MONDAY – CREAMY SPINACH, PEA & BASIL PASTA

GRATEABLE CASHEW PARMESAN:
1 cup raw cashew nuts: https://amzn.to/45ILL8T*
2 tbsp nutritional yeast: https://amzn.to/3oM7yMd*
1 tbsp lemon juice
1/2 tsp white wine vinegar
1/4 tsp garlic powder
1/4 tsp sea salt

Blend all of the ingredients together in a food processor until a ball forms. Shape into a ball or wedge and leave to set in the fridge overnight. Alternatively, place in the freezer an hour before using – grate or peel over food and store in the fridge for up to 5 days or longer if kept frozen.

WEDNESDAY – RED PESTO, SLOW-ROASTED TOMATO & BASIL QUICHE

THURSDAY – TERIYAKI TOFU MEATBALLS

Sticky Lemongrass Tofu Meatball recipe:

TERIYAKI SAUCE:
3 tbsp coconut sugar: https://amzn.to/3NbqAFj*
1/4 cup tamari: https://amzn.to/3WQO5qv*
1 tbsp rice wine vinegar: https://amzn.to/43nxlcP*
1 tbsp mirin: https://amzn.to/3oL8VLe*
6cm chunk ginger, minced
1 tsp garlic powder
1 tsp cornflour (mixed with 3 tsp water to make a slurry)
1/2 cup water

Add all of the ingredients to the pan, except the cornflour slurry and water. Mix well and cook continuously on a medium heat. After a couple of minutes, pour in the cornflour slurry and water, then increase the heat, stirring continuously, until the sauce thickens, being careful that it doesn’t catch.

RECIPES FROM THIS VIDEO:

Day 1:
—————————————-
Weetabix bowl:
-3 weetabix
-1 scoop vegan protein powder
-170ml plant milk
-1 TBSP ground flax seeds
-2 TBSP vegan yogurt
Peanut maple caramel:
-1 TBSP peanut butter
-1 TBSP maple syrup
-some water to thin it out

Stir fry:
-2 small wraps
-150g veggies
-70g smoked tofu
Peanut sauce:
-1 TBSP peanut butter
-1 TSP each agave, vinegar, sriracha
-my allrounder spice
-water to thin

Pasta alla norma:
-2 eggplants
-some oil
-salt and pepper
Cut the eggplant, mix with oil and season.
Roast at 200C/400F for 30-35mins.
Sauce:
-1 onion
-3 cloves garlic
Fry in some oil
-3 Tbsp tomato paste
Roast for a few minutes and optionally deglaze with some red wine.
-1 can (400g) chopped tomatoes (wash it out with some water)
-salt, pepper and dried herbs to taste
-1 Tsp sugar
Let it simmer while cooking 200g pasta Al dente.
Add everything to the sauce and cook 4-5mins.
Serve with vegan Parmesan.

Day2:
—————————————
Pancake scramble:
-1 apple, chopped and sautéed with cinnamon
-65g flour
-1 TSP baking powder
-1 scoop vegan protein powder
-2 TBSp vegan yogurt
-100ml plant milk
Serve with „peanut maple caramel“

Carrot pita:
-1 TSP chili oil
-2 small carrots, chopped
70g smoked tofu
-1 heaped TBSP hummus
-2 TBSP vegan bolognese
Serve in a pita

Loaded fries:
-frozen fries heated up in the air fryer
-1 bell pepper + vegan chicken
Hummus sauce:
-1 TBSP each hummus and soy yogurt
-1 TSP sriracha
-water to thin
-optionally: some curry powder

Day 3:
———————————
Deluxe weetabix:
-3 weetabix
-1 scoop vegan protein powder
-170ml plant milk
-1 TBSP ground flax seeds
-2 TBSP vegan yogurt
‚Chocolate saucel‘:
-10g vegan chocolate, melted
-1/2 TBSP each peanut butter and maple syrup

Peanut-chocolate bars:
-60g corn or rice cakes
-25g vegan protein powder
-75g agave or maple syrup
-85g peanut butter
-chocolate to spread on top

Butter tofu:

I’m Paul Kerton, a former Personal Trainer and Vegan Nutritionist, I am now a full-time Social Media Influencer. Not so long ago, in a misguided attempt to try and grow muscle as quickly as possible, I ended up eating more animal products than probably anyone you’ve ever met. Through research, I came to learn the deleterious effects that eating even quite trivial amounts of animal products has on one’s health and through personal experience, I found that far from being a hindrance to sports performance, a well-planned vegan diet is actually optimal! Then with an open heart, I looked at how we treat animals in order for them to end up on our plates and it shook me to the core. I could not believe that for so long I fell for the lies that others tell us, that we tell ourselves, in order that we perpetuate this destructive behaviour. Destructive to ourselves, the beautiful, intelligent sentient beings that are here with us and indeed our very planet. To try and put right my part in all of this I was compelled to overcome my fear of being filmed for YouTube and television, appearing on the radio and more recently public speaking. On a spiritual level, I’ve come to realise that my fellow man too is suffering. If I won’t see harm come to a chicken I’ve never met then why would I be unkind to my brother man? If someone is being aggressive or unkind toward me, surely the suffering inflicted on them in the past is simply spilling over? Do I want to add to that, or can I step out of my ego long enough to forgive them and maybe break the cycle of negativity? This former, quick-to-anger “meat-head” bouncer has been on one transformative journey!
