✨ Purple Cauliflower Soup ✨
▪️ Ingredients ▪️
* 1 whole purple cauliflower
* 2 purple sweet potatoes
* 1 red onion
* 4 cloves of garlic
* Salt
* Black pepper
* Avocado oil
* Truffle oil ( for dressing )
* Thyme
* Veg stock – I use bouillon (250ml)
* Soya cream (250ml)
* Vegan butter ( tablespoon)
▪️ Method ▪️
* Chop up the veggies and place in an oven proof dish with a drizzle of oil and roast for 30-40 minutes until all veggies are soft with slight browning.
* Add butter to pan and add the cooked veggies, save some cauliflower to top your bowl at the end.
* Add stock and cream then blend until a smooth consistency.
* Top with the cauliflower florets, cream and truffle oil.
