipe is oil and salt free.
INGREDIENTS
– 2 cups dry split peas
– 7 cups water
– 1 tbsp Better Than Bouillon
– 1 bay leaf
– 1/2 tsp thyme
– 1 tsp cumin
– 1 onion, chopped
– 4 stalks celery, chopped
– 3 carrots, chopped
– 3-5 mushrooms, chopped
– 2 cloves garlic, minced
– 4 cups packed spinach, chopped
– 2 tbsp balsamic vinegar
– 1 tbsp lemon juice
DIRECTIONS
1. Rinse split peas.
2. In a large soup pot, combine split peas, water, BT Bouillon, bay leaf, thyme, and cumin. Bring to a boil, reduce heat, and simmer, covered, for 45 minutes, stirring occasionally.
3. Stir in all veggies, except spinach. Bring to a boil, reduce heat, and simmer, covered, for 25 minutes.
4. Stir in spinach, vinegar and lemon juice. Discard bay leaf.

*Ingredients
1 1/4 cup lukewarm water
1/4 cup maple syrup
3 1/2 cups whole wheat flour
1/4 cup ground flax
1 tbsp vital wheat gluten
1 tsp salt
1 tbsp instant yeast
*Directions
Add ingredients in your bread machine in order listed. Program for whole wheat bread.

Instant Pot Chili | Vegan + Dried Beans
In this video, I show you how to make vegan chili in the Instant Pot using dried beans.
Makes 5-6 servings
INGREDIENTS
– 2/3 cup dried kidney beans
– 2/3 cup dried navy beans
– 2/3 cup dried black beans
– 1/3 cup dried red lentils
– 1.5 bell pepper
– 3 celery stalks
– 1 cup frozen or fresh corn
– 1.5 onion
– 3 cups diced tomatoes
– 1/2 cup uncooked quinoa
– 2 tbsp tomato paste
– 2 tbsp diced garlic
– 1 tbsp Better Than Bouillon (veg)
– 1 tbsp chilli powder
– 1 tbsp cumin
DIRECTIONS
1. Chop the celery, bell peppers and onions.
2. Rinse beans and lentils.
3. Add 3 cups of water to instant pot. Add all ingredients except celery, corn, quinoa, 1/2 amount of onion and 1/2 amount of pepper. Stir well.
4. Cook on high pressure for 33 minutes. Cook your quinoa while you’re waiting.
5. Let pot release naturally for 15 minutes. Then let out any more pressure.
6. Add in the rest of veggies and quinoa. Stir and serve.

INGREDIENTS
2 cans black beans
10 small dates (or 5 medjool dates)
2 tbsp nut butter
1 tsp vanilla extract
1/2 cup cocoa powder
1 tbsp chia seeds
DIRECTIONS
1. Preheat your oven to 200 degrees Farenheit.
2. Drain and rinse the black beans.
3. In a food processor or blender, combine beans, dates, nut butter, and vanilla until smooth.
4. Add cocoa powder and chia seeds and combine again.
5. In a 8×8-inch baking pan lined with parchment paper, add your batter and smooth out the top.
6. Bake for 90 minutes.
7. Wait til brownies are cool before cutting into small squares.
