MUSHROOM β€˜BACON’
1/3 cup ketchup
2 tbsp maple syrup
2 tbsp maple syrup
2 tbsp soy sauce
1 tsp liquid smoke
1 tsp smoked paprika
1/4 tsp sea salt
1/4 tsp black pepper

3 king oyster mushrooms, each cut into 4 slices (or 200g any mushrooms)

Mix the marinade ingredients together until combined. Brush over the mushroom slices on a non-stick baking tray and bake for 30 minutes, turning over halfway through.

TOFU SPINACH & TOMATO NO-CRUST ‘QUICHE’
1/2 block silken tofu
2 tbsp chickpea flour
2 tbsp nutritional yeast
2 tbsp oat milk
1 tsp English mustard
1/4 teaspoon onion powder
1/4 tsp paprika
1/4 tsp kala namak
Pinch sea salt
1/4 tsp black pepper
Small handful spinach, shredded
4 cherry tomatoes, halved

Whisk together the tofu, chickpea flour, nutritional yeast, oat milk, mustard, onion powder, paprika, kala namak, salt and pepper until combined. Add in the spinach and mix it through. Place in silicone baking mould, press in the tomato halves and bake at 180 degrees celsius for 30 minutes.

YOGHURT-OAT BAKES (Makes 1)
1/4 cup vegan vanilla yoghurt
2 tbsp oats
1 tsp ground flaxseed
1/4 tsp vanilla extract
1 tbsp maple syrup (optional)
1/4 cup fruit (berries, apple etc)

– Mix together the yoghurt, oats, flaxseed, vanilla extract, maple syrup and fruit until combined. Place in silicone baking mould and bake at 180 degrees celsius for 30 minutes.

EGG MAYO SALAD
1/2 block silken tofu
2 tbsp vegan mayo
1 tsp English mustard
1/4 tsp paprika
1/4 tsp kala namak
Pinch sea salt
1/4 tsp black pepper
2 tbsp fresh chives

Mix the vegan mayonnaise with the mustard, paprika, kala namak, salt and pepper until combined. Add into the tofu with the chives and β€˜chop’ with a spoon until well mixed together.

– Cucumber slices, lentil chips & hummus in sauce cup
– Yoghurt, berries & pumpkin seeds

TUESDAY
– Tofu Spinach & Tomato No-Crust Quiche (see recipe above) with chives
– Olive bread, salad & vegan pesto in sauce cup
– Vegan yoghurt
– Blueberry Yoghurt-Oat Bake (see recipe above)

WEDNESDAY
– Spinach, Tomato & Mushroom β€˜Bacon’ Pesto Pasta Salad
1 portion pre-cooked pasta
4 slices mushroom β€˜Bacon’, chopped
1/4 cup vegan red pesto
Handful baby plum tomatoes, quartered
Handful spinach

– Mixed salad with olive oil & balsamic vinegar dressing in sauce cup
– Vegan yoghurt with tangerine, raspberries & chocolate coated almonds

THURSDAY
– Tofu β€˜Egg’ Mayonnaise Wrap with Mushroom β€˜Bacon’
1 tortilla wrap
Tofu β€˜Egg’ Mayonnaise (see recipe above)
4 slices Mushroom β€˜Bacon’ (see recipe above)
Handful fresh spinach

– Mixed salad with olive oil & balsamic vinegar dressing in sauce cup
– Raspberry Yoghurt-Oat Baked (see recipe above)
– Mixed berries

FRIDAY
– Hummus, Veggie & Pesto Bagel
1 toasted bagel
3 tbsp hummus
2 tbsp vegan red pesto
3 slices tomato
4 slices of cucumber
3 slices of red onion
Handful spinach

– Vegan cheezy tortilla chips and hummus in sauce cup
– Berries with Trek Lemon Flapjack

CREAMY CINNAMON-SUGAR BANANA PORRIDGE
1/2 cup porridge oats
1/2 cup oat milk
1 tbsp almond butter
1 banana
1 tsp coconut sugar
1/4 tsp cinnamon

Bring a pan of 1 1/2 cups of water to a boil, then add in a pinch of salt. Sprinkle in the oats, 1/4 at a time and stir in-between, then once all of the oats are in, cover with a lid and leave for 20 minutes, being careful it doesn’t boil over. After 20 minutes, pour in the milk and stir through. Serve with sliced banana on top, then sprinkle on the coconut sugar and cinnamon.

SPINACH-SILKEN TOFU OMLETTE:
1/2 block silken tofu

1/4 teaspoon onion powder
1/4 tsp paprika
Pinch sea salt

Black pepper
1 tbsp oat milk

1 tbsp vegan butter
Large handful fresh spinach

1 avocado
Handful fresh coriander
2 chopped spring onions
Juice 1/2 lime
Pinch salt
Pinch chilli flakes

Blend the omelette ingredients together until smooth. Chop the spinach and fry in a pancake pan with half of the butter until wilted. Add in the other half of the butter then pour the omelette mixture over the top of the spinach, spread it out over the spinach evenly to form a circle shape, then cover with a pan and leave to cook on a medium heat. After 4-5 minutes, the edges of the omelette should lift, then flip it over to cook on the other side until golden brown in colour. Cube the avocado, then mix it together with the coriander, spring onion, lime juice, salt and chilli flakes to form the filling. Spread over half the omelette then fold the other half over it and serve.

2 shallots, peeled & finely chopped
4 cloves garlic, peeled & minced
1 stick lemongrass, trimmed, bashed & minced
6cm piece fresh ginger, peeled & minced
3 red chillis, finely chopped
Zest & juice 1/2 lime
1 tsp crushed cumin seeds
1 tsp ground coriander
Handful fresh coriander, chopped
1/4 tsp salt
1/4 tsp black pepper

2-3 tbsp ground nut oil/coconut oil
1 tsp turmeric

2 lime leaves

1 small aubergine, sliced
100g shiitake/oyster mushrooms

Black onion seeds
Fresh coriander
Red chilli, sliced

Make the curry paste using a pestle and mortar or food processor, grind or blend all of the paste ingredients together until combined. Heat the oil in a wok, then add in the curry paste along with the turmeric and fry on a medium heat for around 10 minutes. Add in the lime leaves and coconut milk, stir well and bring to a boil then leave simmering until it reduces, around 25 minutes. In a separate griddle pan, fry the sliced aubergine in some oil until golden on one side. Turn onto the other side, then move to one half of the pan and add the mushrooms into the other half and continue to fry until both the aubergine and mushrooms are golden and crispy. Add the coconut sugar and sugar snap peas into the sauce, followed by the noodles (if using rice noodles, cook first before adding according to packet instructions) and stir through. Stir well then serve with the fried aubergine and mushroom on top and garnished with black onion seeds, fresh coriander and red chilli.

If I Would Cook One Recipe For A Vegan Skeptic

I always get messages about what to cook when you live in a non vegan family or relationship, or what to cook for a vegan skeptic. I have some skeptics in my family and they happen to not like veggies as well so therefor I went for an easy creamy pasta. I know that my brother for example thinks plant based food is all about salads, I want to show that’s not always the case! You can make delicious comforting and flavor packed meals with only plant based ingredients πŸ™‚

SMOKED PAPRIKA PASTA (4 servings, recipe from my app)
1 yellow onion
4 garlic cloves
200g cherry tomatoes
400g pasta of choice (I often use whole wheat)

Sauce:
1 cup cashew nuts (boil 5 min then drain)
1 cup water
2 tbsp lemon juice
2 tbsp nutritional yeast
2 tsp smoked paprika powder
1 tsp salt
1 tsp black pepper
1 tbsp dried basil

Steps:
1. Boil the cashew nuts for 5 minutes, then drain
2. Meanwhile, chop the onion, mince the garlic, slice the tomatoes in halves, set aside
3. Cook the pasta of choice according to the package instructions
4. When the cashew nuts are done, drain them and add to a high speed blender together with all the other Sauce ingredients and blend until smooth, set aside
5. SautΓ© the tomatoes, garlic and onion on medium heat with a splash of water or oil until the tomatoes and onion are starting to become soft
6. Then add the cashew sauce and spinach to the pan and bring to a simmer, add splashes of water or plant milk when the sauce thickens and combine. Then turn off the heat
7. Drain the cooked pasta and add to sauce, make sure the pasta is covered in sauce and the spinach has “melted”, then it’s ready to be served!
