π€ OVERNIGHT TIRAMISU WEETABIX β the ultimate dessert-for-breakfast hack! Weetabix soaked in espresso, vanilla and maple, then topped with creamy yoghurt and a dusting of cocoa. It tastes just like tiramisu but itβs filling, high-fibre and ready in minutes. Iβve been having this on repeat β perfect for breakfast or an afternoon snack!

π FULL RECIPE (serves 2):
Ingredients:
4 Weetabix (wheat biscuits)
220ml plant milk of choice
2 shots espresso (or strong coffee)
1β2 tbsp maple syrup (adjust to taste)
1 tsp vanilla extract
Vegan Greek yoghurt for topping (soya-based works great β sweeten lightly if needed)
Cocoa powder, for dusting
Method:
Crumble the Weetabix into a dish or jars.
Mix with plant milk, espresso, maple syrup and vanilla until well combined.
Top with a generous layer of vegan Greek yoghurt.
Dust heavily with cocoa powder.
Leave to set for 20 minutes (or overnight in the fridge for the best texture).
Enjoy cold or gently warmed!
