A Perfect Vegan Recipe For Christmas Morning: Blueberry Cream Cheese Danish
This easy recipe for a vegan blueberry danish is so quick to make and is the perfect sweet treat for the Holidays. Here’s what you’ll need:
Makes 12
Ingredients:
2 cups blueberries
2 tablespoons cornstarch
1 tablespoon brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/4 cup maple syrup
The zest of a lemon
A squeeze of lemon juice
2 sheets of vegan puff pastry (most brands of puff pastry are vegan by default so just check the ingredients)
1/4 cup non-dairy cream cheese
For the glaze:
2 tablespoons non-dairy cream cheese
4 tablespoons confectioner’s sugar
2 teaspoons non-dairy milk
Bake the pastries at 375ºF (190ºC) for 30 minutes or until golden.
Whisk the glaze together vigorously and drizzle over the baked and cooled pastries and enjoy!
