Nut Roast –

For the nut roast:
β’ 1/2 a butternut squash
β’ 1 tbsp of oil
β’ 1/2 a large leek
β’ 2 garlic cloves
β’ pinch of salt and pepper
β’ 1 400g can of green lentils
β’ 25g dried porcini mushrooms
β’ 1 stock cube in 400ml water
β’ 1 tsp each of dried parsley, oregano, rosemary & thyme
β’ 150g mixed nuts
β’ 30g pistachios
β’ 85g dried cranberries
β’ 1 orange zested
β’ 1 tbsp each of soy sauce, maple syrup & nutritional yeast
β’ 1/2 tsp each of cinnamon & all spice
β’ flax egg (2 tbsp milled flax seed 4 tbsp water)
β’ 175g breadcrumbs
For the cranberry glaze:
β’ 160g fresh or frozen cranberries
β’ 3 tbsp caster sugar
β’ 2 tbsp water
For the caramelised pecans:
β’ 25g pecans
β’ 1/2 tbsp maple syrup
β’ 1 tbsp sugar
*Celeriac Mash* –
β’ 1 celeriac, cubed
β’ 2 cloves of garlic, finely chopped
β’ 3 springs of thyme
β’ 100ml vegan cream
β’ 100ml oat milk
β’ 25 vegan butter
β’ juice of 1/2 a lemon
β’ big pinch of salt & pepper to taste
β’ ground nutmeg
*Red Cabbage & Apple* –
β’ 25g vegan butter
β’ 1/2 a red cabbage (650g), shredded
β’ 250ml cider
β’ 2 tbsp maple syrup
β’ 2 tsp cinnamon
β’ 1 tsp all spice
β’ big pinch of salt & pepper to taste
β’ 1 apple, sliced
*Marmite & Bacon Sprouts* –
β’ 15g vegan butter
β’ 60g vegan bacon bits
β’ 200g sprouts
β’ 2 tbsp marmite
*Maple & Mustard Carrots and Parsnips* –
β’ 300g carrots, sliced lengthways
β’ 400g parsnips, sliced lengthways
β’ 2 tbsp olive oil
β’ 2 tbsp maple syrup
β’ 2 tbsp orange juice
β’ 1 tbsp mustard
β’ a few springs of fresh rosemary, chopped
β’ salt & pepper
