This is not another lentil meatballs recipe, instead I am using high protein vegan ingredients like chickpeas. Completely gluten free recipe, eggless, without using fake vegan meat but still holding together. If you can’t find gluten free couscous just substitute it with quinoa or rice.

300g firm tofu, drained and pressed
50g cashews, soaked for 15 minutes
Juice of 1/2 lemon
2 tbsp nutritional yeast

1/2 tsp salt (to taste)
150-200 ml soya milk
Optional: Fresh chives or spring onions for extra flavor

Blend tofu, cashews, lemon juice, nutritional yeast, coconut oil, salt, and soya milk until creamy.
