This no-bake vegan lemon cheesecake is not only vegan but also raw, dairy-free, gluten-free, and free of sugar.
👉🏼 only requires simple ingredients: dates, cashews, almonds, coconut cream, lemon, maple syrup, and shredded coconut. The taste is light and fresh.
INGREDIENTS (6,5-inch / 17cm springform pan)
*1cup=240ml, 1Tbsp=15ml
CRUST
• 1 cup raw almonds
• 1/3 cup shredded coconut
• 2 Tbsp melted coconut oil
• 6-7 pitted dates
FILLING
• 1 cup raw cashews, soaked for 1 hour in hot water
• 3 Tbsp coconut cream (sub full-fat coconut milk)
• 50ml maple syrup (sub agave syrup)
• 1/2 lemon, juiced
• 1/4 tsp turmeric powder
Place in the freezer until set – at least 3 hours

12 oz penne pasta
2 cups fresh basil
¼ cup pine nuts
2 cloves pressed garlic
¼ cup olive oil
½ cup raw cashews soaked for 2 hours
½ cup water for cashew cream
½ cup sun-dried tomatoes chopped
¼ cup vegan parmesan cheese
½ tsp black pepper
¼ tsp red pepper flakes
2 tbsp white wine
Salt to taste
1 cup reserved pasta water
INSTRUCTIONS
Cook the Pasta – Boil the penne in salted water until al dente. Reserve pasta water, then drain and set aside.
Make the Vegan Pesto – In a food processor, blend fresh basil, pine nuts, pressed garlic, olive oil, and a pinch of salt until smooth.
Prepare the Cashew Cream – Blend soaked cashews with water until smooth to mimic heavy cream.
Sauté & Combine – In a large skillet over medium heat, warm olive oil and sauté sun-dried tomatoes. Stir in the vegan pesto, cashew cream, and a splash of pasta water to create a creamy consistency.
Toss the Pasta – Add the cooked penne and toss well until coated in the sauce.
Finish & Serve – Sprinkle with vegan parmesan cheese, black pepper, and fresh basil. Serve hot!

1 1/4 cup cooked chickpeas (12.5oz | 200g)
1/4 cup cooked chickpeas (2.5oz | 40g)
1 zucchini (5oz | 120g)
1 carrot (2oz | 60g)
3 broccoli florets
1tsp onion powder
1tsp paprika
1tsp garlic powder
2tbsp chickpea flour
1tbsp corn starch
salt to taste
🧑🍳Cooking tips:
ℹ️ Feel free to add your favourite herbs and spices to to get the flavour you enjoy the most.
ℹ️ For the patties to hold together place patties mixture in to the fridge for 30-60 minutes. It works miracles and you do not need a binder 👍 If you feel like you need a diner add some flaxseed. 😊
ℹ️ With the ingredients listed in the recipe you get about 8 patties.

1tbsp tomato sauce

1.5 cup basil (16oz | 40g)
1/4 cup sunflower seeds (2oz | 40g)
3tbsp nutritional yeast
2 garlic cloves
1/4 cup water (2fl oz | 60ml)
2tbsp lemon juice
2tbsp olive oil
salt to taste
