– 1 cup oats
– Β½ cup quinoa puffs

This Stuffed Raw Caribbean Wrap is one of the first things I made that left me full and didn’t leave me feeling like I was missing out on something. When time allows, I eat 2 -3 days a month and always feel like I have had a nice body reset.

*I reduced the liquid to 1/2 cup and increased the oil to 3 tbsp to make “stacks” instead. There was a good amount of leftover marinade, so I actually think you could double the sweet potatoes and make 2 muffin trays worth instead! I baked mine in the oven at for 30-35 min.

Split Pea Stew | Vegan, Oil/Salt-Free

In this video, I show you how to make vegan split pea stew. This recipe is oil and salt free.

INGREDIENTS
– 2 cups dry split peas
– 7 cups water
– 1 tbsp Better Than Bouillon
– 1 bay leaf
– 1/2 tsp thyme
– 1 tsp cumin
– 1 onion, chopped
– 4 stalks celery, chopped
– 3 carrots, chopped
– 3-5 mushrooms, chopped
– 2 cloves garlic, minced
– 4 cups packed spinach, chopped
– 2 tbsp balsamic vinegar
– 1 tbsp lemon juice

DIRECTIONS
1. Rinse split peas.
2. In a large soup pot, combine split peas, water, BT Bouillon, bay leaf, thyme, and cumin. Bring to a boil, reduce heat, and simmer, covered, for 45 minutes, stirring occasionally.
3. Stir in all veggies, except spinach. Bring to a boil, reduce heat, and simmer, covered, for 25 minutes.
4. Stir in spinach, vinegar and lemon juice. Discard bay leaf.
