3 Salad Recipes Everyone Should Know! (Plant-Based Diet & Gluten-Free)

We’re going over 3 delicious salad recipes for summer that you need to make! Great if you follow a plant-based diet, are gluten-free or are just looking to add more delicious veggie-packed salads in your diet.

*Lemony Beet & Onion Salad*

3 medium beets, scrubbed, greens removed
4 small carrots
½ red or white onion, thinly sliced
3 tbsp apple cider vinegar
2 tbsp lemon juice
Zest of 1 lemon, about 1 tsp
1 tsp dried rosemary, or 1 tbsp fresh
2½ tbsp neutral oil, divided
½ tsp sea salt
Black pepper to taste

1. Preheat oven to 425F. Wrap each beet individually in aluminum foil, rap all the carrots in a single large sheet of foil and place on a baking sheet. Roast for 30 to 60 minutes (time will vary depending on size of beets) until a knife inserted into the beet goes through smoothly.
2. Remove the foil and let beets and carrots rest until cool enough to handle. Using a paper towel, or just your hands, rub the beets until the skin comes off (it should slide off easily)
3. Cut the beets into thin coins, slices or juliennes, and place in a large bowl.
4. Meanwhile, heat 1½ tbsp of oil in a small frying pan over medium heat. Add the rosemary and cook for about 3 minutes until it becomes fragrant.
5. Pour the warm oil over the beets through a sieve to catch the rosemary. Add the onion, apple cider vinegar, lemon juice & zest, salt and pepper (plus additional 1 tbsp of oil if desired) and toss to combine. Transfer to a serving bowl.
6. Refrigerate for a few hours or up to overnight (which is best!)

*Curried Chickpea Salad*

2½ to 3 cups canned chickpeas, drained and rinsed
½ large white or yellow onion, finely diced
1 large crisp apple, diced
1 celery stalk, finely diced
1 medium carrot, grated
2 cloves garlic, minced
½ cup vegan mayo
1 tbsp lemon juice
1½ tbsp curry powder
1½ tbsp maple syrup
1 tsp dijon mustard
½ tsp salt
¼ tsp black pepper

1. In a small bowl whisk together the mayo, lemon juice, garlic, curry powder, maple syrup, dijon mustard, salt and pepper until combined into a thick dressing. Set aside to chill while you prepare the other ingredients.
2. To a large mixing bowl combine the chickpeas, onion, apple, celery, and carrot. Pour over the dressing and mix again to combine. Enjoy right away or serve chilled, is great in wraps and sandwiches too!

⭐️ Chickpeas and quinoa are combined to create a simple and healthy chickpea quinoa salad with fresh, seasonal veggies and a simple lemon vinaigrette.

This salad offers a nutritious, naturally vegan, gluten-free meal choice that will please even the pickiest eaters.

⭐️ Ingredients
For the Quinoa
1 cup uncooked quinoa or about 3 cups cooked quinoa
2 cups water or vegetable broth
⅓ teaspoon salt

For the Salad
1 can (15 oz) chickpeas or 1½ cups cooked chickpeas
1½ cup yellow bell pepper
1½ cup cucumber
1½ cup cherry tomatoes
½ cup olives
¼ red onion
⅓ cup parsley
1 ripe avocado optional

For the Dressing
4 tablespoons olive oil extra virgin
2 tablespoons lemon juice or apple cider vinegar
1 tablespoon mustard
1 tablespoon maple syrup
½ teaspoon salt
4 twists black pepper
1 teaspoon ground cumin optional

Metric:
For the Quinoa
200 grams uncooked quinoa or about 3 cups cooked quinoa
480 grams water or vegetable broth
⅓ teaspoon salt

For the Salad
230 grams chickpeas or 1½ cups cooked chickpeas
200 grams yellow bell pepper
200 grams cucumber
250 grams cherry tomatoes
½ cup olives
40 grams red onion
⅓ cup parsley
1 ripe avocado optional

For the Dressing
55 grams olive oil extra virgin
30 grams lemon juice or apple cider vinegar
15 grams mustard
15 grams maple syrup
½ teaspoon salt
4 twists black pepper
1 teaspoon ground cumin optional

Recipes:

Congee:
500ml of brown rice
500ml of red lentils
4.5 litres of water
Boil for 2-4 hours

Granola:
super healthy whole foods granola
250 ml / 1 cup dates, soaked
100 ml / ½ cup tahini
date soaking water
750 ml / 3 cups oats
250 ml / 1 cup mixed nuts (i used cashews, almonds, and hazelnuts), very roughly chopped
100 ml / ½ cup prunes, chopped
100 ml / ½ cup organic raisins
100 ml / ½ cup sunflower seeds
50 ml / ¼ shredded coconut
½ tsp cinnamon
a pinch of cardamom (optional)

– preheat the oven to 150°C / 300°F.
– Mix dates, tahini (and date soaking water if needed) in a food processor or blender until smooth.
– Add all the dry ingredients in a very large bowl and toss. Now it’s time to get messy, by mixing in the tahini date paste until all dry ingredients are coated.
– Spread the granola evenly on parchment paper. press with the flat of your hand to make it denser.
– Bake the granola for 25-30 minutes, until golden brown and deliciously nutty cinnamon smelling.
– Let cool, and break apart to desired chunk sizes. keep in an airtight container.

Tea Mix:
125 g matcha
1 tsp matcha
shake

Noodle soup:
1 tsp bouillon powder per person
½ cup of water
¼ head of broccoli
1 cup of spinach
100g tofu
Bell pepper
Red onion
Noodles

Spice mix:
Nutritional yeast
Smoked salt
Garlic granules
