I’m sharing a super simple and flavourful recipe for Roasted White Beans and Cherry Tomatoes. This quick tray bake is perfect for using up extra veggies and is incredibly versatile! It makes a delicious topping for crackers, spread on crusty bread, or even as a warm addition to your favourite salad. Plus, it only takes a few ingredients and about 20 minutes in the oven!
I’m serving this with Jenny Marie’s Lime & Pepper crackers, but it pairs well with any bread or cracker you love.

Ingredients:
Cannellini beans
Cherry tomatoes
Shallots
Thyme
Nutritional Yeast
Salt + Pepper
Good-quality olive oil
Instructions:
Preheat oven to 400°F (200°C).
Toss all ingredients in a baking dish.
Bake for 20 minutes, stirring halfway through.
