12 oz penne pasta
2 cups fresh basil
ΒΌ cup pine nuts
2 cloves pressed garlic
ΒΌ cup olive oil
Β½ cup raw cashews soaked for 2 hours
Β½ cup water for cashew cream
Β½ cup sun-dried tomatoes chopped
ΒΌ cup vegan parmesan cheese
Β½ tsp black pepper
ΒΌ tsp red pepper flakes
2 tbsp white wine
Salt to taste
1 cup reserved pasta water
INSTRUCTIONS
Cook the Pasta β Boil the penne in salted water until al dente. Reserve pasta water, then drain and set aside.
Make the Vegan Pesto β In a food processor, blend fresh basil, pine nuts, pressed garlic, olive oil, and a pinch of salt until smooth.
Prepare the Cashew Cream β Blend soaked cashews with water until smooth to mimic heavy cream.
SautΓ© & Combine β In a large skillet over medium heat, warm olive oil and sautΓ© sun-dried tomatoes. Stir in the vegan pesto, cashew cream, and a splash of pasta water to create a creamy consistency.
Toss the Pasta β Add the cooked penne and toss well until coated in the sauce.
Finish & Serve β Sprinkle with vegan parmesan cheese, black pepper, and fresh basil. Serve hot!

1 1/4 cup cooked chickpeas (12.5oz | 200g)
1/4 cup cooked chickpeas (2.5oz | 40g)
1 zucchini (5oz | 120g)
1 carrot (2oz | 60g)
3 broccoli florets
1tsp onion powder
1tsp paprika
1tsp garlic powder
2tbsp chickpea flour
1tbsp corn starch
salt to taste
π§βπ³Cooking tips:
βΉοΈ Feel free to add your favourite herbs and spices to to get the flavour you enjoy the most.
βΉοΈ For the patties to hold together place patties mixture in to the fridge for 30-60 minutes. It works miracles and you do not need a binder π If you feel like you need a diner add some flaxseed. π
βΉοΈ With the ingredients listed in the recipe you get about 8 patties.

2 medium size potatoes (14oz | 400g)
1 onion
2tbsp chickpea flour
1tsp dried herbs
1 tomato
1tbsp tomato sauce
salt to taste

1.5 cup basil (16oz | 40g)
1/4 cup sunflower seeds (2oz | 40g)
3tbsp nutritional yeast
2 garlic cloves
1/4 cup water (2fl oz | 60ml)
2tbsp lemon juice
2tbsp olive oil
salt to taste
