✹ Taco-Spiced Tofu & Beans ✹
-1 block firm or extra-firm tofu, pressed
-1 can beans of choice, drained and rinsed
-1 small onion, diced
-2-4 cloves garlic, minced
-1 red or green bell pepper, diced
-2-3 tablespoons taco seasoning (to preference)
-optional add-ins: canned mild green chilis, canned chipotle peppers in adobo

In a nonstick skillet over medium-high heat, sauté onion for about a minute. Crumble in pressed tofu and continue to cook, stirring occasionally, until tofu is golden brown.

Add in garlic and bell pepper and sauté for another 2-3 minutes.

Stir in drained beans and add taco seasoning. Add in a splash of water if needed to coat the ingredients with the taco seasoning. Taste and add more taco seasoning if needed. Also adjust salt and pepper.

✹ Easy Vegan Cashew Cheese ✹
-1 cup raw cashews, soaked in hot water for 30+ minutes
-3/4 cup water (add more if needed)
-1 tsp onion powder
-1/2 tsp garlic powder
-1/2 tsp paprika
-3 tablespoons nutritional yeast
-1 tablespoon lemon juice
-1/2 teaspoon salt (more to preference)
-optional: nacho jalapeños

Blend all ingredients except for the nacho jalapeños until smooth. Add in extra water 1 tbsp at a time if needed to get everything moving in the blender. Taste and adjust salt and lemon juice to preference. Add in jalapeños and pulse the blender a few times to chop. Enjoy!

Coconut is an incredibly versatile ingredient and can be found in curries from India, Thailand, the Philippines, and many other places.
➡️ I will show you how to make a simple green coconut curry right at home!
This is a nutrient-dense and totally vegan recipe!

Garlic, onion, jalapeno, ginger, and lime, all of which have intense flavors in their own right, combine with several spices to give the curry the classical spiciness it’s known for.
➡️ The curry will go through a few transformations as it goes from raw ingredients to being reduced to a paste, to its revival in a liquid form due to adding coconut milk, to the final addition of all of the vegetables.
The curry is made hearty with the addition of several filling veggies like zucchini, broccoli, mushrooms, bell peppers, and even some tofu!

▶️ RECIPE INGREDIENTS:

CURRY PASTE:
1/2 cup / 40g – Cilantro (coriander) stem & roots
1 Tablespoon / 4 to 5 Garlic approx.
1/2 Tablespoon / 1/2 Inch ginger approx.
1 Jalapeno / 20g
Zest of 1 lime / 1/2 Tablespoon
1/2 cup / 70g Onion
1 Teaspoon Turmeric powder
1 Teaspoon Ground Cumin
1 Teaspoon Ground Coriander
1/4 Teaspoon Cayenne Pepper or to taste (Optional)
1/2 Teaspoon salt
2 to 3 tablespoon cooking oil (I have used light olive oil)

OTHER INGREDIENTS:
3 cups / 700g Coconut milk
1 cup / 250ml Water
Salt to taste ( I have added 1+1/4 teaspoon pink Himalayan salt)

1 cup / 100g Red Bell Pepper – chopped
1 cup / 100g Green Bell Pepper – chopped
1 cup / 100g Zucchini – chopped
1+1/2 cup / 100g Mushrooms – chopped (I have used Cremini mushroom)
1 cup / 150g Firm Tofu – cut into cubes (I have used organic non-gmo tofu)
1 cup / 100g Broccoli (65g) – chopped
1 to 1/2 cup / 50 to 100g Snap Peas – remove the strings from the sides and chop in half or leave it whole
Lime Juice to taste (I have added 1 tablespoon I like it a bit sour)

▶️ METHOD: (3 to 4 servings)

Start by adding cilantro stems/roots, garlic, ginger, jalapeno, onion, lime zest to a blender and make a puree. (Please note: Add only 1/2 tablespoon of ginger, if you add too much the dish will turn bitter. Also, thoroughly wash the cilantro roots and stem to get rid of any dirt.)

Transfer the puree to a deep pot. Add the spices, cooking oil and cook over medium heat until it forms a thick paste and the oil starts to separate – which means it’s nicely roasted. Then add the coconut milk, water, salt and bring it to a boil. Once it starts to boil, reduce the heat to medium-low and cover and cook for about 20 minutes – for the flavours to develop.

Uncover and add the vegetables and tofu. Turn the heat to medium or medium high (depending on the heat of your stove) and cook for another 5 to 6 minutes uncovered, until the zucchini is just slightly soft but still has a bite to it. Cook the gravy to the desired consistency. Add the broccoli, snap peas and cook for a few seconds and turn off the heat. Please note we don’t want to over cook the broccoli/ snap peas, it will continue to cook in the hot gravy even after turning off the heat.

Enjoy it with freshly steamed rice or as a soup. This recipe is perfect for meal prep and stores well in the fridge for 3 to 4 days.

▶️ IMPORTANT TIPS:

– Thoroughly wash the cilantro roots and stems to get rid of any dirt
– Add only 1/2 tablespoon of ginger, if you add too much the dish will turn bitter
– Make sure to cook the curry paste until the oil starts to separate, this will add a lot of flavour

in today’s video, we’re making some cozy autumn vegan recipes. we start off by baking some fresh, homemade sourdough bread that we use to make savory mushroom toast for breakfast. for lunch, have a baked salad with crispy quinoa. for dinner, we cook up a butternut squash lasagna with vegan béchamel sauce.

bechamel ratio → 4 cups water : 1/4 cup vegan butter : 1/4 cup all-purpose flour (can sub white rice flour for gluten-free), plus a pinch of nutmeg

→ cultured spreadable cashew cheese
-Soak 1 cup raw cashews 4+ hours in water.
-Drain and add to blender along with 1/2 teaspoon salt and 2 tablespoons sauerkraut brine. Make sure it has active cultures (i.e. it hasn’t been pasteurized). You can sub unsweetened plain vegan yogurt if needed. Add extra salt in that case.
-Add the minimum amount of water required to get it to blend. I added about 1/3 cup. You will need a powerful blender and preferably a tamper to get it smooth; otherwise use a food processor and scrape down regularly to blend evenly.
-Transfer to a very clean container, cover, and allow to ferment in a warm spot for 12 – 48 hours. Taste to decide if it’s as tart as you like it. Throw it out and start over if you notice any off colors or smells.

✨INGREDIENTS & NOTES ✨

Note that I did not count salt, water and oil! Also there are a few optional add-ins listed!

#1 Whipped Hummus & Pepper Pasta 0:00

180g pasta of choice (6.3oz)
3 cloves garlic
1 ½ tbsp olive oil
2 medium sized roasted bell peppers from jar
200 – 250g plain hummus (7oz – 8.8oz)
1 tbsp soy sauce
¼ – ⅓ cup pasta water (60ml – 80ml)

also generous pinch of salt for pasta water
also optionally vegan parmesan or other topping of choice

→ serves 2

#2 Lazy Cozy Tomato Soup 2:15

200g (7oz) firm tofu
1 tbsp cornstarch
pinch of salt added to tofu and starch (did not mention in video)
about 1 tbsp veg oil for pan
5-6 tbsp of your favorite store bought tomato sauce
½ cup (125ml) water, more if needed
½ can (120g or ¾ cup) chickpeas, rinsed and drained
2 handfuls fresh baby spinach
optional: bread

#3 Red Bean Overnight Oats 3:41

2 tbsp sweetened red bean paste *
½ cup small cut oats (50g)
pinch of salt
1 tbsp ground flax seeds
½ cup thick vegan yogurt (120g)
⅓ cup water (80ml)
a handful of raspberries, or other fruit (cut into chunks if needed)

*if you don’t want to do the layers you can also just spoon the paste on top of the oats as a topping 🙂

#4 Spinach & Kimchi Kimbap Sandwiches 5:22

⅔ cup (120g) short rice, uncooked
generous pinch of salt for rice water
about 1 cup (250ml) water for the rice

2 big handfuls of fresh spinach
1 tbsp olive oil
optional: 2 cloves garlic
splash of water to help the spinach wilt down
pinch of salt for the spinach
2-3 tbsp vegan kimchi
optional: 1-2 tbsp vegan cheese (that’s able to melt)
2 sheets of roasted seaweed

#5 Avocado Bean Toasts 8:15

3 pieces of bread, toasted
½ can (120g or ⅔ cup) white beans, mashed
1 tbsp vegan cream cheese
pinch of salt
½ avocado
pickled onions

for the pickled onions:
2-3 red onions, cut into thin slices
1 tsp salt
1 tbsp rice syrup or sugar
½ cup (125ml) vinegar of choice
½ cup (125ml) hot water
