2 cups white rice
1 cinnamon stick
1 tsp cinnamon powder
1 tsp vanilla extract
2 cups water
*For Toppings:
– plant milk
– strawberries
– maple syrup
For serving, add some soy milk or any plant milk you prefer. Microwave for about 2-3 minutes and I suggest covering and letting it sit for about 5 minutes. Add some strawberries, maple syrup and some more cinnamon powder and enjoy! 🙂

Mushroom + Zucchini sauce:
– 4 tbsp miso
– 3 tbsp maple syrup
– 1.5” fresh ginger ( grated )
– 4 cloves garlic ( grated )
– 1 limes juice ( sub with 2 tbsp rice vinegar )
– 1/4 tsp chili flakes
– 2 tbsp toasted sesame oil
this is a sauce recipe from my cook book that goes on eggplant, but its delicious and can go on any sort of veggie! Also feel free to half the recipe:)
