Original Fig Cookies (Strawberry version below)

Filling:
1 1/4 cup dried figs
1 cup water
1 cup orange puree (blended peeled orange) OR orange juice

Dough:
1 1/4 cup almond flour
1 cup oat flour
2 tsp baking powder
1 tsp vanilla extract
1/2 cup date paste (https://youtube.com/shorts/2GQZ-WAe9mM)
1/4 cup + 2 tbsp nut or seed butter ( I used cashew)
pinch of salt (optional)

Instructions:

Combine filling ingredients in a sauce pan and simmer for 30-40 minutes, or until mixture is thick.

Allow to cool completely. Process until smooth.

Prepare dough by combining dry ingredients in a bowl. In a separate bowl, combine date paste, vanilla, and nut butter. Mix well until combined. Add dry ingredients to wet ingredients and mix until dough forms.

Place dough on a parchment paper and roll into a rectangle approx. 10 x 15 inches. It should be approx. 1/8 – 1/4 inch thick. Cut this rectangle down the middle to create 2 rectangles approx. 5 x 15 inches. Add filling down the center of the rectangle. Using parchment paper, gently lift and bring each side of the dough together. Using the parchment paper, gently turn your roll over so the seam is under the roll. Using a sharpe knife cut your roll into even sized cookies. Mine were about 2 inches. Place on a parchment lined cookie sheet. Bake at 350 for 10-12 minutes. Allow to cool.

Store these cookies in an airtight container in the fridge. They are even better the next day!

Raw Vegan Cauliflower Rice: Cherry Chocolate

This raw cauliflower rice recipe has a slight sweetness from dark sweet cherries and cinnamon, savoriness from the basil and cauliflower. The chocolate gives it decadence. The flax and cauliflower add crunch. It’s both a sweet dessert and a meal.

Ingredients:
¾ cup dark sweet cherries, previously frozen & defrosted
1 pound cauliflower, rinsed & chopped
¼ cup freshly ground flax seeds
1 teaspoon cocoa powder
Dash cinnamon, ground
Dash ginger, dried
Dash cardamom, dried
Dash basil, dried

Put all in blender in the order above and chop until the seasonings are fully incorporated and the cauliflower resembles the size and shape of rice. You’ll need to press the cauliflower down with a tamper while it’s mixing. Make sure not to over-blend it, you’re not making a smoothie; it’s supposed to be crunchy. Scrape contents into a medium-sized bowl and eat right away with a spoon.

Vegan Butter ‘chicken’ Recipe
Makes 4-6 servings

2 white onions, chopped
4 cloves of garlic, minced
1-2″ piece of fresh ginger, grated
2 tbsp garam masala
1 tbsp paprika
1 tbsp cumin
1 tbsp coriander
2 Tbsp Red curry paste
1 large can (800 ml) of diced tomatoes
2 tbsp of tomato paste.
2 cans coconut milk

3 Cups of dry soy curls, rehydrated
1/2 cup arrowroot starch
1/2 tsp black pepper
1/2 tsp salt
2 tsp paprika
2 tsp garlic powder

Directions:
1. Add chopped onions to a preheated frying pan. Once the onions turn translucent and start to release their liquid, add the garlic and ginger and sauté together for a few minutes.
2. Add the spices, and red curry paste, stir it around in the bottom of the pan for a minute or two just to help bring out the flavours.
3. Add diced tomatoes and tomato paste, stir well and bring to a low simmer. Simmer for 10 minutes.
4. Add 2 cups of coconut milk and return to a low simmer.
5. Rehydrate soy curls by soaking in warm water for 5 minutes. Strain and squeeze out excess water.
6. Mix together the coating for the soy curls in a large bowl (arrowroot starch, pepper, salt, paprika and garlic powder). Coat the soy curls evenly in the mixture.
7. In a preheated frying pan, fry the soy curls until golden brown.
8. Add soy curls to the butter chicken sauce. Simmer together for another 5-10 minutes. Serve and enjoy!

If you prefer to use tofu:
2 block of tofu ripped up or cubed
1/2 cup arrow root starch
1/2 tsp pepper/salt
2 tsp paprika
2 tsp garlic powder

Directions: Coat tofu and bake @375F for 30 mins. Add to the butter chicken sauce when done. Simmer together and serve!

SOY FREE OPTION: add 2 cans of canned chickpeas (drained and rinsed) to the butter chicken sauce.

From savory to sweet, my kitchen creations always hit the spot! It is a double hitter this time. Brussel sprouts with red grapes and roasted maple carrots.

1 bag of Brussel sprouts, trimmed & halved
2 handfuls of red grapes
1 tsp garlic powder
1 tbsp cooking oil (I used avocado)
1/2 tbsp thyme
Salt and pepper, to taste
Feta cheese, garnished (optional)

1 bag of carrots
1-2 handfuls of walnuts
1 tbsp vegan butter, melted
1/3 cup maple syrup
1 tsp of cinnamon
1/2 tsp ground ginger
Salt and pepper, to taste

Preheat oven to 400°.
In a large mixing bowl, take brussels sprouts, grapes, garlic powder, oil, thyme, and salt and pepper. And mix until everything is coated.
in a large separate bowl, take carrots, walnuts, maple syrup, cinnamon, ground ginger, melted butter, and salt and pepper, and mix until everything is coated.
On a rimmed baking sheet lined with parchment paper, add carrots.
On a parchment paper lined baking sheet, add brussels sprouts.

Separately bake the Brussels for 20 to 25 minutes. Bake the carrots for 25 to 30 minutes or until carrots are fork tender.
Serve on top of your favorite grain with a protein. If you want, sprinkle feta on top of Brussel sprouts. And enjoy.
